Ingredients

1 pomegranate
1 C. frozen apple juice concentrate, thawed
1/3 C. frozen lemonade concentrate, thawed
2 C. pomegranate juice or cranberry-pomegranate juice, chilled
1/2 750-ml. bottle (about 1 2/3 C.) Pinot Noir wine or other dry red wine, chilled
1 750-ml. bottle Champagne, chilled
Lemon slices (opt)

Steps:

Cut pomegranate into quarters and place in large bowl filled with cool water. Use fingers to loosen seeds and divide among 3 ice cube trays; fill almost full with water. Freeze until solid (about 3 hrs.). In punch bowl, combine apple juice and lemonade concentrates. Add pomegranate juice and wine; stir to combine. Just before serving, add Champagne, but do not stir. Add pomegranate ice cubes and, if desired, lemon slices. Serve immediately.
