Spaghetti Squash with Balsamic Vegetables and Toasted Pine Nuts image

The veggies can be prepped while the squash is in the microwave, so I can have a satisfying low-carb and low-fat meal on the table in about half an hour. -Deanna McDonald, Grand Rapids, Michigan

1 medium spaghetti squash (about 4 pounds)
1 cup chopped carrots
1 small red onion, halved and sliced
1 tablespoon olive oil
4 garlic cloves, minced
1 can (15-1/2 ounces) great northern beans, rinsed and drained
1 can (14-1/2 ounces) diced tomatoes, drained
1 can (14 ounces) water-packed artichoke hearts, rinsed, drained and halved
1 medium zucchini, chopped
3 tablespoons balsamic vinegar
2 teaspoons minced fresh thyme or 1/2 teaspoon dried thyme
1/4 teaspoon salt
1/4 teaspoon pepper
1/2 cup pine nuts, toasted

Steps:

  • Cut squash in half lengthwise; discard seeds. Place squash cut side down on a microwave-safe plate. Microwave, uncovered, on high until tender, 15-18 minutes., Meanwhile, in a large nonstick skillet, saute carrots and onion in oil until tender. Add garlic; cook 1 minute. Stir in beans, tomatoes, artichokes, zucchini, vinegar, thyme, salt and pepper. Cook and stir over medium heat until heated through, 8-10 minutes., When squash is cool enough to handle, use a fork to separate strands. Serve with bean mixture. Sprinkle with nuts.

This vegetarian dish uses one of my favorite kinds of squash, spaghetti squash. It is delicious topped with the tasty sweet-tart beans.

1/4 cup balsamic vinegar
3 tablespoons olive oil
1 tablespoon honey mustard
3 garlic cloves (minced fine)
1 medium spaghetti squash (2-1/2 to 3 lbs)
1 (15 ounce) can baby lima beans (well-drained)
1 (15 ounce) can red kidney beans (well-drained)
1 small white onion (diced)
1/2 cup roasted sweet red pepper (cut into short strips)
1/2 teaspoon salt
1/4 teaspoon black pepper

Steps:

  • Cut the spaghetti squash in half, and remove the seeds.
  • For the vinaigrette, combine vinegar, oil, honey mustard, and garlic in a screw-top jar.
  • Place the cap on, well secured, and shake well to blend.
  • Place the squash halves in a large Dutch oven with about 2" of water.
  • Bring to boiling.
  • Cook, covered for 15-20 minutes,until tender.
  • Meanwhile, place the well-drained lima beans, the well-drained kidney beans and the diced onion in a saucepan.
  • Add in the roasted red sweet-pepper strips, the salt and the black pepper.
  • Cook on a med-low heat.
  • When the squash is done, use a fork to scrape the pulp from the shell, in strands, into a large serving bowl.
  • Pour the vinaigrette over the beans, and toss to coat well.
  • Spoon the beans over the spaghetti squash strands to serve.

Spaghetti Squash With White Beans image

In the back corner of our garden I decided to throw some grocery store spaghetti squash seeds to see if they would grow.. Man did they. Now we have more than I know what to do with, so friends get a lot. This is one of the really good recipes I've made out of it. Instead of broccolini, I actually used the baby broccoli florets we got after the main broccoli heads were harvested from our broccoli plants. They aren't as bitter as broccolini, but I'm sure both are good. Swiss chard and collards are also good additions, but when I made this, I was sick of those :) If you'd like to add greens, just add when you add the beans.

1 large spaghetti squash
3 cups cooked white beans
1/2 cup bean cooking liquid
1 lb Broccolini, diced
2 garlic cloves, sliced thin
2 tablespoons fresh oregano
1 tablespoon fresh sage
4 tablespoons olive oil
1/2 lb swiss chard, diced (optional)
1/2 lb collard greens, diced (optional)
salt
pepper

Steps:

  • Cut squash in half and coat lightly in olive oil, salt and pepper and roast in oven for >1hr at 350F until fork can be used to separate out the strands in the squash.
  • In pan heat remaining olive oil and lightly cook garlic, then add broccolini, cook a few minutes.
  • Add beans and herbs. Season to taste with salt and pepper.
  • Remove strands of squash and add to pan as you go, and cook the "spaghetti" until just as soft as you would like. Makes 4 hefty portions.

  • Preheat your oven to 400°, line a medium baking sheet with foil, and lightly mist with cooking spray.
  • On a work surface, drizzle about 2 tablespoons worth of the olive oil over both of the cut-sides of the spaghetti squash halves, then sprinkle over a generous amount of salt (squash needs it!), black pepper, the 1/2 teaspoon of granulated onion, 1/2 teaspoon of the granulated garlic, plus the Italian seasoning, equally.
  • Place the two squash halves cut-side down onto the baking sheet and roast for 1 hour, or until easily pierced with a small paring knife and tender.
  • While the spaghetti squash roasts, make your toasted breadcrumbs: add the panko breadcrumbs to a small bowl, add a sprinkle of salt, the remaining 1/4 teaspoon of granulated garlic, plus 1 teaspoon of olive oil, and use a fork to combine. Place a small pan over high heat, and once hot, add the seasoned crumbs to it, stirring constantly until golden-brown and toasted, about 1-2 minutes; set the toasted breadcrumbs aside.

  • To prepare the spaghetti squash, preheat the oven to 400 degrees Fahrenheit and line a large, rimmed baking sheet with parchment paper for easy clean-up. Use a very sharp chef’s knife to cut off the tip-top and very bottom ends of each spaghetti squash. Stand the squash upright on a stable surface and slice through it from top to bottom to divide it in half. Repeat with the other squash.
  • Use a large spoon to scoop out the spaghetti squash seeds and discard them. Drizzle each squash half with 1 teaspoon olive oil and rub it all over the inside and outside of the squash, adding more oil if necessary. Sprinkle salt and pepper lightly over the interiors of the squash, then place them cut-side down on the prepared baking sheet. Bake for 40 to 60 minutes, until the interiors are easily pierced through with a fork.
  • Meanwhile, to prepare the chickpea salad, combine the chickpeas, bell pepper, onion, olives, chopped basil and/or parsley, garlic, lemon juice, remaining 1 tablespoon olive oil and salt. Stir to combine. Taste, and add more lemon juice and/or salt if necessary. Set aside.
  • To prepare the pesto: In a small skillet, toast the pepitas over medium heat, stirring often, until they are fragrant and making little popping noises, about 5 minutes. Pour the pepitas into a food processor and let them cool for a few minutes. Then, add the basil, parsley, lemon juice, water and salt. Process while slowly drizzling in the olive oil, stopping to scrape down the sides as necessary, until the pepitas have broken down to create a pretty smooth sauce. Transfer the pesto to a small bowl for serving.
