CHICKEN SOUVLAKI SALAD

1 1/2 pounds skinless, boneless chicken breasts, cut into 1-inch cubes
Grated zest of 1 lemon, plus 2 tablespoons lemon juice
3 tablespoons extra-virgin olive oil
2 teaspoons dried oregano
Kosher salt and freshly ground pepper
2 whole-wheat pitas, cut into 1-inch pieces
1/2 cup nonfat plain Greek yogurt
2 hearts romaine lettuce, chopped
1 cup halved cherry tomatoes
1/2 English cucumber, thinly sliced
1/2 cup crumbled feta cheese

Steps:

  • Preheat the oven to 350 degrees F. Toss the chicken in a large bowl with the lemon zest, 1 tablespoon each lemon juice and olive oil, 1 teaspoon oregano, 1/2 teaspoon salt and a few grinds of pepper; let sit for at least 5 minutes.
  • Spread the pita pieces on a baking sheet and toast in the oven, tossing halfway through, until crisp, 10 to 12 minutes. Let cool.
  • Meanwhile, preheat a grill pan over medium-high heat. Add the chicken and cook, turning occasionally, until cooked through, 6 to 8 minutes. Transfer to a plate.
  • Make the dressing: Combine the yogurt, remaining 1 tablespoon lemon juice, 2 tablespoons olive oil and 1 teaspoon oregano, 1/4 teaspoon salt and a few grinds of pepper in a small bowl. Stir in any juices from the plate of cooked chicken and 2 to 3 tablespoons water.
  • Toss the lettuce, a few spoonfuls of the yogurt dressing and the pita chips in a large bowl; season lightly with salt and pepper. Divide among shallow bowls. Top with the chicken, tomatoes, cucumber and feta. Drizzle with the remaining dressing.

Pork souvlaki with Greek salad & rice image

Pair this healthy souvlaki with a rice dish - or if you're cooking on the barbecue, you might prefer a baked potato instead. The salad has three of your 5-a-day

1 garlic clove, finely grated
4 tsp olive oil
½ lemon, zested and juiced
¾ tsp dried oregano
250g lean pork tenderloin, cut into chunks
1 onion, finely chopped
85g brown basmati rice
½ tsp dried mint
1 tsp vegetable bouillon powder
2 tbsp chopped fresh dill
3 tomatoes, chopped
10cm chunk of cucumber, chopped
1 red onion, halved and thinly sliced
4 Kalamata olives, halved
1 tsp red wine vinegar
25g feta, crumbled

Steps:

  • Mix the garlic with 2 tsp of the oil, the lemon zest and 1 tsp juice, lots of black pepper, and ½ tsp oregano in a large bowl. Tip in the pork and mix so the meat is well coated. Set aside to marinate for 30 mins if you have time.
  • Heat 1 tsp olive oil in a non-stick pan. Add the chopped onion, cover and cook for 5 mins, then remove the lid and stir in the rice, dried mint and bouillon. Pour in 300ml boiling water. Cover and cook for 30-35 mins until the liquid has been absorbed and the rice is tender. Stir in the dill and a squeeze of lemon juice.
  • Meanwhile, heat the grill to high or light your barbecue. Thread the pork onto two skewers. Mix the tomatoes, cucumber, red onion and olives in a bowl with the remaining oregano, vinegar, remaining oil and a squeeze of lemon. Pile onto plates and top with the feta.
  • Grill the souvlaki for about 4 mins each side until they are cooked, but still juicy. Serve with the salad and rice.

½ red onion, cut into bite-size pieces
4 cups ice water, or as needed
1 (8 ounce) package tri-color rotini pasta
1 (5 ounce) can light tuna in water, drained and flaked
2 stalks celery, cut into bite-size pieces
½ cup roasted red peppers, drained and chopped
¼ cup smoked sun-dried tomatoes
¼ cup crumbled feta cheese
1 sprig parsley, stemmed and leaves minced
4 leaves fresh basil, rolled and very thinly sliced
2 teaspoons capers
1 cup Greek vinaigrette salad dressing

Steps:

  • Soak red onion in a bowl of ice water in refrigerator to remove strong taste, at least 30 minutes. Drain and rinse.
  • Bring a large pot of lightly salted water to a boil; cook the rotini at a boil until tender yet firm to the bite, about 8 minutes; drain and rinse under cold water.
  • Mix onion, pasta, tuna, celery, roasted red peppers, sun-dried tomatoes, feta cheese, parsley, basil, capers, and Greek dressing together in a large bowl. Allow to marinate in refrigerator, 4 hours to overnight.

This recipe was in the 'food' section of our local paper a couple of weeks ago. We made it while on a camping trip, a very refreshing and different salad! It has a definite Greek taste and is very low-cal! Time does not include marinating (if you chose to do so).

1 teaspoon minced garlic
1 teaspoon lemon juice
1 teaspoon olive oil
1/2 teaspoon dried oregano
1/4 teaspoon salt
1/4 teaspoon pepper
1 lb boneless chicken breast
1/2 cup plain fat-free yogurt
1/4 cup grated peeled cucumber
1 teaspoon white wine vinegar
1 teaspoon minced garlic
1/4 teaspoon salt
1/4 teaspoon cayenne pepper
1/4 teaspoon black pepper
3 cucumbers, peeled and cubed
1/2 red onion, sliced
1/2 cup crumbled feta cheese (I actually like more)
1/2 cup chopped kalamata olive (again-I like more!)
1 tomatoes, seeded and cubed

Steps:

  • Mix all of the marinade ingredients in a bag with the chicken.
  • Shake to coat.
  • Original recipe didn't call for any marinade time, but we marinated for a couple of hours.
  • Broil, grill, or pan fry chicken until done.
  • Set chicken aside to cool slightly.
  • Cut chicken into 1-inch pieces.
  • Combine all dressing ingredients together in a bowl.
  • Mix well.
  • Combine chicken with salad fixins; pour dressing over all and mix well.
  • Enjoy!

¼ cup olive oil
¼ cup soy sauce
1 teaspoon dried oregano
3 cloves garlic, crushed
4 pounds pork tenderloin, cut into 1 inch cubes
2 medium yellow onions, cut into 1 inch pieces
2 green bell peppers, cut into 1 inch pieces

Steps:

  • In a large glass bowl, mix together lemon juice, olive oil, soy sauce, oregano, and garlic; add pork, onions, and green peppers, and stir to coat. Cover, and refrigerate for 2 to 3 hours.

1 tablespoon(s) lemon juice
2 teaspoon(s) red wine vinegar ( 1 tsp reserved)
1 teaspoon(s) oregano
1 clove(s) garlic grated
4 tablespoon(s) evoo ( 3 tbs reserved)
2 ounce(s) feta cheese
10 - cherry tomatoes cut in half
1 tablespoon(s) diced red onion
1/2 - medium cucumber cut into 1/8 inch slices
1/2 teaspoon(s) pepper
2 cup(s) salad greens

Steps:

  • In a freezer bag combine the steak,1 TBS olive oil,lemon juice, garlic, 1 tsp of the red wine vinegar ,oregano and mix around and coat the steak evenly. Place in refrigerator 1 hour or overnight.
  • In a small bowl combine the reserved EVOO, red wine vinegar,pepper and whisk until emulsified. Place the tomatoes,cucumbers,red onion,olives and feta cheese and mix thoroughly. This can also set in refrigerator overnight.
  • Take steaks out and allow to come up to room temperature. Place a grill pan on a medium to high heat and add a little oil. Cook steak until desired doneness.
  • Arrange salad greens on a plate and place entire steak or cut steak on top of greens and pour over the feta-cucmber salad.

1 tablespoon Greek seasoning
1 lemon, juiced
2 cloves garlic, finely grated or minced
1 pound boneless chicken breasts, quartered lengthwise
6 tablespoons tzatziki sauce
2 tablespoons olive oil
2 tablespoons fresh lemon juice
1 pinch salt
1 head romaine, trimmed, washed and torn into bite-sized pieces
½ cup thinly sliced red bell pepper
½ English cucumber, sliced
8 ounces cherry tomatoes, halved

Steps:

  • Combine 1 tablespoon olive oil, Greek seasoning, lemon juice, and garlic in a glass bowl; mix well. Add chicken to marinade and turn to coat. Marinate in the refrigerator for at least 2 hours, but not longer than 4 hours.
  • Mix tzatziki, 2 tablespoons olive oil, 2 tablespoons lemon juice, and salt in a small bowl. Refrigerate salad dressing until needed.
  • Preheat an outdoor grill for high heat and lightly oil the grate.
  • Place chicken pieces on the grill and cook for 5 minutes, turn, and grill until no longer pink in the center and the juices run clear, about 5 more minutes. An instant-read thermometer inserted into the centers should read at least 165 degrees F (74 degrees C).
  • Combine romaine lettuce, bell pepper, cucumber, and cherry tomatoes in a salad bowl. Drizzle with tzatziki dressing and toss to coat. Divide salad into 4 equal portions and top with cooked chicken.
