1 lb breakfast sausage (browned)
10 eggs (beaten)
salt and pepper (to taste)
1.5 cups shredded sharp cheddar cheese (divided)
1.25 cups heavy cream
1 cup salsa
sour cream (garnish)

Steps:

  • Brown sausage in a skillet or using the saute feature on a multicooker.
  • Drain sausage, reserving some fat to grease a 6 quart slowcooker or multi-cooker.
  • In a bowl, combine beaten eggs, cream, salt, pepper and 1/2 cup of cheese.
  • Pour eggs into slow cooker/multi-cooker, add sausage evenly and sprinkle remaining cheese on top.
  • Drizzle salsa evenly on top and cook on high for 60-90 minutes or until the center is set.
  • Slice and serve with a dollop of sour cream.

Tasty and delicious, this southwest breakfast casserole is hearty, satisfying and packed with fiber. I adapted the recipe from a Best of Bridge Slow Cooker to make it more Weight Watchers friendly.

1 can (14 to 15 ounces) black beans, rinsed and drained
1 red bell pepper, chopped
1/2 cup finely chopped onion
4 cups frozen shredded hash brown potatoes
1 cup corn kernels
1-1/2 cups shredded reduced-fat Mexican cheese blend
3 tablespoons chopped fresh cilantro
8 eggs
1 can (12 ounces) fat-free evaporated milk
1 teaspoon seasoned salt
1/4 teaspoon cayenne pepper

Steps:

  • Ideal slow cooker size: 5- to 6-Quart.
  • Grease the inside of your slow cooker insert.
  • In a large bowl, combine the black beans, bell pepper, onion, potatoes, corn, cheese and cilantro. Stir well and then dump in the slow cooker.
  • In the same bowl beat together the eggs, milk, salt and cayenne pepper. Pour mixture over the potato mixture in the slow cooker.
  • Cover and refrigerate for at least 4 hours or overnight.
  • When you're ready to cook the casserole, transfer the insert to the slow cooker base.
  • Cover and cook on LOW for 3 to 5 hours, or until eggs are set and the edges are browned.
  • Uncover, being careful not to let the condensation in the lid drip back into the slow cooker. Turn off the slow cooker and let the casserole sit, uncovered, for 15 minutes before serving.
  • Cut into wedges.

4 large eggs
8 large egg whites
1-1/3 cups fat-free milk
3 teaspoons chili powder
1/2 teaspoon ground cumin
1/2 teaspoon pepper
1/2 teaspoon cayenne pepper
1 can (15 ounces) black beans, rinsed and drained
1 can (7 ounces) Mexicorn, drained
1 cup cubed fully cooked ham
1 cup shredded extra-sharp cheddar cheese
1 can (4 ounces) chopped green chiles, drained
6 slices whole wheat bread, lightly toasted and cubed
Pico de gallo, optional

Steps:

  • In a large bowl, whisk together first 7 ingredients. Stir in beans, corn, ham, cheese and chiles. Stir in bread to moisten. Transfer to a 5-qt. slow cooker coated with cooking spray., Cook, covered, on low until a knife inserted in the center comes out clean, 2-1/2 to 3-1/2 hours. Let stand, uncovered, 10 minutes before serving. If desired, serve with pico de gallo.

2 tablespoons butter
1 pound bulk breakfast sausage (cooked and drained)
1 onion (chopped)
2 cloves garlic (minced)
1 green bell pepper (chopped)
1 (4-ounce) can chopped green chilies or jalapeño peppers (well drained)
2 1/2 cups Monterey Jack or Pepper Jack cheese (grated)
18 eggs
1 to 2 tablespoons chili powder
1/4 teaspoon cayenne pepper, if desired
1/2 teaspoon salt
1/4 teaspoon black pepper

Steps:

  • Grease inside of 5-quart crock pot with butter or spray it with nonstick cooking spray.
  • Starting with sausage, layer the cooked and drained meat, onions, peppers, chiles, and cheese into the slow cooker, repeating the layering process until all of the ingredients are used.
  • In a large mixer bowl, beat the eggs with a wire whisk or eggbeater until combined, then pour over mixture in the crockpot.
  • Cover the slow cooker and cook on low 7 to 8 hours or until the temperature reaches at least 165 F. Serve this recipe immediately with sour cream or fresh salsa.
  • If you have a newer, hotter cooking crockpot, check at 5 1/2 hours.
  • To serve, scoop up portions and serve on warmed plates.

24 oz pork sausage links
1/2 cup water
1 cup green onions, sliced
1 large red bell pepper, chopped
1 large orange bell pepper, chopped
1 (4-oz) can(s) diced green chilies (don't drain)
1/4 cup fresh cilantro, chopped
1 (30-oz) pkg frozen shredded hash brown potatoes
1 1/2 cups shredded cheddar cheese (6-oz package)
12 large eggs
1 cup milk
1/2 tsp salt
1 tsp black pepper
1 large avocado, peeled and cut into 8 wedges (optional)
16-oz jar(s) salsa, to serve (optional)

Steps:

  • 1. Spray a 6-quart crock pot with nonstick spray (or add crock pot liner to slow cooker crockery).
  • 2. Heat water into a large skillet over medium-high heat. Add sausages and cook 6 to 7 minutes or until water has evaporated. Reduce heat to medium-low, and cook another 6 to 7 minutes or until pork juice runs clear, turning frequently for even cooking. When sausage is fully cooked, cut into bite-size pieces; set aside.
  • 3. In a large bowl, thoroughly mix together the green onions, bell peppers, chilies and cilantro; set aside.
  • 4. Layer 1/3 of the hash browns, sausage bits, green onion mixture and cheese. Repeat layers two more times.
  • 5. In a separate bowl, beat eggs with the milk, salt and pepper. Pour egg mixture over the top of the casserole.
  • 6. Cover crock pot, set heat level to Low, and cook for 7 to 8 hours (internal temperature should reach 160°F). Garnish each serving with a generous spoonful of salsa and a slice of avocado on the side, if desired.
