HASH BROWN POTATO CASSEROLE
This creamy, cheesy Southern classic casserole can be served with breakfast, brunch or dinner. You'll need frozen diced potatoes, cheddar cheese, onion and cream of chicken soup. Perfect for the holidays!

- Preheat oven to 400 °F.
- In a large bowl, combine the diced potatoes, 2 cups of the cheddar, cream of chicken soup, sour cream, butter, onion and House Seasoning.
- Place in a buttered 9×13-inch pan and bake for 35 minutes. Remove from the oven and top with remaining cheddar. Return to the oven and bake for 10 minutes longer.
SOUTHERN HASH BROWN CASSEROLE
What a deliciously cheesy hash brown casserole. A potato lovers dream! They're creamy and tart with a bit of sweetness from the oven. A crunchy Corn Flake top puts it over the top. So simple to make, it would be a great breakfast or dinner side dish.

Steps:
- 1. As mentioned above, thaw hash browns (or use refrigerator style hash browns).
- 2. In a large bowl, mix together hash browns, cheddar cheese, 1/2 cup melted butter, salt, onion, soup, and sour cream. Stir until evenly mixed.
- 3. Spray a 9 x 11 or 9 x 13-inch pan or casserole dish with Pam or lightly grease the dish. This helps with clean up.
- 4. Pour mixture from the bowl into the pan and spread evenly with a spoon. Do not pack down tightly.
- 5. In a small bowl, mix together Corn Flakes and 1/4 cup melted butter. Mix together and spread on top of casserole.
- 6. Bake at 350 degrees F for 45 minutes without a lid. The top should be lightly browned when done.
GRANDMA'S HASH BROWN CASSEROLE
This recipe is a friend's grandma's recipe and is absolutely the best hash brown casserole I've ever had. Kentucky grandmas sure know how to cook!

- Mix hash browns, cream of chicken soup, Cheddar cheese, sour cream, butter, onion, salt, and pepper together in a bowl. Arrange in a 9x13-inch baking dish. Sprinkle on top. Drizzle butter over the cornflakes.
- Bake in the preheated oven until the sauce is bubbly and the top is golden brown, 1 to 1 1/2 hours.

- Mix sour cream, egg, chicken soup, onion, 1 cup cheese and one stick of melted butter in a bowl.
- Combine with hashbrowns.
- Mix in 1 cup crushed crackers and crumbed bacon.
- Spread in a 9 x 13 pan.
- Sprinkle remaining cheese over top.
- Mix remaining butter and cracker crumbs and spread over top of casserole.
