PAN-SEARED SALMON IN A CREAMY LEMON SAUCE



Pan-Seared Salmon in a Creamy Lemon Sauce image

Salmon fillets are pan-seared to perfection in a tangy lemon garlic sauce. Easy to make, low carb, and ready in just 30 minutes.

Number Of Ingredients 8

1 tbsp olive oil
Kosher salt and ground pepper (to taste)
4 salmon fillets (skin removed)
2 garlic cloves (minced)
2 lemons
1/2 cup mascarpone
2-3 tbsp water to thin
1 tbsp fresh dill (minced)

Steps:

  • Zest about ½ of a lemon. Cut the lemons in half and juice 3 of the halves. Slice the remaining half.
  • Heat the oil in an oven-proof skillet over medium-high heat.
  • Add the salmon and sear for 2-3 minutes on each side, or until golden brown. Set aside on a plate.
  • To the same skillet cook the garlic for 30 seconds, over medium heat.
  • Add in the mascarpone together with the lemon zest and juice. Stir in the fresh dill and 2-3 tbsp of water to thin the sauce a bit.
  • Return the salmon back into the pan and top with lemon slices.
  • Cook for 4-6 mins until the salmon is cooked through and flaky and the sauce is bubbly.

I found this in the "South Beach Diet Book".. even if you're not dieting... it's great. Just substitute real sour cream for the fat-free for a to die for experience. It's quick, simple and uses on hand ingredients.

1 tablespoon olive oil
1 garlic clove, minced
1/4 cup lemon juice
2 tablespoons capers
1 teaspoon lemon-pepper seasoning
1/2 cup fat free sour cream
1 1/2 lbs salmon fillets

Steps:

  • Preheat the oven to 350°F.
  • Coat a baking sheet with cooking spray.
  • Heat the oil in a small saucepan over medium heat.
  • Add the garlic and cook for one minute.
  • Reduce heat to low; stir in the lemon juice, capers and lemon-pepper seasoning and cook for 5 minutes.
  • Add the sour cream and cook for 5 minutes or until heated though.
  • Meanwhile, place the salmon on the prepared baking sheet.
  • Bake for 20 minutes or until the fish is just opaque.
  • Serve with the sauce.

1 1/2 cups reduced-fat cream cheese
4 slices light whole wheat bread, cubed
4 ounces spinach
2 asparagus spears, trimmed and chopped
4 ounces smoked salmon, chopped
1/2 teaspoon chives or 1/2 teaspoon dill
sea salt and pepper, to taste

Steps:

  • Preheat oven to 350°F Coat in 2-qt baking dish with cooking spray.
  • In a large bowl, beat the eggs and egg whites until frothy. Stir in remaining ingredients. Pour into prepared baking dish.
  • Bake for 45 minutes, or until golden and knife inserted in center comes out clean.
