- Preheat oven to 375°. On a lightly floured surface, roll dough to a 1/8-in.-thick circle; transfer to a 9-in. pie plate. Trim crust to 1/2 in. beyond rim of plate; flute edge. Refrigerate 30 minutes., In a large bowl, beat eggs. Add sour cream. Stir in sugar, 2 tablespoons flour, vanilla and salt; mix well. Gently stir in apples. Pour into crust. Bake 15 minutes. , Meanwhile, combine brown sugar and remaining 4 tablespoons flour; cut in butter until crumbly. Sprinkle over pie. Bake until filling is set, 20-25 minutes. Cool completely on a wire rack. Refrigerate leftovers.

SOUR CREAM APPLE BARS
Steps:
- Heat oven to 350°F.
- Combine butter and brown sugar in bowl. Beat at medium speed until creamy. Add all remaining crust ingredients; continue beating until well mixed.
- Press two-thirds of crust mixture into bottom of ungreased 13x9-inch baking pan. Bake 9-11 minutes or until light golden brown.
- Combine all filling ingredients in bowl; mix well. Pour filling over hot, partially baked crust. Crumble remaining crust mixture over filling and press down lightly.
- Bake 50-55 minutes or until top is golden brown and center is set. Cool completely. Cut into bars. Store refrigerated.

SOUR CREAM APPLE SQUARES
Mom and I formulated this recipe back in the '50s after visiting a friend's farm where they made the most delicious sour cream ever. Our first try was perfect, and these apple squares soon became a favorite to serve at social functions. Years ago, we made six pans of these squares when a young Johnny Carson presented his magic show at our card club!

- In a large bowl, combine the flour, brown sugar and butter; beat at low speed until crumbly. Stir in nuts. Press about 2-3/4 cups into an ungreased 13x9-in. baking pan. , To the remaining crumb mixture, add the cinnamon, baking soda, salt, sour cream, vanilla and egg. Beat until thoroughly combined. Stir in apples. Spoon evenly over crust. Bake at 350° for 35-40 minutes or until a toothpick inserted in the center comes out clean. Cool on a wire rack. Cut into squares. - Heat oven to 425 degrees F. Beat butter and 1/3 cup of the sugar in small bowl with electric mixer on medium speed until light and fluffy. Add flour; mix well. Spread onto bottom and 1 inch up side of 9-inch springform pan.
- Beat cream cheese and 1/3 cup of the remaining sugar in same bowl with electric mixer on medium speed until well blended. Add egg and vanilla; mix well. Spread evenly over crust. Combine remaining 1/3 cup sugar and the cinnamon. Add to apples in large bowl; toss to coat. Spoon over cream cheese layer; sprinkle with almonds.
- Bake 10 min. Reduce temperature to 375 degrees F; continue baking 25 min. or until centre is set. Cool on wire rack. Loosen torte from rim of pan. Cover and refrigerate 3 hours before serving. Store any leftovers in refrigerator.

- Preheat oven to 450°. In a small bowl, cream butter and 1/4 cup sugar until light and fluffy, 5-7 minutes. Beat in vanilla. Gradually beat in flour. - Preheat the oven to 425 degrees F (220 degrees C). Press the pie crust into and up the sides of a 9 inch pie plate.
- In a medium bowl, stir together 3/4 cup sugar, 2 tablespoons of flour, and salt. Mix in the sour cream, egg and vanilla until smooth. Add apples, and stir to coat. Scrape the mixture into the pie shell.
- Bake for 15 minutes in the preheated oven, then reduce heat to 350 degrees F (175 degrees C), and continue baking for 30 minutes more.
- While the pie is baking, prepare the topping in a medium bowl. Stir together 1/3 cup of flour, 1/3 cup sugar, and cinnamon. Cut in the butter until the mixture resembles fine crumbs.
- After the 30 minute bake time has passed, cover the top of the pie with the crumb topping, and continue to bake for 15 minutes, or until topping is lightly browned and apples are tender. Allow the pie to cool, then refrigerate until chilled before serving.

- Preheat oven to 450 degrees F(230 degrees C).
- Cream together butter, 1/3 cup sugar, vanilla, and flour. Press crust mixture into the flat bottom of a 9-inch springform pan. Set aside.
- In a medium bowl, blend cream cheese and 1/4 cup sugar. Beat in egg and vanilla. Pour cheese mixture over crust.
- Combine 1/3 cup sugar and 1/2 teaspoon cinnamon. Toss the sliced apples with the sugar mixture and spread over the cheese filling.

- 1. Cook apples in margarine, in covered fry pan until tender, stirring occasionally.2. In medium mixing bowl, combine the 1/2 cup sugar, sour cream, egg yolks, flour, lemon peel and lemon juice. Pour over apples. Cook over low heat, stirring constantly until mixture thickens. Remove from heat. Cool.3. Beat egg whites with salt until stiff, but not dry. Fold into prepared custard mixture.4. - For Crust.
- Preheat oven to 375 degrees.
- Mix flour and sugar in medium bowl;cut in butter using pastry blender or 2 knives until mixture resembles coarse meal.
- Blend in egg, stir in walnuts and pat dough into bottom and 1/2 inch up sides of 10-inch springform pan.
- Bake until golden brown, 20 to 25 minutes.
- Cool and spread with warm jam.
- For Filling.
- Toss apples with lemon juice to taste.
- Melt butter in large skillet over low heat.
- Add apples and both sugars and stir to mix.
- Cover and cook until apples are just tender, 10 to 12 minutes.
- Uncover, increase heat to medium-high and cook until liquid has evaporated, 7 or 8 minutes.
- Stir in raisins, cinnamon and peel; cool.
- For Topping.
- Preheat oven to 350 degrees.
- Beat sour cream, whipping cream.eggs,sugar and vanilla in bowl.
- Spoon filling into crust.
- Very slowly pour topping over, lifting apples so topping seeps through.
- Bake until topping is consistancy of cooked custard, 35 to 40 minutes.
- Sprinkle top edge of tart with chopped walnuts.
- Cool to room temperature; refrigerate at least 8 hours or overnight.
- Serve chilled.

- 1. Heat oven to 350^, Using non-stick baking spray coat a 9-inch glass dish and set aside.
- 2. In a large bowl combine sugar ,flour, baking powder, nuts, and apple pie spice. Mix well by hand.
- 3. In a medium bowl combine egg, vanilla, and sour cream ,mix well . Add apples and coat evenly. Pour apple mixture into the flour mixture, folding until all ingredients are blended well. Mixture will be thick.
