- Add the mayonnaise, sour cream, mustard, garlic powder, onion powder, black pepper, salt and chives to a bowl. Mix together, and then cover and chill until ready to serve.
RED ONION DIP
This homemade red onion dip is simple to make and perfect to serve with chips or veggies. Low carb, gluten-free and vegetarian friendly.

Steps:
- Add the butter, sliced red onions, salt, pepper, garlic powder, brown sugar and Worcestershire sauce into a pot and place on a medium heat on the stovetop.
- Stir the pot a few times as the butter melts.
- Cook the onions down for about 30 minutes until they are softened. Stir occasionally.
- Take off of the stovetop, and let the onions cooled completely.
- Mix together the mayonnaise, sour cream and fresh chives in a bowl.
- Stir in the cooled onions, and refrigerate for 2 hours.
- Taste and season if needed, and serve with a sprinkle of fresh chives.

ROASTED ONION DIP

- Preheat the oven to 400 degrees F.
- Add the onions to a foil-lined baking sheet, drizzle with olive oil and sprinkle with salt and pepper. Toss everything together. Transfer to the oven and roast for 35 minutes, or until the onions are tender and golden. Set aside to cool completely.
- In a stand mixer fitted with a paddle attachment, combine the cream cheese, sour cream, Parmesan, mayonnaise, Worcestershire, chives and the roasted onions. Beat until light and fluffy and well-combined. Scrape the mixture into a serving bowl using a rubber spatula. Sprinkle the remaining chives over the top and serve.

SOUR CREAM AND ONION DIP (FROM SCRATCH!)
I got this recipe from my husband's Aunt Dee. It's simply labeled as "Rye Boat Dip", but judging from the ingredients, I'd say this is sour cream and onion dip! I had a hard time finding other recipes to back up my guess, so I thought I'd post this as an example. If you're unfamiliar with dried beef, it'll be in the same section as Spam and other canned meats. The stuff I use comes in a glass jar. It's a little pricey in some stores-I've used only one jar and it's been delicious. Note: Cooking time is chilling time.

- Chop the dried beef into bite-sized pieces.
- Mix all ingredients together.
- Let it, covered, in the fridge overnight.
- Optional: Just before serving, hollow out a loaf of rye bread. Tear the removed bread into bite-sized pieces. Pour dip into hollow in bread. Place torn bread around bread bowl to dip into bowl.

- Place oil in an 8-inch skillet, and turn heat to medium-high. When it's hot, a minute or two later, add onion, salt and sugar. Cook, shaking pan occasionally, until onion browns, about 10 minutes.
- Pour onion and oil into a fine strainer; reserve oil in refrigerator for another use. Stir onion into sour cream. If time allows, cover and refrigerate for 24 hours. Serve with potato chips or raw vegetables.

SOUR CREAM AND ONION DIP
Take plenty of time to properly caramelize a mixture of onions and shallots and you'll be greatly rewarded with a depth of flavor that you would never get from a powdered packet. Resist the urge to cook them at a higher temperature in order to rush the process - they'll burn before they brown and soften. The addition of Greek yogurt might seem unusual, but it provides a lightness and tang that sour cream can't deliver by itself.

- Heat oil in a large skillet over medium heat.
- Add onions and shallots and season with salt and pepper. Cook, stirring occasionally, until onions are softened and starting to turn a nice golden brown, 15 to 20 minutes. Reduce heat to low and continue to cook, stirring often to make sure the onions don't stick along the bottom of the skillet. Cook until onions are a deep golden brown and reduced by about half their original size, another 45 to 55 minutes. Resist the urge to turn up the heat to make them caramelize faster. It will lead to burning.
- Transfer onions and shallots to a cutting board and finely chop. Place in a large bowl along with sour cream, yogurt, lemon juice and garlic. Season with salt and pepper.
- Transfer to a serving bowl and drizzle with olive oil, season with pepper and sprinkle with chives.

- Wash and chunk potatoes. Can peel if you want. I usually don't.
- Mix all ingredients except the parmesan cheese and toss with potatoes.
- Pour into a baking dish.
- Marinade for 30 minutes.
- Bake at 350 for 60 minutes or until fork tender.
- Sprinkle with the cheese just before serving.
- Time depends on size of potatoes.
- NOTE: Depending on your personal likes you can mix the potatoes and oil/seasoings in a bowl,marinade then just spoon the potatoes into an oiled or sprayed baking dish and then drizzle with as much of the oil/seasoning mixtue as you would like to use.
- Sour Cream Dip.
- Mix all ingredients. Chill for an hour.
