Sour Cherry Crumble Muffins image

The texture of this sour cherry crumble muffin recipe is firm, but light. The oat topping is perfectly crunchy, but not too sweet - similar to a cherry cobbler. If you have fresh, tart cherries in season, these muffins are the perfect thing to make, they're oh, so tasty.

1/4 cup oats
2 tbsp brown sugar
1 tbsp sugar
3 tbsp butter (melted)
2 cups flour
1 tbsp baking powder
1 cup sugar
1/4 tsp salt
2 eggs (beaten)
1 cup buttermilk
1/4 cup vegetable oil
1 tsp vanilla
2 cups sour cherries (pitted and halved)

Steps:

  • Pre heat the oven to 400 F (200 C) and line or grease a muffin tin. (for 12 regular, 6 jumbo muffins)

As a kid, I loved doughnuts filled with custard or jelly. So I decided to experiment with fillings in muffins. The result was this terrific recipe. These fancy muffins are almost like a pastry with a creamy center and a nutty streusel topping. -John Montgomery, Fortuna, California

Number Of Ingredients 20

1-3/4 cups all-purpose flour
1/2 cup plus 1 tablespoon sugar
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 cup cold butter, cubed
1 large egg
3/4 cup sour cream
1 teaspoon almond extract
FILLING:
1 package (8 ounces) cream cheese, softened
1 large egg
1/4 cup sugar
1/2 teaspoon vanilla extract
3/4 cup cherry preserves, warmed
TOPPING:
1/3 cup all-purpose flour
2 tablespoons sugar
2 tablespoons cold butter
1/3 cup chopped sliced almonds

Steps:

  • In a large bowl, combine flour, sugar, baking powder, baking soda and salt. Cut in butter until the mixture resembles coarse crumbs. Beat the egg, sour cream and extract until smooth; stir into dry ingredients just until moistened (batter will be thick). , In a large bowl, beat cream cheese, egg, sugar and vanilla until smooth. In a saucepan over low heat, warm preserves. For topping, combine flour and sugar in a small bowl; cut in butter until crumbly. Stir in almonds., Fill greased jumbo muffin cups half full with batter. Divide cream cheese filling and preserves evenly among muffin cups; swirl gently. Cover with remaining batter. Sprinkle with topping. , Bake at 350° for 30-35 minutes or until a toothpick inserted in muffin comes out clean. Cool for 5 minutes before removing from pans to wire racks. Serve warm.

Nonstick cooking spray
1 cup prepared cherry pie filling
1 cup cherry preserves
1/4 cup dried cherries
1 1/2 teaspoons pure almond extract
1 cup quick-cooking oats
1/2 cup dark brown sugar
1/2 cup sliced almonds
1 teaspoon ground cinnamon
5 tablespoons butter, melted
Whipped non-dairy topping, or sour cream

Steps:

  • Preheat oven to 400 degrees F.
  • Spray 4 (8-ounce) ramekins or custard cups with cooking spray. Stir pie filling, preserves, dried cherries, and almond extract in a large bowl to blend. Spoon cherry mixture into ramekins. Place ramekins on a cookie sheet.
  • Toss oats, brown sugar, almonds, and cinnamon in medium bowl to combine. Drizzle melted butter over; stir to moisten. Sprinkle topping over cherry mixture. Bake for 20 minutes, or until topping is golden and cherry mixture bubbles. Serve warm with whipped topping or sour cream.

1 ½ cups all-purpose flour
¾ cup white sugar
2 teaspoons baking powder
½ teaspoon salt
⅓ cup vegetable oil
⅓ cup milk
1 egg
½ teaspoon almond extract
1 cup fresh pitted and quartered sweet cherries
1 tablespoon white sugar

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Line a muffin tin with paper liners.
  • Mix flour, 3/4 cup sugar, baking powder, and salt together in a bowl.
  • Whisk oil, milk, egg, and almond extract together in a small bowl. Pour into flour mixture; stir gently until incorporated. Fold cherries into the batter.
  • Spoon batter into the muffin cups, filling each 2/3 of the way full. Sprinkle 1 tablespoon sugar on top.

From a Canadian Living Muffins and Cookies book. The original recipe was for blueberries and suggested sweet cherries as a possible substitution. I found it much more interesting with sour cherries - and there's plenty of brown sugar in here to compensate for the tartness of the cherries.

1 cup brown sugar, lightly packed
3/4 cup rolled oats
2/3 cup whole wheat flour
1/2 cup all-purpose flour
1 tablespoon baking powder
1/4 teaspoon cinnamon
1 grated lemon, rind of (or orange)
1 cup skim milk
1/4 cup vegetable oil
1 egg
1 cup sour cherry

Steps:

  • In large bowl, combine sugar, oats, whole wheat and all-purpose flours, baking powder, cinnamon and lemon rind. Beat together milk, oil and egg; pour over dry ingredients and mix just until moistened but not over-mixed. Gently fold in cherries.
  • Spoon into large lined muffin cups, filling three-quarters full. Bake in 400 F (200 C) oven for 20-25 minutes or until tops are firm to the touch.
