2 tbsp sunflower oil
400g beef mince
1 onion, chopped
2 garlic cloves, crushed
1 tbsp cumin seeds
1 tsp ground coriander
1 tsp dried oregano
1 tbsp cider vinegar
1-2 tsp chipotle paste
1 tbsp tomato paste
400g can chopped tomatoes
¼ tsp yeast extract
1 beef stock cube
400g can black or kidney beans
cooked rice
soured cream
sliced jalapeños from a jar, drained
handful of coriander leaves
1 small onion, chopped

Steps:

  • Heat the oil in a casserole or shallow saucepan over a medium heat, then fry the beef for about 10 mins until any fat has been released and the beef has started to brown. Add the onion and fry for another 8-10 mins until the onions have softened and started to brown slightly. Add the garlic and stir for another minute.
  • Stir in the cumin seeds, ground coriander, oregano and a good grinding of black pepper, and continue to fry the mixture for a few minutes until fragrant. Add the vinegar, then the chipotle and tomato pastes, and stir everything together. Tip in the tomatoes and a can of water, then add the yeast extract and crumble in the stock cube. Stir well and bring the mixture to a simmer. Cook for 20 mins, stirring occasionally.
  • When the chilli has thickened, tip in the beans and half the liquid from the can. Simmer for 20 mins more, taste for seasoning, then serve with rice, and top with the soured cream, jalapeños, coriander leaves and onion.

3 tablespoons vegetable or grapeseed oil
2 pounds pork shoulder, trimmed and cut into 1/2-inch dice
1 pound beef chuck, cut into 1/2-inch dice
2 teaspoons kosher salt
4 cloves garlic, chopped or smashed
1 onion, diced
1 red pepper, diced
3 tablespoons chile powder
1 tablespoon cumin
1 teaspoon chipotle flakes or powder
1/2 teaspoon coriander
Two 15-ounce cans diced fire-roasted tomatoes
Two 15-ounce cans kidney beans, drained and rinsed
3 tablespoons bourbon
3 tablespoons brewed espresso
1 tablespoon agave
1/2 cup shredded white Cheddar, optional
1/3 cup sour cream, optional

Steps:

  • Heat a large Dutch oven over medium-high heat. Add 2 tablespoons of the oil to the hot pan. Season the pork and beef with 1/2 teaspoon of the salt. Working in 2 batches, brown the meat on all sides; this will take about 7 minutes per batch. Remove the browned meat to a plate and continue with the next batch.
  • When all the meat is browned and removed, add the remaining tablespoon of oil to the pan along with the garlic, onion and pepper. Cook, stirring often, for about 3 minutes. Season the vegetables with the chile powder, cumin, chipotle, coriander and 1 teaspoon of salt. Continue to cook the vegetables until the spices are fragrant and the vegetables are soft, an additional 2 minutes. Stir in the diced tomatoes and kidney beans along with 3 cups of water. Add the seared meat and the remaining 1/2 teaspoon salt. Reduce the heat to medium low, cover and simmer until the meat is tender and the chili has thickened slightly, about 1 hour. Stir in the bourbon, espresso and agave and turn off the heat.
  • Serve garnished with shredded Cheddar cheese and a dollop of sour cream if desired.

Sooz's Rich and Smoky Chili Con Carne image

My family and friends all love this chili. It is really meaty, and the meat is SO tender it just falls apart. The slightly sweet, rich flavor of this chili gets even better on the second day and you don't taste the individual ingredients like the coffee or the cocoa... just the deliciousness of the chili. I usually make this to eat during big football games and traditionally on Halloween Eve as although it takes a while to make, it does not require a lot of attention. You can make it with or without beans depending on how you like your Chili Con Carne. Sometimes I make cornbread for this, but I usually serve it with flour tortillas I buy from the little Mexican Market in my town and toppings like chopped onion, shredded cheese and sour cream.

1/4 cup oil
1 lb beef brisket, cubed (or beef sirloin)
1 lb lean ground beef
1 1/2 teaspoons salt
3/4 teaspoon pepper
1 onion, chopped
2 garlic cloves, chopped
2 cups beef broth
1 (12 ounce) bottle beer (a good dark beer... I use Negra Modelo)
1 cup strong brewed coffee
1 (28 ounce) can crushed tomatoes
1 (6 ounce) can tomato paste
3 tablespoons chili powder
1 teaspoon ground cumin
1 teaspoon coriander
2 tablespoons brown sugar
2 teaspoons unsweetened cocoa powder
1/4 teaspoon cayenne pepper (or more depending on taste)
1 teaspoon smoked paprika (you can use regular but you won't get that smoky flavor)
1 (4 ounce) can of chopped green chilies
1 anaheim chili, seeded and chopped (more if you like spicier chili or you can use jalapenos too. I use the roasted anaheims I buy at the)
1 (29 ounce) can pinto beans (Optional but I use them)

Steps:

  • Heat oil in Dutch oven. Sprinkle beef with, salt and pepper and brown in oil.
  • Add onions and garlic and cook until onions are tender.
  • Add beef broth, beer, coffee, crushed tomatoes, tomato paste and blend well.
  • Stir in chili powder, cumin, coriander, brown sugar, cocoa powder, cayenne pepper, and paprika.
  • Mix in the chopped green chilies and anaheim pepper.
  • Bring to a boil, reduce heat, cover and simmer for at least 2 hours stirring occasionally to make sure it does not stick to the bottom of the pan.
  • Add beans if desired and simmer for an additional 30 minutes.
  • Serve hot with onions, shredded cheese, and sour cream on top and with flour tortillas for scooping and dipping.

A warm, comforting chilli is the ultimate family meal. This dish is great for all seasons and has a mix of sweet (cascabel) and smoky (ancho) chillis to give it depth

80ml olive oil
2 large onions , roughly chopped
2 large dried ancho chillies (buy from Waitrose or ocado.com)
3 dried cascabel chillies (buy from Waitrose or ocado.com)
2 tsp smoked paprika
2 tsp dried thyme
3 celery sticks , finely chopped
1 beef stock cube
1.5kg beef shin, boneless and cut into large chunks
1 tbsp plain flour
3 carrots , trimmed, left whole
50ml maple syrup
1can chopped tomatoes
500ml bottle dark beer
500ml fresh beef stock
fresh coriander sprigs, to serve

Steps:

  • Heat oven to 160C/140C fan/ gas 3. Heat a large cast-iron pot or saucepan over a high flame, pour in the oil, then drop in the onions, chillies, paprika and thyme. Cook for 5 mins until the onions soften. Add the celery, give it a stir and crumble in the stock cube. Stir again and cook for another 5 mins
  • Add the beef, stir well, then colour for a few mins to coat the meat with the spices. Add the flour and coat everything with a more few stirs, then add the remaining ingredients, along with 1 tsp salt.
  • Let it come to the boil, then put a lid on, place in the oven, reduce the temperature to 140C/120C fan/ gas 1 and cook for 4 1 /2 hrs.
  • Take the pot out of the oven and remove the carrots, chop them into small chunks, then put them back in. I like plenty of sauce, but you may want to remove some if you don't want it too saucy - be sure to keep it, it's great on toast when cold. Remember to remove the chillies before you serve. Finally, scatter with coriander, if you like

1 large onion, diced
2 -3 cloves garlic, minced
1 orange sweet bell pepper or 1 yellow sweet pepper, cut into large dice
2 stalks celery, diced
1 lb lean ground beef or 1 lb ground chicken
1 lb hot Italian sausage, removed from casings and crumbled
5 -6 tablespoons chili powder
1 chipotle chile in adobo, minced
salt and pepper
2 (28 ounce) cans diced tomatoes, undrained
2 (19 ounce) cans kidney beans, drained and rinsed well
1 (12 ounce) can corn
1 (5 ounce) can tomato paste
1 -2 tablespoon liquid smoke
1 tablespoon brown sugar

Steps:

  • Brown Italian sausage and ground meat together over medium heat in large pot draining any excess fat.
  • Add onions, celery garlic and cook until softened.
  • Add sweet pepper for a few minutes, otherwise they are too soft.
  • Add chili powder, minced chipotle,and liquid smoke.
  • Add tomatoes, sugar and corn, mixing well.
  • Bring to boil and let simmer slowly for an hour, stirring occasionally.
  • Add kidney beans and let simmer another 15 minutes.
  • Taste and add salt and pepper if needed.
