PORTUGUESE DOUGHNUTS (SONHOS)



Portuguese Doughnuts (Sonhos) image

Fresh warm doughnut holes rolled in sugar- an authentic Portuguese recipe.

1 cup water
1/4 cup (1/2 stick) butter
1 tablespoon granulated white sugar
1 cup all purpose flour
4 large eggs
1/2 teaspoon lemon extract
pinch of salt
canola oil, (for frying)
granulated white sugar, (for rolling)

Steps:

  • In a medium saucepan, combine the water, butter and sugar. Bring to a boil, then turn off the heat and stir in the flour. Stir until the mixture forms a ball. Move the batter to a medium bowl and let cool.
  • Use an electric mixer to beat in the eggs, one at a time. Add lemon extract and a pinch of salt.
  • Fill a medium pot with about 3 inches of canola or vegetable oil and heat over medium-high heat until it reaches a temperature of 375 degrees. See Recipe Notes below if you don't have a thermometer to check the temperature.
  • Drop the doughnut batter into the hot oil by teaspoon (no bigger than an actual teaspoon because they will puff up a lot while cooking). You can fry about 15 doughnuts at a time. Fry until they are lightly browned all around. Remove with a slotted spoon onto paper towels to drain.
  • Roll in sugar while the doughnuts are still warm, and serve immediately.

Similar to a French cruller, this Portguese sweet should be served hot and fresh. Cooking time does not include the deep frying as this will vary greatly depending on the experience of the cook ( I don't deep fry much so I am very careful and take longer then those who use this method more often )

1/4 cup water
salt, pinch
1/4 cup butter, do not substitute
1/2 cup flour
4 eggs
cooking oil (for deep frying)
cinnamon sugar

Steps:

  • In a sauce pan, add the water, butter and salt and bring to a boil over medium heat.
  • As soon as the water boils add the flour quickly and stir until smooth. Remove from the heat and whisk until cold, then add the eggs in one at time, continuing to beat (this is similar to a cream puff dough). The mixture should be well whipped and then left to rest for 15 minutes.
  • Heat oil in a deep fryer until 365 - 375 degrees on a deep fry thermometer, drop in 3 - 4 teaspoonfuls of the mixture. Stir the oil gently with a wooden spoon to make the sonhos rise well. They should fry slowly to rise well, when pale brown remove, drain, and keep warm in a low oven while cooking the others. Sprinkle with cinnamon sugar.

  • In a medium saucepan over medium-high heat, bring the butter, sugar, and water to a boil. Add the flour and stir vigorously with a wooden spoon until the dough pulls away from the sides of the pan, gets hard to stir, and forms a stiff ball, 2 to 4 minutes.
  • Add enough oil to a wide saucepan or Dutch oven to reach a depth of 3 inches (8 cm). Warm the oil over medium-low heat until it registers 300°F (150°C).
