1 tbs. creamy peanut butter
1 tbs. chocolate syrup
1/2 oz. Kahlua or coffee liqueur
1/2 oz. dark rum
1/2 oz. vodka
1 oz. almond milk
Ice
Torched mini-marshmallows for garnish

Steps:

  • In a pint glass, mix together the peanut butter and chocolate syrup. Stir in the Kahlua until well blended. Stir in the vodka and rum and then add the almond milk. Fill a martini shaker with ice and add mixture. Shake vigorously until very well chilled. Drizzle the insides of a martini glass with chocolate syrup. Strain cocktail into the martini glass. Put 3-4 mini-marshmallows onto a skewer and toast with a butane torch. Place over glass.

2 1/2 cups finely chopped chocolate (recommended: Valhrona brand)
2 tablespoons whipping cream
1 cup butter
4 eggs
4 egg yolks
1/2 cup granulated sugar
2 teaspoons Armagnac
1/4 cup all-purpose flour
1/4 cup unsweetened cocoa powder, plus more for sifting
Powdered sugar
Spun Sugar Halo, recipe follows
1 cup sugar
1/2 cup water

Steps:

  • Filling: In a heavy saucepan combine 1 cup of the chocolate and whipping cream. Stir over low heat until chocolate melts. Transfer mixture to a small bowl. Cover and chill for 45 to 60 minutes or until nearly set. Lightly grease and cocoa powder 6 (3/4-cup) souffle dishes. Divide chilled chocolate filling evenly between dishes. Place dishes in baking pan, set aside.
  • In a double boiler over low heat, stir butter and remaining 1 1/2 cups chocolate over low heat until melted. Remove from heat and let cool. Set aside.
  • Batter: Preheat oven to 400 degrees F.
  • In a large mixing bowl beat eggs, egg yolks, granulated sugar, and Armagnac on high speed for 5 minutes or until thickened and lemon-colored. With mixer on medium speed, beat in melted butter-chocolate mixture until combined. Sprinkle flour and cocoa powder over the chocolate mixture, beat on low speed until combined. Divide batter evenly among the dishes. Bake uncovered for about 15 minutes or until the cakes feel firm at the edge. Cool in dishes for 2 to 3 minutes. Using a knife, loosen cakes from side of dishes. Invert onto dessert plates. Sift cocoa powder onto plates, dust cakes with powdered sugar and serve with Spun Sugar Halo's.
  • Combine sugar and water in a saucepan over medium heat until sugar is dissolved and mixture caramelizes, about 15 minutes. Drop syrupy mixture onto waxed paper in a circular "halo" and cool before peeling off waxed paper backing. Place halos on top of cakes as garnish.

4 Kellogg's® Eggo® Minis Homestyle waffles
2 miniature pretzel twists
2 scoops (2 tbsp. each) Breyers® ½ the Fat Creamy Vanilla Light Ice Cream
Canned white frosting
1 large seedless red grape, halved lengthwise
2 round cookies-and-creme candy drops or large round white chocolate candies
Miniature semi-sweet chocolate morsels
Miniature candy-coated chocolate piece, halved
Candy corn

Steps:

  • 1. Prepare Kellogg's® Eggo® Minis Homestyle waffles according to package directions. Cool completely. Break out and discard bottom loop of each pretzel twist. Set aside.
  • 2. For each turkey, sandwich one scoop of ice cream between two waffles. Stand sandwiches on sides. Working quickly, use frosting to attach one pretzel portion to the bottom of each for feet. With frosting, attach grape halves and round candy pieces for bodies and heads. Use additional frosting to attach miniature chocolate morsels for eyes and halved miniature chocolate piece for beaks. Press candy corn into ice cream for feathers. Serve immediately.

I had this recipe at the after funeral buffet for my mother. It is tasty, can be made ahead of time, and good for any and all types of gatherings.The best thing about this is you make it, let it sit all night and then an hour in the oven next day and VOILA--it's ready.

4 cups diced turkey meat
1 cup celery
1 cup sliced onion
1 (8 ounce) can cream of mushroom soup
1 (4 ounce) can water chestnuts
1 cup mayonnaise
8 ounces wild rice mix
1 cup shredded potato chips

Steps:

  • While chopping or dicing turkey, cook wild rice mix.
  • Place in bowl and toss the turkey, wild rice, celery, onion, and water chestnuts.Add the mushroom soup, as well as the mayonnaise , mixing to a fairly creamy mixture.
  • Add to a large rectangular casserole dish, cover with foil, place in refrigerator until the next day. Makes 6-12 servings, according to smaller/larger ingredient portions given.
  • Cook at 350°F 1 hour; let sit five minutes and then serve.
  • Excellent for church, community gatherings, as well as large family get-togethers.

4 cups cooked, chopped turkey meat
1 (6 ounce) package dry bread stuffing mix
12 potatoes, peeled and chopped
2 cups turkey gravy

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Bring a large pot of salted water to a boil. Add potatoes and cook until tender but still firm, about 15 minutes. Drain and mash.
  • Prepare stuffing as directed.
  • Place the stuffing in a 2 quart baking dish. Layer with turkey and cover with 1 cup gravy. Top with mashed potatoes and the remaining gravy.
  • Bake covered in the preheated oven 45 minutes, or until bubbly and lightly browned.
