5-INGREDIENT CHICKEN SAUSAGE WITH BRAISED RED CABBAGE

5-Ingredient Chicken Sausage with Braised Red Cabbage image

A little sweet, a little briny, this fall-inspired dish will warm your tummy. I like to round out the meal with quinoa pilaf or garlic toast.

Provided by Michelle Dudash

Categories     main-dish

Time 40m

Yield 4 servings

Number Of Ingredients 5

12 ounces precooked chicken sausage links (4 links)
1 medium sweet apple, such as Gala, peeled and cut into oversized matchsticks
1/2 large red onion, sliced thin (about 2 cups)
1/4 large red cabbage, sliced thin (about 4 cups)
2 tablespoons apple cider vinegar

Steps:

  • Heat a large, wide-based pot over medium heat. Add 2 teaspoons neutral high-heat cooking oil, like canola, rice bran or grapeseed oil. When the oil is shimmering, add the sausage and brown on one side, about 3 minutes. Turn and brown another side, 2 to 3 minutes. Turn and brown another side if possible, about 2 minutes. Remove from the pan.
  • Add the apple, onion and cabbage to the pan, scraping the bottom of the pan with a wooden spoon as the water releases from the vegetables. Cook until wilted, stirring occasionally and reducing the heat to medium-low as needed, about 10 minutes. Add the vinegar, 1/4 cup water (or broth for added flavor, if you have some) and 1/4 teaspoon each salt and pepper. Place the sausage on top. Partially cover and simmer until the fruit and vegetables become wilted and are fork-tender, about 5 minutes. Slice the sausage on a cutting board and serve over the fruit and vegetables.

OKTOBERFEST CHICKEN AND RED CABBAGE

Oktoberfest Chicken and Red Cabbage image

I adore Bavarian cuisine! And since there's no good German food here (while I lived in San Francisco, my husband and I ate at wonderful German/Hungarian restaurants there), I have to make my own...This recipe is crazy simple.

Provided by HerbanSpoons

Categories     World Cuisine Recipes     European     German

Time 1h30m

Yield 8

Number Of Ingredients 13

4 slices bacon
1 tablespoon bacon drippings
¼ cup all-purpose flour
½ teaspoon kosher salt
½ teaspoon smoked paprika
2 pounds skinless chicken thighs
1 red onion, sliced
1 large apple, cored and sliced
1 head red cabbage, cored and sliced
½ cup red wine vinegar
¼ cup dry red wine
¼ cup brown sugar
½ teaspoon ground cinnamon

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Place bacon in a large oven-safe or cast-iron skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain the bacon slices on paper towels. When cool, crumble bacon; leave bacon drippings in the skillet.
  • Whisk flour, kosher salt, and smoked paprika together in a bowl. Coat chicken thighs in the seasoned flour and brown on both sides in the hot bacon fat over medium heat, about 5 minutes per side; transfer chicken to a plate. Drain bacon grease except for 1 tablespoon; cook and stir onion and apple until onion is translucent and apple is softened, about 5 minutes. Stir red cabbage and bacon into onion-apple mixture, sprinkle with a pinch of kosher salt, and cook, stirring often, until cabbage is softened, 5 to 8 minutes.
  • Pour red wine vinegar and red wine into skillet. Stir in brown sugar and cinnamon and bring cabbage mixture to a boil; cook until sauce is reduced by half, stirring often, about 10 minutes. Arrange chicken thighs on top of cabbage in the skillet.
  • Bake in the preheated oven until cabbage is tender and chicken is cooked through, about 40 minutes. An instant-read meat thermometer inserted into the thickest part of a thigh should read at least 160 degrees F (70 degrees C).

SOLAR BRAISED CHICKEN WITH RED CABBAGE

Solar Braised Chicken with Red Cabbage image

Number Of Ingredients 0

Steps:

  • This slow-cooked chicken doesn't take any longer to cook in the GSO than it would stovetop. In both cases the cabbage is first cooked for about an hour before the chicken is added. Then they both braise together for another hour, until the meat is fall of the bone tender and the cabbage has transformed itself into a rich sauce that even the pickiest of eaters will like. It is typical of home-cooked Italian meals, a few simple, readily available, ingredients, prepared in a way that keeps everyone coming back for more. When made stovetop the lid is left ajar and most of the liquid evaporates. I've yet to recreate this in the GSO, even with my tea towel trick so when the chickens ready I transfer the pot to the stove, remove the chicken, and reduce the sauce over medium high heat. It only takes five minutes or so.
