Fluffy Buttermilk Biscuits. Homemade, simple, regular ingredients and very easy to make! Serve with a lovely stew or alongside a breakfast. Delicious!

2 cups All Purpose flour
a pinch of salt
1 tsp of baking powder
3 tbsp of shortening or butter, chilled
1 cup of buttermilk
1 teaspoon vegetable oil
1 Tablespoon melted butter

Steps:

  • Preheat oven to 425 F and place your cast iron skillet pan or baking tray in the oven.
  • In a bowl, add the flour, salt and baking powder. Then add the shortening or butter. Using a pastry cutter or 2 round bladed knives, combine everything until the mixture resembles breadcrumbs.
  • Add the buttermilk to the flour mix and incorporate until all wet. You may need to add a little bit of additional milk, just to make the mix workable.
  • Once the mixture turns into a dough, shape and gently pat the dough so it is of an even thickness of about 1 inch thick with your hands. Then using a round cutter, cut the biscuits.
  • When you have cut the biscuits out, remove the heated skillet / baking tray from the oven and spray or brush with vegetable oil. Then place the biscuits on the pan / tray and return to oven. Bake for about 15 minutes or until lightly golden. Once ready, remove from the oven and brush the tops with melted butter and serve warm.

This recipe is soft and tasty, similar to a famous fast food restaurants breakfast biscuit, so good with honey and butter and my homemade Blackberry Jam.

4 tsp baking powder
1 Tbsp sugar
1 1/2 tsp salt
4 c all purpose flour
3/4 c crisco butter flavored shortening, cold
1/4 c butter or margarine, cold
1 egg
1 1/2 - 2 c buttermilk, more or less depending on your altitude

Steps:

  • 1. In a large bowl, combine all the dry ingredients, flour, sugar, salt and baking powder.
  • 2. Add the shortening and butter, cut into flour with a Pastry Cutter or two forks until the mixture resembles small peas.
  • 3. Beat the egg and add the buttermilk to the flour at the same time, Combine just until well mixed, do not overwork.
  • 4. Roll out the dough to about 1" thick, cut biscuits into rounds Place on cookie sheet or skillet brushed with Crisco. Brush tops of biscuits with butter before baking.(Tip: Sometimes I pat the dough out into a big square and cut them with a knife or pizza cutter, I cut the dough into a square shape, this way you use all the dough and have no scraps, (Who said biscuits have to be round???)
  • 5. Bake in a preheated oven at 450* degrees until golden brown, rotate the pan halfway through baking time to insure even browning. Mine took about 18-20 minutes to brown.

2 1/2 c self rising flour
2 1/2 tsp sugar
1/8 tsp salt
1 stick butter, frozen
1-1 1/2 c buttermilk

Steps:

  • 1. Combine dry ingredients in a medium bowl.
  • 2. Grate frozen butter over the dry ingredients working very quickly so the butter stays as cold as possible. Toss butter into the dry ingredients with a fork making sure no large clumps of butter remain.
  • 3. Add 1 cup of the buttermilk and stir in with fork adding more buttermilk as needed to make a moist dough.
  • 4. Turn dough onto a well floured board and knead as little as possible to make a smooth dough. Pat out dough to 1/2-1 inch thick. Cut with biscuit cutter and add to well buttered 9x13 inch pan making sure the sides of the biscuits touch. Re-roll dough and cut more until all dough is used. The last little bit I usually pat into 2 small biscuits for the corners of the pan.
  • 5. Bake in a preheated 450* oven for 12 min. Turn pan around and bake another 6 minutes. Brush tops with butter as soon as they come out of the oven.

  • Preheat oven to 400°. In a bowl, whisk together first 4 ingredients. Cut in shortening until the mixture resembles coarse crumbs. Whisk together egg and milk. Add to dry ingredients; stir just until moistened. Dough will be wet. , On a well-floured surface, knead dough gently 8-10 times. Roll to 1/2-in. thickness; cut with a floured 2-1/2-in. biscuit cutter. Place on a lightly greased baking sheet. , Bake until golden brown, 10-12 minutes. Serve warm.

2 teaspoons baking powder
1 teaspoon salt
¼ teaspoon baking soda
7 tablespoons unsalted butter, chilled in freezer and cut into thin slices
¾ cup cold buttermilk
2 tablespoons buttermilk for brushing

Steps:

  • Preheat oven to 425 degrees F (220 degrees C).
  • Line a baking sheet with a silicone baking mat or parchment paper.
  • Whisk flour, baking powder, salt, and baking soda together in a large bowl.
  • Cut butter into flour mixture with a pastry blender until the mixture resembles coarse crumbs, about 5 minutes.
  • Make a well in the center of butter and flour mixture. Pour in 3/4 cup buttermilk; stir until just combined.
  • Turn dough onto a floured work surface, pat together into a rectangle.
  • Fold the rectangle in thirds. Turn dough a half turn, gather any crumbs, and flatten back into a rectangle. Repeat twice more, folding and pressing dough a total of three times.

  • Cut out 12 biscuits using a 2 1/2-inch round biscuit cutter.
  • Transfer biscuits to the prepared baking sheet. Press an indent into the top of each biscuit with your thumb.
  • Brush the tops of biscuits with 2 tablespoons buttermilk.
  • Bake in the preheated oven until browned, about 15 minutes.

Ever in search of biscuits that actually rise, I tried this recipe and they DID, indeed, rise! HINT: Do not twist the biscuit cutter, just punch through the dough. Twisting "seals" the edges and the biscuit doesn't rise as well. The secret to this recipe, according to the author, is the type of flour. The lower the protein content, the higher the biscuit will rise. "Southern" flours such as White Lily, are recommended. Since Southern flours aren't always available, she came up with this preparation.

So, we tweaked the baking powder amount along with the butter and buttermilk and arrived at these beauties -flaky, golden, tender and moist, just as biscuits should be.

2 cups all-purpose flour, plus more for dusting (see Cook's Note)
2 teaspoons baking powder
1/4 teaspoon baking soda
1 teaspoon sugar
1 teaspoon fine salt
10 tablespoons cold unsalted butter, cut into pieces
3/4 cup buttermilk, plus more for brushing

Steps:

  • Preheat the oven to 450 degrees F. Line a baking sheet with parchment paper.
  • Whisk together the flour, baking powder, baking soda, sugar and salt in a medium bowl. Rub 2 tablespoons of the cold butter into the flour with your fingertips until completely absorbed. Work the remaining 8 tablespoons of cold butter into the flour with your fingertips until pea-size bits of butter remain. Use a rubber spatula to stir the buttermilk into the flour until the mixture comes together into a shaggy dough. (Don't overmix the dough.)

4 cups self-rising flour (I use White Lily)
1 stick (1/2 cup) cold salted butter, or lard or vegetable shortening
1 3/4 to 2 cups cold buttermilk
1 tablespoon vegetable shortening or oil
2 tablespoons melted salted butter or margarine, for brushing biscuits

Steps:

  • Measure the flour into a large mixing bowl, then place the bowl with the flour and the butter in the freezer for at least 15 minutes before making the biscuits. Meanwhile, prepare a floured work surface. Melt 2 tablespoons salted butter or margarine then set aside. Preheat the oven to 450°F. Place a black cast-iron skillet in the oven to preheat. (Skillet needs to be about 12-inches) Working quickly, cut the cold butter into the flour with a pastry cutter until butter is pea-size. Working in sections of the flour mixture, add a little buttermilk at a time and mix that section just until a soft dough forms. Continue mixing in sections until all the flour mixture has been incorporated, then lightly stir the sections together. Turn the dough out onto a floured surface; sprinkle top with flour and lightly pat into a 1-inch-thick circle. Using a 2 1/2 to 3-inches biscuit cutter, cut out 8 to 10 biscuits (leave them where they were cut.) Carefully remove the hot skillet from the oven and add the oil or shortening. Place the biscuits in the hot skillet with sides touching. Bake for 15 to 20 minutes, or until golden brown. Brush tops with melted butter and serve hot. NOTES: Instead of all butter in the biscuits, I used half stick (1/4-cup) salted butter and 1/4 cup Crisco vegetable shortening. I used lard in the biscuits in the skillet.
