Popularized by Chipotle, this protein-packed alternative to meat comes together with a medley of spices and soy sauce. Simply break apart your favorite extra firm tofu, mix in soy sauce, chili powder, garlic powder, cumin, paprika, and cayenne, and cook until browned. Serve it in a bowl with rice or lettuce or use it as a taco filling.

1 tablespoon olive oil
½ cup onion, finely chopped
7 oz extra firm tofu, 1/2 block
1 tablespoon soy sauce
1 teaspoon chili powder
¾ teaspoon garlic powder
½ teaspoon cumin
¼ teaspoon paprika
1 pinch cayenne pepper
2 cups brown rice, cooked
2 cups shredded lettuce
½ cup black beans
½ cup corn, fire-roasted
⅓ cup pico de gallo
½ cup guacamole
¼ cup red onion, pickled
fresh cilantro, for garnish

Steps:

  • In a large saucepan, heat the olive oil over medium heat. Once the oil begins to shimmer, add the onion and cook until semi-translucent, 3-4 minutes.
  • Use your hands to crumble the tofu into the pan, then use a spatula to continue to break apart while cooking for 3-4 minutes, until slightly browned.
  • Add the soy sauce, chili powder, garlic powder, cumin, paprika, and cayenne. Continue to cook and break the tofu apart until browned and crumbly.
  • To assemble, spread brown rice on the bottom of a bowl, then layer on lettuce, black beans, corn, tofu sofritas, pico de gallo, guacamole, and onions.
  • Serve topped with cilantro.
  • Enjoy!

  • In a blender or food processor, combine the roasted pobanos, chipotle peppers, adobo sauce, all but a handful of the tomatoes, tomato paste, onion, garlic, cilantro, sugar, and salt. Blend until smooth.

  • Either use a tofu press if you have it or wrap the brick of tofu in paper towel or a clean kitchen towel and weigh it down with a small cutting board or cookie sheet on top with cans or jars on top. Allow the tofu to be pressed while you prep the remaining ingredients.
  • You can roast the pepper 2 ways. 1) Arrange your oven rack to be as close to the heat source as possible. Preheat your oven to broiling and place the pepper on a cookie sheet. Once hot roast the poblano pepper until the skin has blistered and become black, use tongs to rotate the pepper every 2 to 3 minutes. 2) If you have a gas stove, light the flame on a stove and place the pepper directly on the flame, the skin of the pepper will begin to blister and turn black – use tongs to rotate the pepper ever 2 minutes until the entire pepper has been roasted.
  • Immediately after the poblano pepper has been roasted place it in a bowl or dish and cover with a tight fitting lid or piece of plastic wrap. Allow it to sit for 10 minutes – the steam will help lift the charred skin away from the flesh of the pepper.
  • While waiting for the pepper. To a blender add the can of fire roasted tomatoes, pepper in adobo sauce, lime juice, garlic clove, cumin, and smoked paprika – blend on high until smooth.
