ORZO WITH MUSHROOM, SNOW PEAS, AND PINE NUTS



Orzo with Mushroom, Snow Peas, and Pine Nuts image

Number Of Ingredients 8

2 teaspoons olive oil
2 shallots minced
1 pound assorted fresh mushrooms (can include cepes, creminis, portobellos, etc), sliced thinly
1/2 pound of fresh snow peas, julienned
3/4 cup toasted pine nuts
1 pound orzo, cooked according to box directions
1 tablespoon of butter, optional
Salt and freshly ground black pepper

Steps:

  • Heat 2 teaspoons olive oil in a saute pan. Add shallots and saute. Add mushrooms and saute until brown. Add snow peas and cook for 1 minute. Add pine nuts. Add mixture to the orzo. Butter may be added, to taste. Season with salt and pepper, to taste.

As with other nuts, you may find a variety of pine nuts available in your local grocery store. Toasted, salted, dry-roasted, raw, and even seasoned varieties are available in markets today. Be sure to look for pine nuts that are raw or dry-roasted, which means they've been roasted without any added oils or fats. Though I normally prefer dry-roasted, here they'll toast in the pan, which will give the dish great flavor. To trim peas, just break off the stem end and strip the string away from the edge. It's a great project for the kids.

Yield makes 2 generous servings

Number Of Ingredients 7

1/4 teaspoon olive oil
1/2 pound snow peas or Chinese peas, trimmed and strings removed
1 tablespoon dry-roasted or raw pine nuts (sometimes called pignoli)
1 teaspoon freshly minced garlic
1/4 teaspoon toasted or roasted sesame oil
1 teaspoon chopped fresh mint leaves
Sea salt, to taste

Steps:

  • Place a large nonstick skillet over medium-high heat. Add the olive oil, peas, pine nuts, and garlic. Cook them, stirring occasionally, until the snow peas are crisp-tender, 2 to 3 minutes (do not overcook them or they will get mushy). Remove the pan from the heat. Stir in the sesame oil and mint. Season with salt. Serve immediately.

1 tablespoon butter
2 thinly sliced scallions
10 ounces thawed frozen peas
3/4 teaspoon coarse salt
1/4 teaspoon ground pepper
1/3 cup finely chopped fresh mint.
1 1/2 teaspoons grated lemon zest
2 tablespoons butter

Steps:

  • In a large skillet, melt 1 tablespoon butter over medium-low heat. Add 2 thinly sliced scallions (below); cook, stirring occasionally, until tender, about 2 minutes.
  • Add 3 packages (10 ounces each) thawed frozen peas, 3/4 teaspoon coarse salt, and 1/4 teaspoon ground pepper. Cook, stirring frequently, until peas are tender and heated through, about 5 minutes.
  • Add 1/3 cup finely chopped fresh mint, 1 1/2 teaspoons grated lemon zest, and 2 tablespoons butter; swirl pan until butter is creamy, 1 minute more.

1 pound sugar snaps or snow peas
Salt and freshly ground pepper to taste
4 plum tomatoes, about 3/4 pound, cored
2 tablespoons butter
1 tablespoon shredded fresh mint
2 teaspoons lemon juice

Steps:

  • Pluck off and discard the end of each pea pod.
  • Bring enough water to boil to cover the peas. Add salt to taste.
  • Add the peas. When the water returns to a boil, simmer the peas for about 3 to 4 minutes. Do not overcook. Drain.
  • Meanwhile, drop the tomatoes into boiling water and boil them for 10 seconds. Drain, let cool. Remove the skins and cut the tomatoes into 1/4-inch cubes.
  • Heat the butter in a saucepan; add the tomatoes; cook and stir for one minute. Add the peas, mint, and salt and pepper to taste. Stir to blend. Cook for one minute. Add the lemon juice and serve.
