My daughters have loved these nutritious snacks since they were in grade school. Now, both are adults and still make these bars when they want a quick treat. - Ursula Maurer, Wauwatosa, Wisconsin From Light & Tasty 2004

Number Of Ingredients 4

1/2 cup honey
1/2 cup reduced-fat crunchy peanut butter
1/2 cup nonfat dry milk powder
4 cups crisp rice cereal

Steps:

  • In a large saucepan, combine the honey, peanut butter and milk powder. cook and stir over low heat until blended. Remove from the heat;stir in cereal. Press into an 8-in. square baking dish coated with nonstick cooking spray. Let stand until set. Cut into bars. Yield: 1 dozen.

Taken from the March 2010 issue of Today's Parent. Feel free to add other goodies such as toasted almonds, pumpkin or sunflower seeds, dried figs, raisins, dried berried or chopped dried pineapple.

4 cups multigrain Cheerios toasted oat cereal
4 cups bran flakes
1 1/2 cups dried cranberries
1 cup dried apricot, chopped
1/2 cup coconut flakes
1/4 cup butter
45 jumbo marshmallows

Steps:

  • Coat a 9x13in pan with cooking spray or line with parchment paper.
  • In a large bowl, mix both types of cereal with cranberries, apricots and coconut.
  • Melt butter in a large wide saucepan or Dutch oven set over medium-low heat.
  • Add marshmallows and stir constantly, until melted and evenly combined, 6-10 minutes.
  • Turn off heat but leave pan on the burner.
  • Add cereal mixture and stir vigorously to combine.
  • Turn mixture into pan and using a spatula sprayed with cooking spray, smooth surface and press down to pack.
  • Cool until firm, at least 2 hours.
  • Remove from pan and cut into squares.

Sneaky Snickers Bars image

The name comes from my tendency to "sneak" just one more while nobody is watching;) These are an easy, chewy bar cookie that reminds me of my favorite candy bar...Snickers, of course!!! You must try this one, but be careful!!! They are addicting!! It is also fun to get the kids to help with this one (i.e. unwrapping caramels, sprinkling on the choc. chips. Prep time includes chilling time.

Number Of Ingredients 7

40 large caramels or 46 small caramels, unwrapped
2/3 cup evaporated milk
1 (18 1/2 ounce) package German chocolate cake mix
3/4 cup melted butter
6 ounces chocolate chips
1/2 cup flour
1 cup chopped nuts (optional)

Steps:

  • Combine caramels and 1/3 cup milk in medium saucepan and cook over low heat, stirring constantly, until melted and smooth.
  • In mixing bowl, combine 1/3 cup milk, cake mix, melted butter, flour, and nuts (if desired).
  • Press half of mixture into greased 13x9-inch pan.
  • Bake at 350° for 6 minutes.
  • Remove from oven and sprinkle with chocolate chips.
  • Spread melted caramel mixture over chocolate chips, then crumble remaining dough over top.
  • Bake 15 minutes.
  • Remove from oven and cool.
  • Refrigerate 30 minutes to set caramel before cutting into bars.
