Smoky Apricot Hot Sauce image

A combination of apricot preserves, jalapeno peppers, and spices bring together some heat in this savory hot sauce.

1 cup water
⅓ cup apple cider vinegar
3 fresh jalapeno peppers, sliced
3 cloves garlic, roughly chopped
1 teaspoon smoked paprika
1 teaspoon salt
1 cup apricot preserves

Steps:

  • Combine water, vinegar, jalapenos, garlic, paprika, and salt in a small saucepan over medium-high heat. Bring to a boil, reduce heat, and simmer for 10 minutes. Remove from heat.
  • Transfer mixture to a blender and add apricot preserves; puree until smooth.
  • Allow pepper mixture to cool; pour into a glass jar with a lid. Store in the refrigerator.

½ cup ketchup
1 tablespoon Worcestershire sauce
⅓ cup chopped onion
2 (16 ounce) packages little wieners

Steps:

  • Stir together barbecue sauce, brown sugar, ketchup, Worcestershire sauce, onion, and wieners in the bowl of a slow cooker. Cook on LOW for 2 hours, or until ready to serve.

2 1/2 cups white vinegar
2 cups sliced carrots
4 Fresno chiles, stemmed and halved
2 chipotles in adobo, plus 2 tablespoons adobo sauce

Steps:

  • Add the vinegar, carrots and Fresno chiles to a small saucepan. Simmer over medium heat until tender, 15 to 20 minutes.
  • Remove from the heat and transfer to a blender with the chipotles and sauce and puree. Strain and pour into a bottle.

2 ounces whole chipotle chiles
1 bulb of garlic, peeled
1 onion, peeled and rough chopped
1 1/2 lbs chopped tomatoes
1/2 cup brown sugar
1 teaspoon hickory smoke salt
1/2 cup raisins
3 ounces red jalapenos, stems removed
2 tablespoons ground paprika
1 pinch saffron (optional)
1/2 teaspoon cumin
1/2 cup cider vinegar

Steps:

  • place tomatoes, chilies, raisins, onion and garlic in a blender and puree.
  • Add to a pot with rest of ingredients.
  • Cook for 20 minutes.
  • Pour into sterilized jars leaving 1/2 inch head space. Process for 10 minutes.
  • Let flavors meld for a week or two.

Make this smoky chilli sauce to go with homemade doner kebabs, burgers or hotdogs. Packed with garlic and spicy heat, it promises to add punch to your dishes

12 red chillies
10 garlic cloves
1 tbsp olive oil , plus a drizzle extra
pinch of caster sugar

Steps:

  • Remove the stems from the chillies, then tip onto a sheet of foil with the garlic cloves, a drizzle of olive oil, caster sugar and some salt. Lift the sides of the foil up and scrunch to close.
  • Grill on the barbecue (or roast at 160C/140C fan/gas 3) for 30 mins until the garlic is soft. Tip into a large pestle and mortar or food processor with 1 tbsp olive oil, and crush or blitz to a chunky sauce. Will keep in the fridge for up to two days.

1/4 cup packed brown sugar
1/4 cup chopped onion
2 tablespoons Worcestershire sauce
2 to 3 teaspoons Liquid Smoke
1 teaspoon garlic powder
1 teaspoon hot pepper sauce
1/2 teaspoon pepper

Steps:

  • In a large saucepan, combine all ingredients. Bring to a boil over medium heat, stirring often. Reduce heat; simmer, uncovered, for 10-15 minutes or until heated through.
