CREAMY WHITE BEAN AND FENNEL CASSEROLE



Creamy White Bean and Fennel Casserole image

This one-pan recipe melds roasted fennel, creamy white beans and salty Parmesan, and tops it with crunchy lemon-zested panko. Fennel is often dismissed because of its perceived licorice notes, but the anise flavor is significantly muted after the vegetable is cooked. Tuck fresh, sliced sausages into the mixture before baking to imitate a simplified cassoulet, turn it into a side dish by pairing it with meat or let the dish live as a main, served with a simple green salad and some rustic bread to sop up the sauce. Reserve the fresh fennel fronds for garnish, which add concentrated fennel flavor and a pop of green.

6 tablespoons olive oil
2 large fennel bulbs (about 2 pounds)
Kosher salt and black pepper
2 garlic cloves, minced
2 (14-ounce) cans white beans, such as cannellini, great Northern or navy
1/2 cup heavy cream
1 teaspoon fresh lemon zest plus 2 tablespoons juice (from 1 lemon)
1/2 cup panko
1/2 packed cup finely grated Parmesan (about 1 ounce)

Steps:

  • Heat the oven to 425 degrees. Trim the fennel. Cut it in half lengthwise and slice it crosswise, about 1/4-inch thick (reserve about 1/4 cup roughly chopped fennel fronds). Heat 2 tablespoons oil in a large cast-iron skillet over medium. Add the sliced fennel, season with salt and pepper and cook, stirring occasionally, until softened but still retaining a little bite, about 12 minutes. Stir in the garlic and cook until fragrant, 1 to 2 minutes.
  • Meanwhile, pour 1 can white beans and its liquid into a blender. Add the heavy cream, lemon juice and 2 tablespoons olive oil and purée until smooth. Drain and rinse the remaining can of beans and transfer it to the skillet along with the bean purée. Season generously with salt and pepper.
  • Mix the panko with the remaining 2 tablespoons olive oil in a small bowl. Add the Parmesan, lemon zest and 1/2 teaspoon pepper and toss to coat. Sprinkle evenly over the fennel-white bean mixture.
  • Bake until bubbly and lightly golden on top, about 15 minutes. Broil until topping is browned in spots, 1 to 2 minutes, if desired. Top with reserved fennel fronds and serve.

I came up with this recipe to use some leftover smoked turkey without turning it into Tetrazini or using a cream sauce. I used whatever I had on hand at the time. All measurements of ingredients are approximations.

1 cup dry rotini pasta
2 quarts water
salt
2 cups leftover turkey (preferably smoked)
2 garlic cloves, smashed & finely chopped
1 cup onion, sliced and cut in half
4 green onions, coarsely chopped
1/2 cup celery, sliced
2 tablespoons olive oil
8 ounces mushrooms, sliced
1/4 cup dry white wine
1/2-1 cup frozen peas
1/2 teaspoon poultry seasoning or 1/2 teaspoon bell's seasoning
1/4 cup chopped parsley
1 pinch hot red pepper
salt & pepper
more olive oil, use a high quality extra virgin

Steps:

  • Cook pasta in boiling salted water until al dente. Drain, do not rinse set aside.
  • Saute garlic, onions, green onions and celery in olive oil until limp but not browned about 5 minutes.
  • Add mushrooms, cook until liquid has evaporated.
  • Add wine to deglaze the pan.
  • Add frozen peas, seasoning, parsley, red pepper, salt & pepper. Cook an additional 2 minutes.
  • Add turkey and pasta, cook until heated through. Adjust seasoning.
  • Drizzle high quality olive oil over dish to taste before serving. (Or leave it out if you do not want the extra fat/calories).

2 1/4 pounds smoked turkey legs or thighs
8 cups chicken broth
1 1/2 teaspoons Essence, recipe follows
1/4 teaspoon cayenne pepper
2 bay leaves
1/4 cup plus 3 tablespoons olive oil
2 cups chopped onion
1 cup chopped celery
1/2 cup chopped bell pepper
2 tablespoons minced garlic
1 tablespoon plus 1 teaspoon minced fresh thyme leaves
1 pound dried white beans, such as navy or cannellini, soaked overnight and drained
Salt and freshly ground black pepper
1 1/4 cus dried bread crumbs
1/2 cup finely grated Parmesan
2 tablespoons chopped fresh parsley leaves
1 tablespoon chopped fresh chives
1 tablespoon chopped fresh basil leaves
3 to 4 tablespoons olive

Steps:

  • Using a sharp knife, score the turkey pieces about 1/4-inch deep in several places. Place the turkey in a large soup pot or stockpot and add the chicken broth, Essence, cayenne pepper and bay leaves. Add 2 cups of water and bring to a boil. Reduce the heat to a simmer and cook the turkey, covered, until falling-from-the-bones tender, 2 1/2 to 3 hours. Set aside until cool enough to handle, then remove the meat from the bones and discard the skin and bones. Tear the meat into bite-size pieces and set aside. Reserve stock separately. In a large Dutch oven, heat the oil until hot. Add the onions, celery, and bell pepper and cook, stirring, until vegetables are softened, 4 to 6 minutes. Add the garlic and 2 teaspoons of the thyme and cook for 1 minute. Add the beans and 6 cups of the reserved stock (add water if necessary to bring the volume up to 6 cups) and return to a boil. Reduce the heat to a simmer and cook, partially covered, until the beans are tender but still firm enough to hold their shape, about 1 1/2 hours. The beans should be moist but not soupy. (If the beans are too soupy by the time they are tender, strain the beans and return the cooking liquid to the fire until reduced to a thick sauce consistency. Return the reduced cooking liquid to the beans.) Stir the reserved turkey meat into the beans and season with salt and pepper, to taste. Transfer to a large ovenproof casserole dish. Preheat the oven to 375 degrees F. In a small bowl combine the remaining thyme, bread crumbs, Parmesan, parsley, chives, and basil. Add the remaining 1/4 cup of olive oil and stir with a fork until well blended. Season with salt and pepper. Sprinkle the herb-bread crumb mixture evenly over the beans. Bake for 25 to 30 minutes, or until the topping is golden brown and the beans are bubbly around the edges
