"Guests thought I had these elegant appetizers catered when I served them at my last party," says Debora Ross of Hamilton, Ohio. Our Taste Testers loved the combination with its warm, creamy spread on cool, crunchy cucumber slices.

4-1/2 ounces smoked trout or salmon fillets, flaked
3 ounces cream cheese, softened
2 tablespoons finely chopped red onion
2 teaspoons minced fresh dill
2 teaspoons lemon juice
1-1/2 teaspoons prepared horseradish
1 teaspoon grated lemon zest
24 cucumber slices (1/4 inch thick)

Steps:

  • In a small bowl, combine the trout, cream cheese, onion, dill, lemon juice, horseradish and lemon peel. Spread over each cucumber slice. Refrigerate until serving.

WATERCRESS AND SMOKED SALMON SALAD WITH CREAMY CUCUMBERS



Watercress and Smoked Salmon Salad with Creamy Cucumbers image

Number Of Ingredients 14

1 English cucumber
1/2 cup white wine vinegar
Big pinch sugar
Salt and freshly ground black pepper
2 tablespoons olive oil
4 tablespoons snipped fresh dill, plus fronds for garnish
1/2 cup creme fraiche
1 tablespoon prepared horseradish
1 tablespoon coarse grain mustard
1/4 lemon, juiced
2 bunches watercress, stems trimmed
1 cup yellow and red grape tomatoes
8 ounces smoked salmon, torn into pieces
1 lemon, cut into wedges

Steps:

  • Peel alternating strips from the cucumber, leaving some peel to create stripes, and slice into thin rounds. In a large bowl, combine the vinegar, sugar and some salt and pepper. Whisk in the olive oil, then 2 tablespoons of the dill. Add the cucumbers and toss. Combine the creme fraiche, horseradish, mustard, lemon juice and the remaining 2 tablespoons dill in a small bowl. Season with salt and pepper. Using a slotted spoon, scoop the cucumbers from the vinaigrette and mound on a large platter. Dip the leaf ends of the watercress in the remaining vinaigrette and mound on the platter. Toss the tomatoes in the vinaigrette, remove with a slotted spoon and mound on the platter. Lay the salmon over the mounds. Spoon the creme fraiche dressing over the top. Garnish the platter with lemon wedges and serve immediately.

TROUT WITH CUCUMBER AND SOUR CREAM

1 large cucumber, peeled, very thinly sliced into rounds
3 teaspoons chopped fresh dill
2 1/2 teaspoons fresh lemon juice
1 cup sour cream
1 teaspoon grated lemon peel
2 tablespoons (1/4 stick) butter, melted
2 12-to 14-ounce trout, filleted

Steps:

  • Preheat oven to 375°F. Combine cucumber, 1 1/2 teaspoons dill and 1 1/2 teaspoons lemon juice in medium bowl. Season with salt and pepper. Toss to coat. Combine sour cream, lemon peel and remaining 1 teaspoon lemon juice in small bowl; season with salt and pepper and stir to blend.
  • Brush baking sheet with some of melted butter. Arrange trout fillets, skin side down, on prepared sheet. Brush with remaining butter. Sprinkle trout with salt and pepper. Bake until just opaque in center, about 10 minutes.
  • Divide cucumbers among 4 plates. Using spatula, place trout atop cucumbers. Spoon sour cream sauce over. Sprinkle with remaining 1 1/2 teaspoons dill.

SMOKED TROUT & CUCUMBER OPEN SANDWICHES

125g pack skinless hot-smoked trout fillets
½ a 250g tub quark
½-1 tsp horseradish sauce
squeeze lemon juice
2 thick slices granary bread
¼ cucumber , sliced
25g watercress
2 handfuls cherry tomatoes , to serve

Steps:

  • Flake the fish into a large bowl, then stir in the quark and horseradish sauce to taste. Season with black pepper and a squeeze of lemon juice.
  • Toast the bread, then top each piece with cucumber slices and watercress. Spoon half the trout pâté on top of each and serve with halved cherry tomatoes on the side.

6 cups trimmed watercress sprigs (about 2 large bunches)
1/2 cup very thinly sliced red onion
2 red apples, cored, thinly sliced
smoked trout or smoked whitefish chubs,* coarsely flaked
Fresh dill sprigs (optional)
*Smoked trout and smoked whitefish chubs are available at specialty foods stores and at some delicatessens and supermarkets

Steps:

  • Whisk cream, horseradish, 2 tablespoons oil, 2 tablespoons vinegar, chopped dill and cayenne in small bowl to blend. Season to taste with salt and pepper. Place watercress in large bowl. Add 1/3 cup cream dressing, 2 tablespoons oil and 2 teaspoons vinegar and toss to coat. Season to taste with salt and pepper. Mound watercress in center of each of 6 plates. Top with sliced onion. Fan apple slices atop salad. Top with trout. Spoon dressing over. Garnish with dill sprigs, if desired, and serve.

1 cup sour cream
1 1/2 cups chopped fresh watercress (including stems)
Salt to taste if desired
1 lemon, quartered

Steps:

  • Place the sour cream and watercress in a blender. Blend at low speed until the sour cream liquefies and begins to incorporate the watercress. Turn blender to high for several seconds. Add only enough salt to bring out the watercress flavor. (Smoked trout already is slightly salty.) Serve sauce over trout, accompanied by fresh lemon wedges.
