For centuries, salmon has been smoked in Ireland using time-honored techniques that capture and enhance the flavor and texture of this great fish. From "The New Irish Table" by Margaret M. Johnson.

2 Tbsp unsalted butter
1 onion, chopped
1 clove garlic, peeled, minced
4 oz mushrooms, cleaned, chopped
2 Tbsp fresh flat-leaf parsley, chopped
4 oz smoked salmon, chopped
ground white pepper, to taste
1/4 c all-purpose flour
2 c fish stock, or bottled clam juice
1/2 c half and half
creme fraiche for garnish, optional
4 dill sprigs, for garnish

Steps:

  • 1. In a medium saucepan, melt the butter over medium heat.
  • 2. Add the onion, garlic, mushrooms and parsley.
  • 3. Cook for 2 to 3 minutes, or until the vegetables are tender.
  • 4. Add the salmon and white pepper and saute for 2 minutes more, or until the salmon is heated through.
  • 5. Remove the pan from the heat and stir in the flour.
  • 6. Gradually stir in the fish stock or clam juice.
  • 7. Return the pan to medium heat and bring to a boil.
  • 8. Reduce the heat to a simmer and cook for 2 to 3 minutes, or until thickened.
  • 9. Stir in the half-and-half.
  • 10. To serve, ladle the chowder into bowls, dollop with creme fraiche and dill sprigs.

A creamy, chunky fish chowder for a winter's day - proper warm-you-up grub

Number Of Ingredients 12

600g natural (undyed) smoked haddock
500ml milk
1 tbsp olive oil
150g lardons (diced bacon), or chopped streaky bacon
2 sticks of celery , thinly sliced
3 medium leeks , washed and sliced
2 bay leaves
2 medium potatoes , peeled and diced into small cubes
500ml fish or chicken stock
125g frozen sweetcorn , thawed
142ml carton single cream
2 tbsp roughly chopped fresh parsley

Steps:

  • Lay the haddock in a deep frying pan and pour over the milk. Cover and bring to the boil. Remove from the heat and leave undisturbed for about 5 mins, until the haddock is just cooked. Lift the haddock from the milk, remove the skin and bones and fl ake onto a plate. Reserve the milk for later.
  • Heat the oil in a large saucepan (preferably non-stick) and gently fry the bacon until starting to brown. Add the celery, leeks, bay leaves and potatoes, and cook for a couple of mins. Pour in the stock and reserved milk. Bring to the simmer and cook for 10 mins.
  • Add the flaked haddock, sweetcorn and cream. Season with pepper (it shouldn't need salt) and stir in the parsley. Heat through gently, then serve.

3 cups bottled clam juice
1 12-ounce salmon fillet
1 tablespoon butter, room temperature
1 tablespoon all purpose flour
4 bacon slices, chopped
2 medium leeks (white and pale green parts only), thinly sliced
1 large white-skinned potato, peeled, cut into 1/2-inch pieces
2 1/2 cups milk
1/2 cup whipping cream
2 tablespoons chopped fresh chives

Steps:

  • Bring clam juice to simmer in medium skillet. Add salmon; cover and simmer until cooked through, about 10 minutes. Transfer salmon to plate; reserve clam juice. Flake salmon into small pieces.
  • Mix butter and flour in small bowl until well blended. Cook bacon in heavy large saucepan over medium-low heat until crisp, about 5 minutes. Using slotted spoon, transfer bacon to paper towels. Add leeks to drippings in saucepan; sauté 3 minutes. Add potato and reserved clam juice and bring to boil. Reduce heat; cover and simmer until potato is tender, about 10 minutes.   • In a large pot or dutch oven, brown the bacon over medium heat until almost crispy, then drain the bacon grease. Add the butter to the cooked bacon. When the butter is melted, add the onion, celery, carrot, and bell pepper and cook, stirring occasionally, until the vegetables begin to soften, about 5 minutes. Add the garlic and cook for 30 seconds.
  • Add the diced potatoes, dill, thyme, basil, paprika, crushed fennel seeds, tomato paste, and capers and stir to combine. Pour in the chicken broth and increase the heat to medium-high. When the chowder comes to a boil, cover and reduce heat to medium-low, then let simmer for 10-15 minutes or just until the potatoes are softened and tender but not falling apart.
  • Add the cubed cream cheese and stir until it melts into the soup. Add the salmon, cream, lemon juice, and hot sauce and allow the chowder to heat just until everything is gently heated through, but don't let the soup come to a boil after adding the cream. Once hot all the way through, taste and adjust the seasoning by adding the salt and pepper, as needed, and adding more hot sauce, if you like. You may not need any salt, depending on the saltiness of your capers and smoked salmon.
