SWEET POTATO-CASHEW BAKE
This dish has always been on our Thanksgiving, Christmas, and Easter menus. You can't go wrong with sweet potatoes that are cooked, sliced, and layered with brown sugar, cinnamon, ginger, nutmeg, and cashews. The whole mixture is then baked and topped with mini marshmallows that brown at the end. Canned yams can be used instead of the sweet potatoes.

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Lightly grease a baking 9x13 inch baking dish.
- Place the sweet potatoes in a large pot, and fill with enough water to cover. Bring to a boil, and cook until a fork easily pierces the potatoes, about 10 minutes. Drain, and cool.
- Mix the brown sugar, cinnamon, ginger, nutmeg, and salt together in a bowl. Stir in the cashews.
- Arrange half the sweet potatoes over the bottom of the prepared baking dish. Sprinkle with half the brown sugar mixture. Top with half the butter pieces. Repeat with a second layer of sweet potatoes, brown sugar mixture, and remaining butter pieces.
- Bake in preheated oven until potatoes are glazed with the brown sugar mixture, about 30 minutes. Sprinkle mini marshmallows over the top, and return to the oven to bake until browned, about 5 minutes more.

CASHEW BUTTER SAUCE
A version of this sauce appeared in my first book, Vegetariana, and I've used it ever since. It's one of the most luscious, versatile sauces in my repertoire-it tastes great on sweet potatoes (see Smashed Sweet Potatoes with Cashew Butter Sauce, page 209), mashed potatoes, grains, vegetables, and noodles.
Yield makes about 2 cups

Steps:
- Heat the oil in a saucepan. Add the bell pepper and scallions and cook over medium-low heat until the pepper softens, about 4 minutes.
- Add the tomato and cook for 3 to 4 minutes longer, stirring, until it softens.
- Sprinkle in the flour and stir until well blended with the vegetables. Pour in the stock and bring to a gentle simmer.
- Whisk in the cashew butter, then add the curry and optional ginger. Cook for another 2 to 3 minutes, until smooth and thick. Season with salt and pepper. Serve at once or cover until needed, then heat through before serving.

CRISPY SMASHED POTATOES WITH CHIMICHURRI DRESSING
Steps:
- Preheat the oven to 400 degrees F.
- Add the potatoes and 1/4 cup salt to a large stockpot fitted with a strainer filled with water. Bring to a boil, then reduce to a simmer. Cook the potatoes until fork-tender, about 20 minutes. Using the strainer, remove the potatoes from the water and set aside to drain.
- Add 1/4 cup oil to a baking sheet and coat generously. Gently dump or transfer the potatoes to the baking sheet using tongs. Smash the potatoes with a potato masher until the tops crack open. Drizzle with oil and season with salt and pepper.
- Bake until golden brown, about 30 minutes. Transfer the potatoes to a platter. Top with chimichurri as desired.
- Add the garlic, cilantro and parsley to a medium bowl and stir to combine. Add enough oil for the desired consistency. Season with salt. Set aside.
SMASHED SWEET POTATOES WITH CASHEW BUTTER SAUCE

- Use as many medium to large sweet potatoes as you need, allowing one whole or half sweet potato per serving. To bake, preheat the oven to 375°F. Wrap each potato in foil and place on the oven rack; bake for about 40 minutes, or until easily pierced with a knife. To microwave, allow 2 minutes per medium potato and 3 minutes per large. Test with a knife; if still too firm, cook an additional 1 minute per potato until done.
- Leaving the sweet potatoes in their jackets, cut each in half, smash lightly with a potato masher, and serve hot with freshly made Cashew Butter Sauce (page 216).
MASHED SWEET POTATOES WITH MAPLE AND BROWN BUTTER
This recipe is a grown-up take on sweet potatoes with brown sugar and marshmallows. A generous swirl of browned butter and maple syrup give the potatoes an earthy sweetness and great depth of flavor, while salted, toasted pecans sprinkled on top add a savory crunch. To save time on Thanksgiving, toast the pecans and make the brown butter up to a day in advance. Simply store the pecans in an airtight container, and the brown butter in the refrigerator. (Gently melt the butter in the microwave before using.)

- Bring a large pot of water to a boil. Add the sweet potatoes and cook, uncovered, stirring occasionally, for about 15 to 20 minutes, until very tender when pierced with a fork.
- Meanwhile, toast the pecans (optional): Place the pecans in a medium sauté pan. Cook over medium-low heat, tossing often, for 3 to 5 minutes, until lightly toasted. Transfer to a cutting board, and roughly chop. Sprinkle generously with salt, and set aside. Wipe out the pan with a paper towel.
- In the same pan, melt the butter over medium heat. Cook, watching carefully and stirring occasionally with a silicone spatula, until brown bits appear and the butter gives off a nutty aroma, about 3 minutes. Remove from the heat immediately. Carefully pour the melted butter into a small heatproof bowl, scraping the pan with a spatula to get all of the brown bits. Set aside.
- Drain the cooked potatoes, and add them to the bowl of a stand mixer fitted with the paddle attachment. Add the milk, 3 tablespoons maple syrup, 2 teaspoons salt and pepper and mix on medium-low speed until the potatoes are creamy and smooth. Add the reserved brown butter and mix until just incorporated.
- Transfer the potatoes to a shallow serving bowl, sprinkle with the reserved pecans, and drizzle with maple syrup. Serve warm. (The potatoes may be kept warm, covered, in a low oven for up to 30 minutes. Add the pecans just before serving.)
SWEET POTATO NOODLES WITH CASHEW-SESAME SAUCE
This riff on sesame noodles features sweet potato cellophane noodles. Pleasingly chewy and gluten-free, they're a great alternative to wheat noodles.

- Preheat oven to 375°. Toss sweet potatoes with 1 Tbsp. tamari and 1 Tbsp. olive oil in a 13x9" baking dish to coat. Arrange potatoes in an even layer and cover with foil; bake 15 minutes. Uncover, stir, and roast until tender, 15-25 minutes more.
- Meanwhile, whisk ginger, cashew butter, vinegar, sesame oil, remaining 1 Tbsp. plus 1½ tsp. tamari, and remaining 1 Tbsp. olive oil in a small bowl to combine. Set sauce aside.
- Cook noodles in a medium pot of boiling water 6 minutes. Drain, reserving 3 Tbsp. noodle cooking liquid. Rinse noodles under cold running water. If noodles are very long, snip into about 6" pieces with kitchen shears. Transfer to a large bowl.
- Whisk reserved noodle cooking liquid into reserve sauce, then add half of sauce to noodles; toss to coat.
- Divide noodles among plates; scatter sweet potatoes over and drizzle with more sauce if desired. Top with basil and serve with lime wedges and more tamari alongside.

- Cut the potatoes in thirds - or if you have very large sweet potatoes, even 4 or 5 pieces. I like to leave the skin on, but feel free to peel them!
- Place the potatoes in a large pot and fill it with cold water. Bring the water to a boil. Boil the potatoes until they are just barely fork tender, about 10 to 15 minutes. Strain the potatoes and let them cool slightly.
- Brush a baking sheet with 1 1/2 tablespoons of olive oil. Place the potatoes on the sheet. Use your hand or the bottom of a glass to smash them once, trying to keep them in one piece.
