Transform a tough steaks into melt in your mouth delisiousness! Makes a great sauce!

Number Of Ingredients 11

2.5 lbs. round steaks (or bottom or top round roast cut into thick steaks (2-4 pounds will work fine in this recipe))
1/2 cup flour
1 tsp. salt
1/4 tsp. black pepper
4 Tbsp. cooking oil
10.5 oz. Campbell's beef consomme (or beef broth)
29 oz. petite diced tomatoes ((two 14.5 oz. cans) do not drain)
2 Tbsp. Worcestershire sauce
1 cup diced onion
1 green bell pepper
2 garlic cloves (minced)

Steps:

  • On a large plate add the flour and salt and pepper. Mix this together.
  • Dredge each steak in this mixture on both sides, transfer to another plate. Save any excess flour mixture, you will add this to the slow cooker with the meat later.
  • Set a large skillet to medium high heat. Add enough oil to coat the pan. Brown the steaks on both sides, no need to cook through. You may have to cook the meat in two batches if your pan is too small, add more oil inbewteen batches. Add the browned steaks to the slow cooker. Sprinkle over any excess flour from the plate.
  • Deglaze the pan that you browned the meat in with by adding the beef consomme and scrapping up any brown bits. Add to the slow cooker on top of the beef.
  • Add the remaining ingredients, stir.
  • Place the lid on the slow cooker. Cook on LOW for 7 hours or HIGH for 4 hours with out opening the lid during the cooking time.

1 (10 3/4-oz.) can condensed cream of mushroom soup
1 (2-lb.) boneless beef top round steak (1 1/2 inches thick)
1 tablespoon brown sugar
2 tablespoons ketchup
2 tablespoons chopped chipotle chiles in adobo sauce (from 7 or 11-oz. can)
1 garlic clove, minced
2 Italian plum tomatoes, chopped
1/2 medium green bell pepper, cut into thin bite-sized strips

Steps:

  • Spoon soup into 4 to 5-quart slow cooker. Top with beef round steak, cutting into pieces if necessary to place in single layer. In small bowl, combine brown sugar, ketchup, chiles and garlic; mix well. Spread over beef. Top with tomatoes.
  • Cover; cook on Low setting for 8 to 9 hours.
  • About 10 minutes before serving, add bell pepper. Cover; cook an additional 10 minutes.
  • To serve, remove beef from slow cooker; place on cutting board. Cut into serving-sized pieces. Serve beef with sauce from slow cooker.

I threw this together in my crock pot one day and we loved it! A little time consuming because I sauteed the vegetables and browned the meat first, but it's well worth it. Browning the meat first gives it a better flavor. This is great with mashed potatoes!

¼ cup all-purpose flour
salt and pepper to taste
1 ½ pounds round steak, cut into small pieces
3 tablespoons vegetable oil
3 stalks celery, chopped
1 onion, chopped
3 carrots, shredded
2 (14.5 ounce) cans diced tomatoes with juice
1 tablespoon Worcestershire sauce
2 tablespoons brown sugar, or to taste

Steps:

  • In a shallow bowl, mix the flour, salt, and pepper. Lightly coat the round steak pieces in the flour mixture.
  • Heat the oil in a skillet over medium heat, and saute the celery, onion, and carrots about 5 minutes, until tender. Remove from heat, and set aside. Mix in the round steak pieces, and cook until lightly browned.
  • Place the vegetables and steak in a slow cooker. Mix in the tomatoes with juice, Worcestershire sauce, and brown sugar.
  • Cover, and cook 8 to 10 hours on Low, until the round steak is very tender.

I got this from a magazine recently, I think it was Paula Deen's magazine. I've never used tomato of any kind in my Swiss Steak, but after I made this DH and I both decided we always want it this way! I serve this with mashed potatoes, but it will go well with noodles or rice, too.

1 (8 ounce) package sliced fresh mushrooms
1 cup sliced onion
1 cup siced celery
1 tablespoon minced garlic
1 (14 1/2 ounce) can fire-roasted tomatoes
8 ounces tomato sauce
1/2 cup water
1 (7/8 ounce) package brown gravy mix
1/2 teaspoon salt
1/2 teaspoon pepper

Steps:

  • In 4 to 6 quart slow cooker, combine steak, mushrooms, onion, celery, and garlic.
  • In medium bowl, combine tomatoes, tomato sauce, 1/2 cup water, gravy mix, salt, and pepper.

8 flour tortillas (or corn tortillas)
2 tomatoes (diced) - optional
2 avocados (diced) - optional
1/2 chopped onion - optional
1 cup shredded lettuce - optional
6 Tablespoons mayonnaise
2 teaspoons chipotle chiles in adobo (chopped)
2 Tablespoons fresh cilantro (chopped)
1 teaspoon minced garlic
1/2 teaspoon cumin
4 teaspoons fresh lime juice
salt and pepper, to taste

Steps:

  • Spray slow cooker with non-stick cooking spray.
  • Place sliced steak in the bottom.
  • Pour salsa, diced tomatoes, cumin, and chili powder on top.
  • Stir, until all seasonings are thoroughly mixed in. Cook on low for 6-8 hours or high for 3-4 hours.
  • While the meat is cooking, put all ingredients for the aioli in a blender and blend until smooth.
