Easy slow cooker recipe for a classic Moroccan dish.

8 skinless, boneless chicken thighs
2 large onions, thinly sliced
4 large carrots, thinly sliced
½ cup raisins
½ cup dried apricots, chopped
2 cups chicken broth
2 tablespoons tomato paste
2 tablespoons lemon juice
2 tablespoons all-purpose flour
2 teaspoons garlic salt
2 teaspoons ground cumin
1 ½ teaspoons ground ginger
1 teaspoon ground cinnamon
1 teaspoon Hungarian paprika
1 teaspoon ground black pepper
3 cups water
2 cups couscous
1 tablespoon butter

Steps:

  • Layer chicken thighs, onions, carrots, raisins, and apricots in a slow cooker.
  • Whisk chicken broth, tomato paste, lemon juice, flour, garlic salt, cumin, ginger, cinnamon, paprika, and pepper together in a bowl. Pour over chicken and vegetables.
  • Cook on High 4 1/2 hours or on Low for 7 1/2 hours. Shred chicken slightly using 2 forks. Continue cooking 30 minutes.
  • Bring 3 cups water to a boil in a saucepan; remove from heat and stir in couscous and butter. Cover saucepan and let stand until water is absorbed completely, 5 to 10 minutes. Fluff couscous with a fork. Serve chicken tagine over couscous.

1/3 cup(s) raisins
2 teaspoon(s) ground coriander
2 teaspoon(s) ground cumin
1/2 teaspoon(s) ground cinnamon
1/2 teaspoon(s) salt
1/4 teaspoon(s) pepper
3 pound(s) bone-in skinless chicken thighs
1 box(es) (10-ounce) plain couscous
1/2 cup(s) pitted green olives

Steps:

  • Directions 1. In 6-quart slow cooker, combine squash, tomatoes, onion, garlic, beans, broth, and raisins. In cup, combine coriander, cumin, cinnamon, salt, and ground black pepper. Rub spice mixture all over chicken thighs; place chicken on top of vegetable mixture. Cover slow cooker with lid and cook as manufacturer directs, on low 8 hours or on high 4 hours. 2. About 10 minutes before serving, prepare couscous as label directs. 3. To serve, fluff couscous with fork. Stir olives into chicken mixture. Serve chicken mixture over couscous.

3 lbs bone in skinless chicken thighs

1/2 cup pitted green olives

Steps:

  • In slow cooker combine squash, tomatoes, onion, garlic, beans, broth, and raisins. In cup, combine coriander, cumin, cinnamon, salt, pepper. Rub spice mixture all over chicken thighs and place chicken on top of vegetables. Cover slow cooker and cook on low for 8 hours or high for 4 hours.
  • About 10 minutes before serving, prepare couscous as directed on package.
  • To serve fluff couscous with fork. Stir olives into chicken mixture. Serve chicken mixture over couscous.
