I could not find a baked beans recipe that everyone liked. So I started putting a few different ones together and I came up with this.

3 cups dried navy beans
water, to cover
1 ½ cups ketchup
½ pound fully cooked ham
1 ½ cups water
½ cup brown sugar
¼ cup molasses
1 ½ tablespoons onion powder
1 tablespoon dry mustard
1 tablespoon salt
1 tablespoon Worcestershire sauce
¼ teaspoon ground black pepper

Steps:

  • Place beans in a large pot and cover with plenty of water. Cover pot with a lid and soak beans for 8 hours or overnight. Drain and fill pot with fresh water.
  • Cook beans over medium heat until tender, about 1 hour. Drain beans, reserving the water for later use.
  • Place beans, ketchup, ham, 1 1/2 cup water, brown sugar, molasses, onion powder, mustard, salt, Worcestershire sauce, black pepper, and 1 cup reserved bean water in a slow cooker. Add more bean water as needed if beans get too dry.
  • Cook on Low for 7 to 9 hours.

3 cups dry navy beans, soaked overnight or boiled for one hour
1 ½ cups ketchup
1 ½ cups water
¼ cup molasses
1 large onion, chopped
1 tablespoon dry mustard
1 tablespoon salt
6 slices thick cut bacon, cut into 1 inch pieces
1 cup brown sugar

Steps:

  • Drain soaking liquid from beans, and place them in a Slow Cooker.
  • Stir ketchup, water, molasses, onion, mustard, salt, bacon, and brown sugar into the beans until well mixed.
  • Cover, and cook on LOW for 8 to 10 hours, stirring occasionally if possible, though not necessary.

4 cans (15 ounces each) black beans, rinsed and drained
2 cans (15 ounces each) butter beans, rinsed and drained
2-1/4 cups barbecue sauce
2-1/4 cups salsa
3/4 cup packed brown sugar
1/2 to 1 teaspoon hot pepper sauce

Steps:

  • In a 6-qt. slow cooker, gently combine all ingredients. Cook, covered, on low until heated through, about 2 hours.

1 pound dry great Northern beans
8 cups water
4 ounces diced salt pork
1 cup chopped onion
½ cup molasses
⅓ cup packed brown sugar
1 teaspoon dry mustard
⅛ teaspoon ground black pepper

Steps:

  • The night before, combine the Great Northern Beans and water in a large saucepan. Bring to a boil, and cook for 1 1/2 hours. Pour beans and their liquid into a bowl, cover and refrigerate overnight.
  • In the morning, drain off liquid, reserving 1 cup. Pour beans and the reserved liquid into the crock of a slow cooker. Stir in the salt pork, onion, molasses, brown sugar, mustard and pepper. Cover, and cook on Low for 12 to 14 hours. Stir before serving.

1 pound dried navy beans
1/4 cup vegetable oil
4 strips bacon, finely chopped
1 medium onion, finely chopped
2 garlic cloves, minced
1/3 cup cider vinegar
1/2 cup Maull's Genuine Barbecue sauce (maull.com) or other tomato-based barbecue sauce or ketchup
1/2 cup packed light-brown sugar
2 tablespoons Dijon mustard
1 teaspoon coarse salt
1/4 teaspoon hot sauce, such as Tabasco, if desired
2 1/2 cups water
Salt and pepper

Steps:

  • Rinse and drain navy beans. Cover with water in a large pot, and bring to a boil. Cover, remove from heat, and let stand for 1 1/2 hours.
  • Heat a large Dutch oven over medium-high heat, and add vegetable oil. Add bacon, onion, and garlic. Cook, stirring occasionally, until onions are soft and fat is rendered from bacon, 8 to 10 minutes. (Reduce heat to medium if onion and garlic start to brown.)
  • Raise heat to high, stir in cider vinegar, and let simmer until reduced slightly, about 1 minute. Stir in barbecue sauce, light-brown sugar, dijon mustard, coarse salt, and hot sauce, if desired.
  • Drain beans, and add to onion mixture. Stir in water, and bring to a boil. Cover, and reduce heat to a low simmer. Cook, stirring occasionally, until beans are tender, about 2 1/2 hours. Season with salt and pepper if desired. Beans can be refrigerated for up to 2 days. Reheat, and serve warm.

1 tbsp olive oil
1 onion , thinly sliced
2 garlic cloves , chopped
1 tbsp white or red wine vinegar
1 heaped tbsp soft brown sugar
400g can pinto beans , drained and rinsed
200ml passata
small bunch coriander , chopped

Steps:

  • Heat the slow cooker if necessary. Heat the oil in a large frying pan and fry the onion until it starts to brown, then add the garlic and cook for 1 min. Add the vinegar and sugar and bubble for a minute. Stir in the beans and passata and season with black pepper. Tip everything into the slow cooker.
  • Cook on Low for 5 hours. If the sauce seems a little thin turn the heat to High and cook for a few more minutes. Stir through the coriander.

The key to tender, not-mushy beans is to cook them at the barest simmer, which means they're perfect candidates for the slow cooker. And the same principles for cooking beans on the stovetop apply: Skip soaking the beans; use flavorings to infuse the beans and the bean-cooking liquid; and salt before and after cooking. You can follow this formula for almost any dried bean, but know that the cook time will vary based on the age and type of bean, as well as the size and strength of your slow cooker. Start checking at the six-hour mark to see how quickly your beans are cooking. Keep flavorings in fairly large pieces, as the long cook time could turn smaller bits to mush.

1 pound dried beans (except red kidney beans; see Tip)
1/4 cup extra-virgin olive oil
Kosher salt (Diamond Crystal)
Optional flavorings (see Tip)

Steps:

  • In a 5-quart or larger slow cooker, add the beans, olive oil, 1 teaspoon salt and your selection of flavorings. Add water to cover 2 inches above the beans, then cook on low until tender, 8 to 10 hours. To test for doneness, taste more than one bean to ensure they're all cooked through; they should flatten without much effort when pressed between your fingers. (If you plan to eat your beans cold, cook them a bit past tender, as they'll firm as they cool.) Season to taste with salt.
  • Let cool slightly, then eat right away or store beans in their liquid in an airtight container for up to a week in the fridge or up to 3 months in the freezer.

¾ green bell pepper, diced
2 celery ribs, chopped

1 tablespoon dried oregano, or to taste
2 bay leaves
1 tablespoon lard
5 cups chicken broth, or as needed to cover

Steps:

  • Cover pinto beans with water in a large bowl; allow beans to soak overnight.
  • Place onion, green bell pepper, celery, garlic, Black Forest ham, soaked pinto beans, cumin, oregano, bay leaves, and lard in a slow cooker.
  • Pour enough chicken broth into the slow cooker to cover the other ingredients.
  • Cook on High until beans are very tender, 5 to 6 hours.

4 quarts water
2 large onions, chopped
1/2 pound bacon or salt pork, cut into 1/2-inch pieces
1-1/2 cups ketchup
1/2 cup molasses
1/2 cup packed brown sugar
2 tablespoons prepared mustard
1 tablespoon salt

Steps:

  • Sort beans and rinse with cold water. Place beans in a Dutch oven or soup kettle; add water to cover by 2 in. Bring to a boil; boil for 2 minutes. Remove from the heat; cover and let stand for 1 to 4 hours or until beans are softened., Drain and rinse beans, discarding liquid. Return to Dutch oven; add 4 qts. water. Bring to a boil. Reduce heat; cover and simmer for 1 hour or until the beans are almost tender. Drain and reserve liquid. Combine beans with the remaining ingredients., Transfer to two ungreased 2-1/2-qt. baking dishes or bean pots. Add 1-1/2 cups reserved cooking liquid to each casserole; stir to combine., Cover and bake at 325° for 3 to 3-1/2 hours or until beans are as thick as desired, stirring occasionally. Add more of the reserved cooking liquid if needed.

1/4 cup sliced onions
8 cups water
1 garlic clove, minced
