BRAISED "ADOBO STYLE" OXTAIL

10 pounds oxtail
4 ounces salt
4 ounces lard
2 sliced onions
1 cup minced garlic
12 bay leaves
Sprinkle cracked pepper
1 gallon soy sauce
1 quart vinegar
2 ounces achiote powder
Garlic Rice, recipe follows
Kimchee Cucumbers, recipe follows
Chili Peppah Watah, recipe follows
Sliced scallion greens, fried garlic and chicharrons, for garnish
2 ounces soybean oil
4 cups cooked rice
3 ounces minced garlic
Garlic salt and ground black pepper, for sprinkling
8 ounces kimchee base
3 ounces rice vinegar
1 ounce sesame seed oil
Pinch Hawaiian rock salt
2 cucumbers, cut into bite-size pieces
1 gallon vinegar
12 ounces sweet chile sauce
12 ounces sriracha
Pinch Hawaiian rock salt
3 Hawaiian chile peppers

Steps:

  • Grill oxtail over medium-high heat until charred on all sides, for smoky essence.
  • Bring 3 gallons water to a boil in a large pot with the salt, then add the oxtail. Boil in brine for 1 hour 30 minutes.
  • In a large roasting pan, render lard with onions, garlic, bay leaves and cracked pepper. Add oxtail to pan, then add soy sauce, vinegar and achiote powder. Give it a nice stir together. Bring to a vigorous boil then braise/simmer, slow and low until tender, an additional 45 minutes.
  • Serve with Garlic Rice, Kimchee Cucumbers, Chili Peppah Watah, scallions, fried garlic and chicharrons.
  • In a fry pan on medium heat, add oil, rice and garlic. Cook until rice is a little crispy and golden brown in color, 3 to 4 minutes. Sprinkle garlic salt and black pepper.
  • Mix together base, vinegar, sesame oil and rock salt in a bowl, then add cucumbers.
  • Combine vinegar, chile sauce, sriracha, rock salt and chile peppers, then whisk together. Chill for 1 hour.

1 tablespoon olive oil
3 1/2 pounds oxtails
1 medium onion (chopped)
4 garlic cloves (finely chopped)
4 carrots (peeled and cut diagonally into 1/2-inch pieces)
1 (14- to 16-ounce) can tomatoes (diced)
3/4 cup chicken broth
1 1/2 teaspoons ground ginger
3/4 teaspoon salt
1/4 teaspoon ground red pepper (cayenne)
1/8 teaspoon ground allspice

Steps:

  • Gather the ingredients.
  • Heat the oven to 275 F. In a nonreactive 5-quart Dutch oven , heat the olive oil over medium heat until very hot, but not smoking. Brown the oxtails in batches, for 5 minutes per batch. Using a slotted spoon, transfer oxtails to a bowl once they've browned.
  • Add the onions and garlic to the pan and cook until tender, or about 7 minutes.
  • Stir in the carrots and the tomatoes with their juice.
  • Add the broth, ginger, salt, ground red pepper, and allspice. Bring to a boil.
  • Stir in the browned oxtails.
  • Cover the pot and place it in the preheated oven. Bake until the meat is tender, about 2 hours.
  • With a slotted spoon, transfer oxtails to a warm platter. Skim and discard fat from pot liquid. Pour juice over meat and serve. Enjoy!

3 pounds grassfed oxtail, cut into 2" sections
2 cups balsamic vinegar
4 organic garlic cloves, chopped
3 fresh organic thyme sprigs
Himalayan sea salt
2-3 TB fat of choice {lard, bacon, tallow}
2 organic carrots, peeled and chopped
2 organic celery ribs, chopped
3 organic shallots, chopped
2 organic garlic cloves, chopped
4 fresh organic thyme sprigs

Steps:

  • In a large casserole dish, marinate the oxtail with balsamic vinegar, garlic, and thyme. Let it marinate overnight or up to 24 hours. Remove the oxtail from the marinade and pat dry. Season with salt. Set aside, reserving the marinade. Preheat a large cast iron skillet over medium-high heat with your fat of choice. Brown the oxtail on all sides and set aside on a plate. Discard some of the oil if there is too much for sautéing. Add the carrots, celery, shallots, garlic cloves, and thyme. Sauté a few minutes just for color. Remove and set aside. Wipe out any excess oil again and return the oxtail once more. Pour the reserved marinade and stir to deglaze. Bring to a boil, then reduce so it is a low simmer. Continue cooking, topping with water as needed {it should be nearly covered as it cooks} for 2-2 1/2 hours. Add the vegetables and simmer another 20 minutes. Strain liquid into a saucepan and reduce over high heat until thickened slightly. Be sure to keep the oxtail covered so it doesn't lose its heat. Serve 2-3 pieces of oxtail with vegetables with accompanied sauce. I served it with sweet potato wedges also.

3 whole oxtail
1/2 pound caul fat (optional)
1/2 pound mirepoix (carrots, onions, celery, leeks) small dice
1 cup red wine
6 cups oxtail stock or veal stock
Salt
Black peppercorns

Steps:

  • Remove all excess fat from the oxtail then debone leaving all the meat intact (bones can be used for stock.) Roll the oxtail back up with caul fat (optional) and tie with butchers twine about 1 inch apart. In a very hot roasting pan sear off the oxtail on all sides then remove. In the same pan roast off the mirepoix then add the red wine, reduce, and add the stock, bring to a simmer. Add the oxtail back in and cover with foil and place into a preheated 325-degree oven and braise for approximately 2 hours. When oxtail is tender remove pan from the oven and remove the oxtail and cool. Strain the braising liquid and reduce to a sauce consistency, check seasoning. Slice the oxtail into 2-inch logs, reheat in the sauce. Remove the butcher's twine, slice and serve.

1 tablespoon vegetable oil
3 pounds beef oxtail
3 medium carrots, diced
2 stalks celery, diced
1 large onion, diced
4 cloves garlic, chopped
2 teaspoons chili powder
1 teaspoon ground black pepper
4 cups beef stock
1 cup dry red wine
3 tablespoons all-purpose flour
3 leaf (blank)s bay leaves
1 cup sliced fresh mushrooms

Steps:

  • Preheat the oven to 325 degrees F (165 degrees C).
  • Heat oil in a cast iron casserole dish over medium-high heat. Add oxtail and brown on all sides, about 10 minutes. Transfer oxtail to a plate.
  • Add carrots, celery, onion, garlic, chili powder, and pepper to the casserole. Cook, stirring frequently, until vegetables are tender, about 5 minutes. Add oxtail back to the casserole, then add beef stock and red wine. Bring to a boil.
  • Stir in flour and simmer until sauce has thickened, about 3 minutes. Add bay leaves and submerge in the sauce. Add mushrooms.
  • Bake, covered, in the preheated oven until meat is tender and falling off the bone, about 2 hours. Serve in the casserole dish.
