Wasabi mayonnaise can be found in the Asian section of your local supermarket. Wasabi, an Asian plant similar to horseradish, has a fiery flavor. Add some plain mayonnaise to make a milder sauce.

1/4 cup reduced-sodium teriyaki sauce
1 tablespoon rice vinegar
2 teaspoons sesame oil
4 tuna steaks (8 ounces each)
1/2 cup wasabi mayonnaise
2 tablespoons chopped green onion
2 teaspoons lemon juice

Steps:

  • In a large resealable plastic bag, combine the teriyaki sauce, vinegar and oil; add tuna. Seal bag and turn to coat; refrigerate for up to 1 hour. Meanwhile, in a small bowl, combine the mayonnaise, onion and lemon juice until blended. Refrigerate until serving. , Drain and discard marinade. Using long-handled tongs, moisten a paper towel with cooking oil and lightly coat the grill rack. Grill tuna, covered, over medium heat or broil 4 in. from the heat for 5-6 minutes on each side or until medium-rare or until slightly pink in the center. Serve with wasabi sauce.

3 pounds sushi grade tuna
2 tablespoons soy sauce
1 tablespoon wasabi
4 tablespoons ground ginger
1 tablespoon minced garlic
1 tablespoon sesame oil
2 tablespoons sugar
1/2 gallon orange juice
4 ounces rice wine vinegar
1 1/2 quarts olive oil
Field greens
Sesame seeds
Marinated tuna

Steps:

  • Mix the wasabi and soy sauce together in a bowl, then marinate the tuna in the mixture for 30 minutes, refrigerated.
  • Place all ingredients except olive oil in a saucepan and reduce by 1/2. Blend in the olive oil with a whisk to emulsify.
  • Toss the tuna in sesame seeds. Pan sear the tuna to the desired doneness. Toss field greens in the orange ginger dressing. Arrange the greens on a plate. Slice the tuna and place on the greens.

6 tablespoons vegetable oil
8 tablespoons extra-virgin olive oil
1 tablespoon wasabi powder
1 1/2 tablespoons lemon juice
1 tablespoon rice vinegar
1 tablespoon Dijon mustard
1 tablespoon yuzu kosho, red
2 tablespoons soy sauce
Salt
12 ounces yellowfin tuna, cleaned and diced into 1/4-inch cubes
4 tablespoons finely diced shallots
6 tablespoons finely sliced chives
Seaweed Salad, recipe follows
18 gaufrette potatoes, recipe follows
3 ounces paddlefish roe (optional)
2 ounces dried wakame seaweed
1/3 cup rice vinegar
1 tablespoon salt
1 tablespoon sugar
1/2 teaspoon toasted sesame oil
1/2 cup soy oil
2 small red chile peppers, seeds removed and cut into thin strips
4 tablespoons sesame seeds, toasted
2 large baking potatoes, like russets
2 tablespoons clarified butter

Steps:

  • Combine the mustard, vegetable, and extra-virgin olive oils in a cup with a pour spout.
  • In a mixing bowl, combine the wasabi, lemon juice, rice vinegar, Dijon mustard, yuzu kosho, and soy sauce, and whisk well. Slowly add the oils, whisking constantly to emulsify. Taste for seasoning, add salt, and set aside.
  • Place tuna in a glass or stainless steel bowl. Add the shallots and chives, and toss gently to combine. Drizzle about half of the vinaigrette over the tuna, and mix well. Let the tartar sit for 2 minutes; taste for seasoning, and add more of the vinaigrette or salt, to taste. Leftover vinaigrette will keep, refrigerated, for 1 week.
  • To serve: shape 1/6 of the tuna tartar into a disc and place it in the center of a serving plate. Arrange 3 dollops of seaweed salad around the disc and garnish with 3 potato slices. Top tuna with a small spoonful of caviar, if desired.
  • Place the wakame in a mixing bowl, and soak it in tepid water for 20 to30 minutes. Remove from water, squeeze dry, and trim away the tough spine. Cut into thin strips, and place in a large mixing bowl.
  • In a separate bowl, combine the vinegar, salt, sugar, and both oils. Pour the dressing over the wakame, add the chile peppers, and toss. Sprinkle with the sesame seeds.
  • Preheat an oven to 350 degrees. Peel the potatoes, and using a mandolin for best results (you can thinly slice with a knife, but you will not get the criss-cross pattern which makes these potatoes unique), slice them thin in a criss-cross pattern with the zig-zag part of a mandolin. Lay the slices onto a non-stick sheet pan, not overlapping, and brush them with clarified butter. Bake until crisp, about 12 minutes.

2 pounds thickly sliced sashimi-grade tuna
2 tablespoons olive oil
2 teaspoons fresh thyme, chopped
4 tablespoons cracked pink and green peppercorns
Salt and pepper
4 ounces mayonnaise
1 to 2 tablespoons wasabi powder
1 medium piece fresh peeled ginger
1/2 cup sugar
1/2 cup water
1/2 lemon, juiced
3 to 4 Belgian endives

Steps:

  • Have tuna sliced as thick as possible cutting against the grain into 1 1/2-inch rectangular pieces. Rub the fish with olive oil and roll in thyme, peppercorns, salt, and pepper. On a very hot grill sear the fish on each side for 30 seconds to 1 minute depending upon the desired doneness. Set aside and slice into 1-inch thick pieces.
  • For wasabi mayonnaise, start with 1 tablespoon of wasabi powder mixed with mayonnaise and add more, if desired, to taste.
  • Slice ginger into very thin sticks about 1-inch long. Place ginger, sugar, water and lemon juice into heavy saucepan and reduce to thick syrup. Be careful not to boil past medium ball state.
  • On individual washed white endive leaves place fish. Garnish with wasabi mayonnaise that has been put in a squeeze bottle and finish with a few pieces of ginger confit.

2 cups sushi rice
2 tablespoons sugar
2 tablespoons rice vinegar
Salt and freshly cracked black pepper

2 teaspoons mayo
2 teaspoons sambal
1 teaspoon sesame oil
1 cup finely diced sushi-grade raw tuna
2 teaspoons finely sliced scallions
Pinch chili powder
Dash hot sesame oil, or to taste
Salt and freshly cracked pepper
2 tablespoons yuzu juice, or 1 tablespoon grapefruit juice and 1 tablespoon lime juice
1/2 tablespoon Dijon mustard
2 teaspoons wasabi
Zest of half a lemon
Zest of half a lime
1/4 cup canola oil
1/2 teaspoon finely minced jalapeno
Kosher salt and fleshly cracked black pepper
Kosher salt and fleshly cracked black pepper
4 cups canola oil, for frying
1/2 cup unagi sauce (eel sauce, available from Asian grocery stores), optional

Steps:

  • For the sushi rice: In a large mixing bowl, rinse the rice by covering with cold water and straining. Repeat until the water runs clear, three times. Using a rice cooker on the highest setting or a medium saucepan over high heat, bring 2 cups plus 2 tablespoons water and the sushi rice to a boil. Reduce the heat to low. Cover and simmer for 15 minutes. Being careful not to disturb, turn off the heat and allow the rice to stand, covered, for an additional 15 minutes.
  • For the sushi zu: Combine the sugar, vinegar and salt in a small saucepot. Heat just until dissolved.
  • Remove the rice from the cooker or saucepan to a large glass or wooden bowl with a wooden paddle. Gently fold in the sushi zu. Bring the rice to room temperature and allow to rest for at least 1 hour covered with a towel.
  • For the spicy tuna: Combine the Sriracha, mayo, sambal and sesame oil in a medium glass bowl with a whisk. Once incorporated, fold in the tuna and scallions. Mix thoroughly. Add in the chili powder, hot sesame oil and sprinkle with salt and pepper. Cover and refrigerate until ready for use.
  • For the vinaigrette: Whisk together the mustard, yuzu juice, wasabi, lemon zest and lime zest. Slowly drizzle in the oil, whisking to emulsify. Fold in the jalapeno. Season with salt and pepper. Reserve until ready for use.
  • Form the sushi rice into nigiri patties, 2 tablespoons each. Bring the oil to 375 degrees F in large cast-iron or heavy-gauge pot over medium-high heat. Fry the tots until browned on all sides, crispy on the outside and soft in the middle, 8 to 10 minutes. Remove from the oil and place on a towel-lined dish. Loosely cover to keep warm.
  • To serve: Drizzle the serving plate with unagi sauce. Place the fried nigiri tots on the plate, evenly spaced. Top each patty with 1 tablespoon spicy tuna salad. Garnish with a drizzle of yuzu vinaigrette.
