Number Of Ingredients 12

1 (8- to 10-pound) bone-in pork shoulder or pork butt
1 cup granulated sugar
1 cup plus 1 tablespoon coarse salt
7 tablespoons light-brown sugar
12 oysters, shucked, for serving
1 cup Napa Cabbage Kimchi, for serving
1 cup Napa Cabbage Kimchi, pureed, for serving
1 cup Ginger-Scallion Sauce, for serving
1 cup Ssam Sauce, for serving
2 cups steamed short-grain white rice, for serving
3 to 4 heads Bibb lettuce, leaves separated, washed well, and spun dry
Sea salt

Steps:

  • Place pork in a large bowl or roasting pan. In a medium bowl, mix together granulated sugar and 1 cup coarse salt. Rub sugar mixture all over pork and cover bowl with plastic wrap; transfer to refrigerator for at least 6 hours and up to overnight.
  • Preheat oven to 300 degrees.
  • Transfer pork to a large roasting pan, discarding any accumulated juices (or drain accumulated juices from roasting pan that pork is in). Transfer roasting pan to oven and cook, basting every hour with rendered fat in roasting pan, until meat is tender and easily shredded with a fork, about 6 hours.
  • Meanwhile, in a small bowl, mix together remaining tablespoon coarse salt and brown sugar; rub mixture all over pork.
  • Increase oven temperature to 500 degrees. Return pork to oven until sugar has melted into a crisp crust, 10 to 15 minutes. Serve hot with oysters, kimchis, ginger-scallion sauce, ssam sauce, rice, lettuce, and sea salt.

Number Of Ingredients 15

1 medium red cabbage, cored and finely shredded
1 large carrot, peeled and finely shredded
1 1/2 jalapenos, stemmed, seeded, and minced
1 large red onion, cut lengthwise and thinly sliced
2 bay leaves
1/4 cup beet juice (optional)
1/4 cup lime juice
1 cup red-wine vinegar
1 cup extra-virgin olive oil
Grated zest of one bitter or regular orange, preferably Seville
1/4 cup finely chopped cilantro
1/8 teaspoon ground allspice (optional)
1 tablespoon cumin seed, toasted (optional)
1/4 cup plus 1 tablespoon dark Muscavado (optional)
Coarse salt and freshly ground pepper

Steps:

  • Bring a large pot of salted water to a rolling boil over high heat. Add cabbage and let cook for 2 minutes. Drain well and let cool completely.
  • Transfer cooled cabbage to a large bowl. Add carrot, chile, onion, and bay leaves; set aside. In another small bowl, whisk together beet juice, lime juice, vinegar, olive oil, orange zest, cilantro, allspice, cumin, and Muscavado, if using; season with 2 teaspoons salt and 1 teaspoon pepper. Add to cabbage mixture and toss until well combined. Season with salt and pepper. Keep tightly covered, refrigerated, for up to 3 days.

SWEET-AND-SPICY GLAZED PORK BELLY



Sweet-and-Spicy Glazed Pork Belly image

A sweet-and-spicy glaze offsets the richness of pork belly in this hearty dish. Pair with Cheddar-Chile Waffles, if desired.

3 chile de arbol
2 tablespoons cumin seeds, toasted and ground
1 tablespoon freshly ground black pepper
1/2 cup coarse salt
1/2 cup light-brown sugar or cane sugar
1 (3-pound) pork belly
Zest of 1 orange
1 1/4 cups freshly squeezed orange juice
2 sticks cinnamon
1/3 cup maple syrup
2 cups homemade or store-bought low-sodium chicken stock

Steps:

  • In a small skillet over medium heat, toast chiles until charred and fragrant, 1 to 2 minutes. Remove chiles from skillet and set aside. Add cumin seeds to skillet and toast until fragrant, 1 to 2 minutes. Place chiles and cumin seeds in a spice grinder and finely grind. Transfer to a medium bowl along with black pepper, salt, and sugar. Remove two tablespoons of the spice mixture and set aside to make the glaze.
  • Rub remaining spice mixture all over pork belly. Cover and refrigerate for 6 to 8 hours.
  • In a small saucepan, combine reserved spice mixture, orange zest, 1/4 cup orange juice, cinnamon sticks, and maple syrup. Bring to a simmer over medium-low heat and cook until slightly thickened and heated through, about 5 minutes. Remove from heat and set glaze aside.
  • Preheat oven to 300 degrees. Remove pork belly from refrigerator and rinse off spice mixture; pat dry with paper towels. Add remaining 1 cup orange juice and chicken stock to a roasting pan. Place over medium-high heat and cook until liquid just comes to a simmer. Add pork, fat side up, to roasting pan. Transfer to oven and cook until meat is very tender and easily pierced with the tip of a sharp knife, 2 to 2 1/2 hours.
  • Increase oven temperature to 425 degrees. Cook pork belly until browned and crisp, 30 to 40 minutes more, basting with reserved glaze every 10 minutes.
  • Remove pork from roasting pan and transfer to a cutting board; let stand for 10 minutes before slicing into 1/2-by-3-inch pieces.

GRILLED HALLOUMI CHEESE

3/4 cup extra-virgin olive oil, preferably Yellingbo
2 preserved lemons, cut into 1/2-inch pieces
1/2 pound mixed olives, pitted
1 clove garlic, minced
3 sprigs fresh rosemary, finely minced, plus more sprigs for garnish
1 pound halloumi cheese
Salt flakes
Freshly ground black pepper
Crusty bread, for serving

Steps:

  • In a medium bowl, mix together olive oil, lemons, olives, garlic, and rosemary. Place cheese in a small dish and cover with olive oil mixture, turning cheese to coat. Let marinate 1 hour.
  • Preheat a grill pan over medium-high heat. Grill cheese, lemons, and olives until cheese is lightly browned, about 2 minutes. Transfer items to a serving platter, garnish with rosemary, and serve immediately with bread.

1 1/2 cups orange juice
2/3 cup extra-virgin olive oil
1 1/2 teaspoons coarse salt
2/3 teaspoon crushed red pepper flakes
2 1/2 teaspoons ground cumin
Zest and juice of 1 lemon
4 medium bulbs fennel, each cut into 6 wedges

Steps:

  • Preheat oven to 350 degrees.
  • Place orange juice, olive oil, salt, red pepper flakes, cumin, and lemon zest and juice in a medium bowl; whisk until well combined.
  • Place fennel in a baking dish just large enough to fit fennel in an even layer; pour over orange juice mixture. Cover with parchment-paper-lined aluminum foil and transfer to oven. Bake for 35 minutes, uncover, and continue baking until fennel is golden brown, about 10 minutes more. Remove from oven; serve warm or at room temperature.
