MARINATED SKIRT STEAK WITH QUICK-PICKLED FETA



Marinated Skirt Steak with Quick-Pickled Feta image

This is really a recipe where you can grill the meat or cook it over the stove. Whatever you prefer. I like getting a good sear in a heavy-bottomed skillet but have tried both methods and been really happy with the result.

Number Of Ingredients 11

4 tablespoons canola oil, divided
1 1/2 to 2 pound piece skirt steak
Kosher salt and freshly ground black pepper
6 cloves garlic, peeled and grated on a vegetable grater or zester, or pressed in garlic press
2 tablespoons Worcestershire sauce
2 sprigs fresh rosemary, stemmed and leaves coarsely chopped (about 2 teaspoons)
2 teaspoons fennel seeds, lightly toasted and crushed
4 ounces feta, crumbled
2 tablespoons red wine vinegar
2 tablespoons dried oregano
2 tablespoons extra-virgin olive oil

Steps:

  • For the steak: Heat a cast iron or heavy-bottomed skillet and add half of the oil. When the oil begins to smoke lightly, season the steak on both sides with salt and use a pair of tongs to carefully drop it into the hot oil in the skillet. Cook it on the first side for 1 minute and then turn it on the second side for another minute. In a small bowl, stir together the garlic, Worcestershire sauce, rosemary, and fennel seeds. Remove the steak from the skillet; it will still be barely cooked. Use the back of a spoon to spread the garlic mixture on both sides of the steak and allow it to rest for 10 minutes. Refrigerate for a few hours and allow it to marinate or simply sear it again and serve.
  • For the vinaigrette: In a small bowl, combine the feta cheese with the red wine vinegar, oregano, and olive oil. Stir to blend. Set aside
  • To assemble: When ready to serve the steak, wipe out the grease and anything sticking to the bottom of the skillet. Heat the skillet again and add the remaining 2 tablespoons oil. Sear the steak again and cook to desired temperature. For medium rare, cook for 3 to 4 minutes on each side. Remove the steak from the skillet and place it on a flat surface. Cut against the natural grain of the meat to tenderize. Top with the feta dressing. Serve immediately.

1/2 cup balsamic vinegar
2 tablespoons light-brown sugar
2 garlic cloves, minced
1 teaspoon crushed dried rosemary
Coarse salt and ground pepper
1 1/2 pounds skirt steak, cut crosswise into 4 equal pieces
Oil, for grates

Steps:

  • In a resealable plastic bag or shallow dish, combine vinegar, sugar, garlic, rosemary, 1 teaspoon coarse salt, and 1/2 teaspoon pepper. Pierce meat all over with a fork; add to marinade, and turn to coat. Let marinate at room temperature at least 15 minutes, or cover and refrigerate up to 1 day.
  • Heat grill to high; oil grates. Remove steaks from marinade, allowing excess to drip off. Grill steaks 2 to 4 minutes per side for medium-rare. Transfer to a plate; cover loosely with aluminum foil, and let rest 5 minutes.

Vietnamese-Style Spaghetti Squash

Spaghetti squash plays the part of traditional rice noodles in this take on a Vietnamese noodle bowl. Roast the squash and marinate the steak the day before, and it's easy to pull off in just half an hour for dinner.

1 medium spaghetti squash (2-2 1/2 pounds), halved lengthwise, seeded
1 1/2 teaspoons kosher salt
1/4 cup fish sauce
1 tablespoon brown sugar
1 tablespoon finely grated fresh ginger
2 garlic cloves, finely grated
1/2 cup fresh lime juice, divided
1 pound skirt steak, cut crosswise into 4-inch sections
1 medium jalapeño, stemmed, seeded, finely chopped
3 tablespoons toasted sesame oil
1 tablespoon neutral vegetable oil
1/2 romaine heart, coarsely chopped (about 4 cups)
1 medium carrot, peeled, sliced into 3" matchsticks
1 mini or Persian cucumber, cut in half lengthwise, thinly sliced
1/2 cup mung bean sprouts (about 2 ounces)
2 scallions, thinly sliced
1/4 cup cilantro leaves
1/4 cup roasted salted peanuts, coarsely chopped

Steps:

  • Preheat oven to 375°F. Line a rimmed baking sheet with parchment paper.
  • Sprinkle each half of squash with 1/4 tsp. salt, then place cut side down on prepared baking sheet. Bake until interior of squash is fork-tender, 40-50 minutes. Let cool.
  • Meanwhile, whisk fish sauce, brown sugar, ginger, garlic, 2 Tbsp. lime juice, and 1/2 tsp. salt in a large bowl. Transfer 3 Tbsp. fish sauce mixture to a shallow wide bowl. Add steak and turn to coat. Let sit at room temperature at least 30 minutes.
  • Add jalapeño, sesame oil, and remaining 6 Tbsp. lime juice to remaining fish sauce mixture in large bowl and stir to combine.
  • Using a fork, scrape squash crosswise to pull strands from shells into a large bowl; discard shells. Toss squash with 4 Tbsp. jalapeño sauce and remaining 1/2 tsp. salt.
  • Heat vegetable oil in a large heavy skillet over high; pat steak dry. Working in batches if needed, sear steak until browned, about 3 minutes per side for medium-rare. Let rest 5 minutes, then thinly slice lengthwise against the grain.
  • Divide squash among bowls. Toss lettuce, carrot, cucumber, and bean sprouts in remaining jalapeño sauce, then arrange over squash. Add steak to bowls, then top with scallions, cilantro, and peanuts.
  • Do Ahead
  • Squash can be cooked 2 days ahead. Let cool completely, then store in an airtight container and chill. Steak can be marinated 1 day ahead. Store in a resealable plastic bag and chill.

4 cups water
3 cups coarsely chopped fresh cilantro (from about 2 large bunches)
7 large garlic cloves, peeled
1/4 cup red wine vinegar
3 tablespoons pickling spice
2 tablespoons chopped fresh oregano
2 teaspoons ground cumin
1 1/2 teaspoons salt
1 teaspoon ground black pepper
8 6- to 8-ounce skirt steaks
2/3 cup vegetable oil, divided
Red-Onion Mojo
Fresh lime slices

Steps:

  • Preheat oven to 350°F. Combine first 9 ingredients in blender. Purée until marinade is almost smooth. Arrange steaks in 15x10x2-inch glass baking dish. Pour marinade over. Cover dish tightly with foil. Roast in oven 1 hour. Remove dish from oven; uncover and let steaks cool in marinade 2 hours. Cover and refrigerate in marinade overnight.
  • Remove steaks from marinade and pat dry with paper towels. Sprinkle steaks on both sides with salt and pepper. Pour 1/3 cup oil into each of 2 heavy large skillets; heat over high heat until oil is very hot. Add 4 steaks to each skillet and cook until crisp outside, about 3 minutes per side. Drain briefly on paper towels. Arrange steaks on platter; spoon Red-Onion Mojo over. Garnish with lime slices and serve.

3 to 4 medium red or yellow beets (1 1/2 pounds total), peeled and cut into 1/2-inch wedges
3 tablespoons extra-virgin olive oil
Coarse salt and ground pepper
1 skirt steak (1 1/2 pounds), cut into 4 equal pieces
1 bunch Swiss chard (12 ounces), ribs cut away and discarded, leaves cut into large pieces
2 teaspoons red-wine vinegar

Steps:

  • Preheat oven to 400 degrees. Place beets on a large sheet of foil; drizzle with 1 tablespoon oil and season with salt and pepper. Fold foil to make a packet and crimp edges to create a tight seal. Place on a rimmed baking sheet and roast until beets are tender, 25 to 30 minutes.
  • Meanwhile, in a large skillet, heat 1 tablespoon oil over medium-high. Season steaks with salt and pepper and cook until medium-rare, 3 to 6 minutes per side (depending on thickness). Transfer to a plate to rest.
  • Wipe skillet clean with a paper towel; return to stove. Heat 1 tablespoon oil over medium-high. Add Swiss chard; cook, stirring constantly, until wilted, about 2 minutes. Add beets and vinegar; season with salt and pepper and toss to combine. Thinly slice steak against the grain and serve with beets and greens.

1 small red onion, halved and very thinly sliced
3 tablespoons olive oil
1 teaspoon thinly sliced lime zest
1/4 cup lime juice (from 3 limes)
1 1/4 pounds skirt steak, cut into 4 equal pieces

Steps:

  • Preheat oven to 400 degrees. On a rimmed baking sheet, place squash cut side down; cover sheet tightly with aluminum foil. Bake until squash is easily pierced with the tip of a paring knife, 45 to 55 minutes.
  • Meanwhile, in a medium bowl, combine onion, 1 tablespoon oil, lime zest and juice, 1/2 teaspoon coarse salt, and 1/8 teaspoon ground pepper. Let stand until onion is softened,at least 15 minutes.
  • When squash is about 10 minutes from being done, heat a large skillet over medium-high. Season steaks with salt and pepper. Place 2 steaks in skillet, and cook until medium-rare, 2 to 3 minutes per side. Transfer to a plate, and cover loosely with foil; repeat with remaining steaks. Let rest at least 5 minutes.
  • Meanwhile, holding squash over a medium bowl, use a fork to scrape flesh into strands. Drizzle with remaining 2 tablespoons oil; season with salt and pepper, and stir to combine. Top steaks with pickled onion, and serve with squash.
