SKINNY PERUVIAN BEEF SALTADO RECIPE
Flavorful, light, and super easy to make, this healthy Lomo Saltado Recipe is a treat for the eyes as well as the palate. Traditionally served with fries or potatoes, my skinny version eliminates them to save on Points, but is just as delicious.

Steps:
- Heat oil over medium high heat in a large skillet. Season beef with salt, pepper and cumin.
- Add beef and cook until browned on both sides, about 2 minutes per side. Add in garlic, onions and peppers, and cook for another 3-4 minutes.
- Stir in the vinegar and soy sauce. Cook for another 2 minutes, then add in the tomatoes and cilantro, and cook for another 2 minutes.
- Serve immediately.

LOMO SALTADO (PERUVIAN BEEF STIR FRY)
I put a healthier spin on Lomo Saltado (Peruvian Beef Stir Fry) one of my favorite Peruvian dishes!

Steps:
- Preheat the oven to 400°F.
- Lightly coat a baking sheet with cooking spray.
- Cut the potato lengthwise into 1/3-inch thick slices; cut each slice into 1/3-inch fries. Place on the baking sheet and toss with oil to evenly coat. Season with garlic powder, salt and pepper. Place on a single layer onto the greased baking sheet.
- Bake uncovered on the lower third of the oven for about 25 minutes or until tender crisp and golden.
- Meanwhile, season meat with salt, pepper and cumin.
- Heat a large wok over high heat. When hot add the oil and the steak, cook about 2 minutes, until browned on both sides. Add the onions, bell pepper, jalapeno and garlic and cook 2 minutes. Add the tomato, soy sauce and vinegar and cook 1 more minute. Season with more salt as needed, remove from heat and finish with cilantro.
- Serve immediately with french fries and divide evenly between 2 plates.

Steps:
- Heat 1 tablespoon of oil in a large pan over high heat. Add the steak, season with salt and pepper, and cook until browned, 5-6 minutes. Remove from the pan.
- Heat the remaining tablespoon of oil in the same pan, then add the red onion and cook for about 5 minutes, until softened and browned. Add the tomato, garlic, and aji amarillo paste, and cook for another 5-7 minutes, until the tomatoes have released some of their juices, but are still intact.
- Add the soy sauce and vinegar and stir to combine, let cook for 1 minute.
- Add the steak, fries, and cilantro. Toss gently to coat the fries in the sauce.
- Serve with rice, if desired.
- Enjoy!

- Preparation:
- Heat ½ cup oil in a large skillet over high heat. Add beef and quickly sauté until beef is seared and browned on all sides. Remove pan from heat and transfer beef to a plate. Save covered.
- Return pan to medium-high heat and add 1 ½ tablespoons oil. Add onions and sauté until edges are seared and they begin to soften, about 2 minutes.
- Add aji amarillo, tomatoes, parsley, salt, pepper, soy sauce and vinegar. Sauté until tomatoes have softened, about 2 minutes.
- Add beef and toss gently.
- Optional: For a special taste pour ¼ cup Pisco over boiling meat and ignite. Cover and set aside.
- Heat ¾ cups oil in a large nonstick skillet over medium heat. Add potatoes and sauté until browned and tender, about 15 minutes. Drain on paper towel.
- Unmold rice in center of serving dish. Place beef and french fries on each side. Sprinkle with finely chopped parsley.

PERUVIAN BEEF SALTADO
Steps:
- Heat the oil in a large wok or skillet over medium-high heat. Add the steak, season with salt and pepper, and stir-fry until the meat is browned on all sides, about 8 to 10 minutes.
- Using tongs, transfer the steak to a plate and set aside. To the drippings in the pan, add the onion, tomato, and garlic; season with salt, and pepper. Cook and stir it until the onions are soft and the tomatoes start to break down, about 2 to 4 minutes. Return the beef to the pan, add the soy sauce and red wine vinegar. Cook for 1 minute, season with salt and pepper, to taste, and serve.

- Prepare the bag of French fries according to package directions.
- While the French fries are cooking, heat the oil in a frying pan over medium-high heat. Season the sliced meat with salt and pepper to taste. Fry the meat until just cooked, and the juices begin to release. Remove the meat from the frying pan, then cook the onions, with additional oil if needed, until they are transparent. Stir in the tomato and aji amarillo; cook until the tomato softens. Pour in the vinegar and soy sauce, add the French fries, cover, and cook until the beef is done, about 3 minutes.
