SKILLET BAKED ITALIAN POTATOES
These potatoes are delicious and you will want to make the often. Your family and friends will like them too. Great for any occasion.

Steps:
- 1. Heat oven to 400^ Heat a large Cast Iron skillet then add the sausage; cook and scramble until brown. Remove sausage with a slotted spoon to paper towel lined plate to drain; set aside. To the same skillet add the onion and cook until soft. Add the potatoes. Cook and stir gently about 2 to 3 minutes.
- 2. Mix the vegetable stock, seasoning, pepper, oregano, tomato sauce and sausage in a large bowl..Stir to combine. Pour this mixture over the potatoes in the skillet. Bring to a boil, then cover. Place in the pre-heated oven for 25 to 30 minutes .Until potatoes are tender.
- 3. Uncover skillet and stir gently. Sprinkle with the cheese.. and return to oven. Bake 1 minute longer or until cheese is melted and potatoes are browned a little. Let cool 10 minutes before serving.
IRON SKILLET BAKED POTATOES
These potatoes are baked cut-side-down in a cast iron skillet. This results in a potato with a slightly golden brown crust on the cut side and a delicious, roasted flavor. Potatoes can be served with sour cream, shredded cheese, etc.

- Pour canola oil evenly into the bottom of a room-temperature, 10-inch cast iron skillet. Sprinkle rosemary and seasoned salt evenly over the canola oil. Place potatoes, cut-side down, in 1 layer in the bottom of the skillet. Press down on potatoes so cut-side is coated in canola oil.
- Place the cold skillet into a cold oven. Preheat the oven to 400 degrees F (200 degrees C).
- Bake until potatoes are easily pierced with a fork, about 45 minutes.

- In a skillet, cook sausage until no longer pink; drain. Place in a greased 9-in. square baking dish. Top with potatoes. In the same skillet, saute onion, green pepper and garlic in oil for 5 minutes or until vegetables are crisp-tender. , Stir in the mushrooms, tomatoes, olives, basil, salt and pepper. SKILLET ITALIAN HERBED COUNTRY POTATOES
This is a quick and easy potato side dish, which is my husband's most requested. This recipe can be modified, using many different combinations of herbs and spices, to accompany any meal. The recipe calls for fresh herbs, but one could substitute dried herbs as well. Just remember when using dried herbs, use half the amount called for in a recipe.

SKILLET POTATOES
Steps:
- Preheat the oven to 400 degrees F.
- Heat a 10-inch cast-iron or nonstick skillet over low heat. Add the butter; when melted, add the garlic and cook until soft but not browned, 3 to 4 minutes.
- Slice the potatoes on a mandoline set to 3mm (about the thickness of 3 credit cards). Place the potatoes in a large bowl; add the melted garlic butter and sprinkle with salt. Toss well to ensure all the slices are coated.
- Place the skillet used for the butter over low heat. Carefully layer the potato slices in the skillet, overlapping them in a circular pattern starting from the edge of the skillet and working towards the center. Continue until you have about five layers of potatoes.
- Set a medium pot lid (6 to 8 inches wide) on directly on top of the potatoes. Then place a heavy pot on top of the lid to weight it down. Adjust the heat to medium-low and cook for about 15 minutes on the stovetop, then transfer to the oven and bake until the bottom is golden brown and crispy, another 15 minutes. (You can use a spatula to peek at the bottom to make sure it's golden brown.)
- Remove the skillet from the oven and let the potatoes rest for 15 minutes. Remove the pot and lid, and place a plate upside down on the skillet. Using oven mitts, carefully turn the skillet over to release the potatoes onto the plate. Garnish with thyme leaves and serve.

- Preheat the oven to 375 degrees F.
- Butter a 12-inch cast-iron skillet. Arrange half of the potatoes in the skillet. Sprinkle with salt and pepper, half the chives, and half of each of the Gruyère, Cheddar and fontina cheeses. Repeat the layers once.
- Heat the cream, garlic, nutmeg, 1/2 teaspoon salt and 1/2 teaspoon pepper in a medium saucepan over medium heat until bubbles form around the edges, about 3 minutes. Remove from the heat and stir in the sour cream. Pour the cream mixture over the potatoes in the skillet. Cover tightly with aluminum foil. - Bake potatoes in oven or microwave.
- Preheat oven to 450 degrees.
- Heat oil in small sauce pan. Add mushrooms, scallions, garlic, and oregano. Cook over med-high heat for about 3 minutes.
