CREAM OF SPINACH SOUP
This fast cream of spinach soup recipe makes it easy to feel green. Use basic pantry ingredients and fresh or frozen spinach to make a vegetable-packed soup you can serve hot or cold.

- Sauté the onion: In a large saucepan over medium heat, sauté onion in butter for 4 minutes or until translucent.
- Build the soup: Add potatoes, chicken broth, water, and bouillon cubes. Bring to a boil. Reduce heat to low, cover, and simmer for 20 minutes or until the potatoes are tender. Add spinach and cook for 2 to 4 minutes longer until spinach is tender.
- Purée the soup and add the half and half: Working in batches, purée soup mixture in a blender. Return to saucepan. Whisk in half and half, salt, and pepper.
- Whisk in the sour cream: Over low heat, bring to just before simmering. Whisk in the sour cream. You may want to use an immersion blender to get the sour cream fully incorporated. This soup can be served hot or chilled. Garnish with chopped chives, sprinkles of allspice, or a dollop of sour cream.

- In a large skillet, heat the olive oil over medium heat. Add the spinach and garlic and cook, stirring constantly, until the spinach is wilted, 2 to 3 minutes. Add the mixture to a blender or food processor, pour in 1/4 cup hot water and pulse until pureed. Set aside.
- In a large soup pot, cook the onions in the butter over medium heat until the onions begin to soften. Sprinkle the flour over the top and stir to combine. Cook for about 2 minutes, then pour in the milk, stirring occasionally. Add the salt, cayenne and some black pepper and stir to combine. Cook over medium heat for 5 minutes, stirring constantly. Pour in the pureed spinach, then cook until thickened, another 3 to 5 minutes.
- Check the seasonings, adding more salt, black pepper or cayenne as needed. Serve warm.
CREAM OF SPINACH SOUP

- Heat the butter/oil in a saucepan.
- Saute the onions and garlic until the onion softens.
- Add the stock and bring to a boil.
- Add the defrosted spinach, dried tarragon and white wine (if used).
- Reduce heat to a simmer for about 20 minutes.
- Just before serving you may have to use a stab-mixer to get the right consistency.
- Season with Salt and Pepper.

- Heat the butter in a large saucepan. Add the spring onions, leek, celery and potato. Stir and put on the lid. Sweat for 10 minutes, stirring a couple of times.
- Pour in the stock and cook for 10 - 15 minutes until the potato is soft.

Steps:
- heat oil in a large pan.
- Add onions and cook for 3 minutes stirring occasionally till they begin to soften.
- add the potatoes, water, marjoram, thyme and bay leaf. pinch of salt for taste.
- bring to boil, reduce heat, cover and cook gently for about 25minutes until the vegetables are tender.
- remove the bay leaf and herb sprigs.
- add the spinach and water cress and continue cooking for 3-4 minutes, stirring frequently, just until it is completely wilted.
- allow the soup to cool slightly, then transfer to blender or food processor and puree until smooth.
- return the soup to the sauce pan and thin with a little more water, if wished.
- season to taste with salt pepper and nutmeg.
- place over a low heat and simmer until reheated.
- ladle soup into bowls and swirl cream into each bowl(optional).
- for vegan omit cream.
