SUPER SIMPLE SPINACH SALAD

A simple but divine spinach salad with homemade balsamic vinaigrette!

Ingredients

5-6 cups fresh baby spinach
1/2 clove minced garlic
1 overflowing tablespoon balsamic vinegar
1 1/2 tablespoons extra-virgin olive oil
pinch of sea salt and freshly cracked black pepper

Steps:

Put your spinach into a big bowl. If you're using any add-ins, go ahead and add them now. (See notes for ideas.)
Mix all of the dressing ingredients together in a small jar or container with a tight-fitting lid. Shake them up until it's well mixed.
Pour the dressing over the spinach right before you're ready to serve.
Enjoy!

Easy Spinach Salad with Pine Nuts and Parmesan and a homemade dressing made with olive oil, freshly squeezed lemon juice, and black pepper. Ready in 15 minutes! The best salad for a family weeknight dinner.

Ingredients

3 tablespoons olive oil
1 tablespoon lemon juice (freshly squeezed)
1/8 teaspoon salt
1/8 teaspoon coarsely ground black pepper
6 oz spinach (fresh)
1/3 cup pine nuts (toasted)
1/4 cup Parmesan cheese (shaved)

Steps:

Add dressing ingredients to a medium bowl. Whisk to emulsify.
Add spinach to a large bowl.
Toss with the salad dressing.
Top with toasted pine nuts and shaved Parmesan cheese. Season with extra black pepper, if desired.

Ingredients

1 bunch fresh baby spinach leaves (about 300g)
1 cup alfalfa sprout
cherry tomatoes (optional) or sliced red skinned apple (optional)
2 medium lemons
4 sprigs of fresh mint
2 teaspoons sugar
2 tablespoons lemon juice
1/4 cup spiced vinegar
fresh ground black pepper

Steps:

Place spinach leaves on a platter.
Mix through the tomatoes or apple slices if using.
Top with the alfalfa sprouts.
Pour over the dressing or serve on the side.
TO MAKE DRESSING:.
With a sharp knife remove lemon rind taking as little pith (the white part) as possible.
With the motor running, and using a metal blade, drop the lemon rind & mint down the tube.
When lemon and mint are finely chopped add the sugar, lemon juice, vinegar & pepper.
Process until well mixed.
