This homemade cranberry sauce is classic. Made from fresh or frozen cranberries and ready in 20 minutes, it's a must-have for Thanksgiving dinner. Easy to make-ahead, too!

1 cup (200 g) sugar
1 cup (250 ml) water
4 cups (12 oz package) fresh or frozen cranberries
Optional: Pecans, orange zest, raisins, currants, blueberries, cinnamon, nutmeg, allspice.

Steps:

  • Rinse cranberries: Place the cranberries in a colander and rinse them. Pick out and discard any damaged or bruised cranberries.
  • Stir in mix-ins, if using: Once the cranberries have burst you can leave the cranberry sauce as is, or dress it up with other ingredients. We like to mix in a half a cup of chopped pecans a pinch or two of orange zest. Some people like adding raisins or currants, or even blueberries for added sweetness. You can also add holiday spices such as cinnamon, nutmeg, or allspice. If adding spices, start with a pinch of each and add more to your taste.

24 ounces fresh or frozen cranberries (6 cups)
1 1/4 cups sugar
4 wide strips orange zest, plus 1 cup fresh juice
1/2 teaspoon ground cinnamon
Kosher salt

Steps:

  • In a saucepan, combine cranberries, sugar, orange zest and juice, cinnamon, 1/4 teaspoon salt, and 1/4 cup water. Bring to a boil, then reduce heat to medium and simmer, stirring occasionally, until cranberries burst and mixture thickens slightly, 12 to 15 minutes. (Sauce will thicken more as it cools.) Remove from heat; let cool completely. Refrigerate in an airtight container up to 1 week.

1 pound fresh or frozen cranberries (4 cups)
2 cups water
2 cups sugar

Steps:

  • Rinse cranberries with cool water, and remove any stems or blemished berries.
  • Heat water and sugar to boiling in 3-quart saucepan over medium heat, stirring occasionally. Continue boiling 5 minutes longer, stirring occasionally.
  • Stir in cranberries. Heat to boiling over medium heat, stirring occasionally. Continue boiling about 5 minutes longer, stirring occasionally, until cranberries begin to pop. Pour sauce into bowl or container. Refrigerate about 3 hours or until chilled.

This is a simple cranberry sauce recipe that can be made even easier by substituting 1 cup of orange juice for the fresh orange. Sweetness can be adjusted depending on taste. I'd recommend anywhere from 1/3 to 1 cup. All organic ingredients can be substituted, depending on availability.

1/2 cup organic sugar
1 organic orange, juice of, and
1 tablespoon orange peel, grated
1/2 teaspoon fresh ginger, grated
4 cups organic cranberries
1/2 cup organic pecans (optional) or 1/2 cup organic walnuts, chopped (optional)

Steps:

  • Simmer orange peel, orange juice, sugar and ginger in a saucepan over medium heat until sugar dissolves.
  • Add the cranberries and cook for 5 to 7 minutes until they "pop".
  • If desired, lightly toast nuts in a small frying pan over low to medium heat while cranberries are cooking.
  • Add nuts, remove from heat and cool.

  • Empty a 12-ounce bag of fresh or frozen cranberries into a saucepan and transfer 1/2 cup to a small bowl. Add 1 cup sugar, 1 strip orange or lemon zest and 2 tablespoons water to the pan and cook over low heat, stirring occasionally, until the sugar dissolves and the cranberries are soft, about 10 minutes. Increase the heat to medium and cook until the cranberries burst, about 12 minutes. Reduce the heat to low and stir in the reserved cranberries. A great side dish for Thanksgiving dinner. It can be used as filling for cranberry/cream cheese tarts and also makes a great topping on bagels, corn bread, or cheesecake. Pour into a serving dish or jars and cover. The pectin in the cranberries will make the cranberry sauce gel as it cools. I usually use a fork to mix it up which will make it more pliable.
