BAKED FETA PASTA
Whether you're an avid TikTok user or just a casual Instagram consumer, you've probably seen the feta and tomato pasta taking the social media world by storm. It has an interesting history. In 2018, Finnish blogger Tiiu Piret (@tiiupiret) shared a recipe for a pasta containing prosecco, baked feta and tomatoes. In 2019, another Finnish blogger, Jenni Häyrinen (@liemessa), shared her simplified version of the dish on her blog and Instagram using the hashtag #uuifetapasta. (Afterward, sales of feta in Finland apparently increased by 300 percent.) American food influencer MacKenzie Smith (@grilledcheesesocial) eventually heard about the dish from a friend with a Finnish boyfriend. In January 2021, she posted a translation of the popular recipe on her blog and Instagram, which led to it going viral in the United States. It's easy to see why the recipe has achieved such fame: Cherry tomatoes and a whole block of feta are baked until soft and melty, then tossed with garlic, basil and cooked noodles for a beautifully cheesy dish. We opted to use a short tube pasta so the sauce can get trapped inside each piece and added a pinch of flaky sea salt on top to perfectly balance the dish.

- Preheat the oven to 400 degrees F.
- Toss the cherry tomatoes and olive oil with 1/4 teaspoon of salt and several grinds of black pepper in a medium bowl until combined. Transfer to a 2 1/2- to 3-quart baking dish, place the feta in the center of the tomatoes and season with a pinch of black pepper. Bake until the tomatoes have burst and the feta has softened, about 30 minutes. Raise the heat to 450 degrees F and continue to cook until the tomatoes and feta are golden brown, 10 to 15 minutes more.
- Meanwhile, bring a large pot of generously salted water to a boil over high heat. Add the pasta and cook until al dente, about 13 minutes. Reserve 1/2 cup of the cooking water, then thoroughly drain the pasta.
- As soon as the tomatoes and feta come out of the oven, stir in the garlic and red pepper flakes (if using). Use the back of a spoon to smash the tomatoes and feta into a smooth and creamy sauce (it's okay if some of the oil isn't fully integrated). Add the pasta and half the basil and toss until evenly coated. If the sauce is too thick, stir in some pasta water a couple tablespoons at a time. Taste and adjust the seasoning with salt and pepper. Serve topped with the remaining basil and a pinch of sea salt.
BAKED FETA PASTA WITH SHRIMP
This TikTok-famous pasta gets a dressing up with loads of shrimp and the addition of thyme and lemon zest. If you're in the mood to dirty more than one pot, consider grilling or sautéing the shrimp and adding them to the finished pasta dish. A lovely and simple side salad completes the meal.

- Position a rack in the middle of the oven and crank the heat to 400°F (200°C).
- Dump the tomatoes and garlic in a 9-by-13-inch (23-by 33-cm) baking dish. Strew the thyme over the tomatoes and drizzle the whole thing with 1/4 cup oil. Sprinkle with salt and stir to coat.
- Nestle the feta cheese in the middle of the dish and drizzle with the remaining 1/4 cup oil. Sprinkle the entire dish with red pepper flakes and a wee bit of black pepper.
- Bake until the tomatoes are lightly charred and have burst, 30 to 35 minutes. Remove the dish from the oven and nestle the shrimp among the tomatoes. Return the dish to the oven and continue baking until the shrimp is cooked through, 7 to 10 minutes.
- While the shrimp is cooking, bring a large pot of salted water to a boil. Cook the pasta until just al dente-about a minute less than specified on the package. Reserve 1 cup of the pasta water and then drain the pasta.
- Remove the thyme sprigs and discard. Stir the feta-tomato-shrimp mixture until evenly mixed.
- Pour the pasta into the dish and toss completely. If the dish looks a bit dry, add some of the reserved pasta water.
- Season with salt and pepper, to taste. Top with the parsley and lemon zest and serve.

FETA CHEESE PASTA WITH SHRIMP
This feta cheese pasta with shrimp and spinach is so easy and delicious. The creamy sauce tastes like it is from a restaurant but is so quick to make. Adapted from the world famous "TikTok Pasta" this recipe is a must-try.

- Preheat oven to 400ºF. Toss together diced tomatoes, ¼ cup olive oil, ⅔ grated garlic, red pepper flakes, salt, pepper, ½ the herbs and spread it in the baking dish.
- Make a well in the center of tomatoes and place the feta cheese block, burrata cheese halves and sprinkle the parmesan cheese. Drizzle remaining olive oil on the cheese and bake at 400ºF for 30 to 40 minutes until the tomatoes cook and release juices.
- About 15 minutes after baking time, bring salted water to a rolling boil in a cooking pot. Cook the pasta until al dente stage following the directions on the package. Turn off the heat and add spinach. Drain the pasta with spinach and reserve some pasta water.
- After complete baking time, remove the baking dish from oven and add remaining herbs, garlic and lemon zest (if using). Using a large and wide spoon, mash the cheeses until smooth and crush the tomatoes very well. Combine it all into a nice sauce.
- Stir in the shrimp. Bake the sauce for an additional 5 to 6 minutes until shrimp turn opaque. Alternatively, toss shrimp with some olive oil, red pepper flakes, salt, pepper and bake it for 9 to 12 minutes and then use it.
- Stir in the drained pasta. Add "hot" pasta water to adjust the sauce consistency.

- While pasta is cooking, cook tomatoes with remaining 1 tablespoon oil, oregano and basil over medium heat in wine mixture until tender, 10 minutes.

- Heat the olive oil in a skillet over medium-high heat.
- Briskly sauté the onion until softened, about 3 minutes.
- Add the garlic and prawns and sauté just until prawns turn a bright orange color, about 5 minutes.

- Set a large pot of salted water to boil. In a medium saucepan, heat 2 tablespoons oil over medium-high. Add onion and garlic. Cook until soft, 5 minutes. Add tomato paste and oregano. - Heat oil in heavy large skillet over medium heat. Add onion and garlic; sauté until tender, about 5 minutes. Add 1/4 cup basil, oregano and dried red pepper and stir 1 minute. Add stewed tomatoes, diced tomatoes, artichoke hearts and lemon juice and simmer until sauce thickens slightly and artichokes are tender, about 30 minutes.(Can be made 1 day ahead. Cover and refrigerate.)
- Cook spaghetti in large pot of boiling salted water until tender but still firm to bite. Drain.
- Meanwhile, bring sauce to a simmer. Stir in shrimp and simmer until just cooked through, about 5 minutes. Season to taste with salt and pepper.
- Add spaghetti to sauce and toss to coat. Transfer to large bowl. Sprinkle with additional chopped fresh basil. Serve, passing Parmesan separately.
