SHRIMP WITH SPICY GARLIC SAUCE

Chili oil, chili paste and garlic give this Asian recipe a spicy boost!

6 dried black (shiitake) mushrooms
1 medium carrot, cut diagonally into thin slices
3/4 pound uncooked medium shrimp in shells
1 teaspoon cornstarch
1 teaspoon water
1 tablespoon chili or vegetable oil
2 teaspoons finely chopped garlic cloves
1 tablespoon chili or vegetable oil
1/2 medium head cabbage, cut into 2x3/4-inch pieces
1/4 cup Progresso™ chicken broth (from 32-ounce carton)
4 medium green onions, cut diagonally into 1-inch pieces
1 tablespoon chili paste

Steps:

  • Soak mushrooms in hot water about 20 minutes or until soft; drain. Rinse with warm water; drain. Squeeze out excess moisture. Remove and discard stems; cut caps into thin strips.
  • Place carrot in boiling water; heat to boiling. Boil 1 minute; drain. Immediately rinse with cold water; drain.
  • Peel shrimp. Cut shrimp lengthwise in half; wash out vein. Pat dry with paper towels. Mix cornstarch and water.
  • Heat wok or 12-inch skillet over high heat. Add 1 tablespoon oil; rotate wok to coat side. Add shrimp and garlic; stir-fry until shrimp are pink and firm. Remove shrimp from wok.
  • Add 1 tablespoon oil; rotate wok to coat side. Add mushrooms and cabbage; stir-fry 1 minute. Add broth; heat to boiling. Cover and cook 1 minute.
  • Stir in cornstarch mixture; cook and stir about 30 seconds or until thickened. Add shrimp, carrot, onions and chili paste. Cook and stir about 30 seconds or until shrimp are hot.

1 1/2 pounds uncooked large shrimp
3 tablespoons soy sauce
2 tablespoons chili sauce
2 teaspoons sesame oil
2 teaspoons Chinese rice wine or dry sherry
1 teaspoon sugar
2 tablespoons olive oil
4 cloves garlic, crushed or finely chopped
1 pinch freshly-ground black pepper
1 scallion, thinly sliced

Steps:

  • Peel the shrimp, leaving the tail segments intact. Devein the shrimp if you choose.
  • In a small bowl, mix together the soy sauce, chili sauce, sesame oil, rice wine, and sugar and set aside.
  • In a wok or large pan, heat the olive oil over medium-high heat. Stir-fry the garlic until fragrant, about 30 seconds. Add the shrimp and cook until both sides are pink, about 2 minutes on each side. Add the sauce mixture and stir so the shrimp is fully coated. Season with black pepper.
  • Remove from the heat and garnish with chopped scallions. Serve with rice or vegetables.

2 tablespoons extra virgin olive oil, 2 turns of the pan
4 cloves garlic, crushed away from skin
1/2 teaspoon crushed red pepper flakes
24 jumbo shrimp, peeled and deveined, tails in tact, ask for easy peels at your fish counter
2 teaspoons grill or steak seasoning blend (recommended: Montreal Seasoning by McCormick) or coarse salt and pepper
1 lemon, zested and juiced
2 tablespoons chopped parsley leaves, a handful

Steps:

  • Heat a large skillet over medium high heat. Add extra-virgin olive oil, 2 turns of the pan, garlic, red pepper flakes and shrimp. Season with grill seasoning or salt and pepper and cook shrimp 3 minutes or until just pink. Toss with lemon zest, juice and chopped parsley. Remove shrimp to a serving platter leaving the garlic cloves in the pan.

2 lb shrimp, uncooked, cleaned, deveined, leave the tails on
3 Tbsp soy sauce
2 Tbsp oyster sauce
1 Tbsp chili oil
1 Tbsp sesame oil
2 Tbsp mirin (japanese cooking wine)
1 tsp red chili pepper flakes
1 Tbsp sugar
1/2 tsp black pepper
2 Tbsp olive oil
3 clove garlic, finely chopped
2 stalks green onions, thinly sliced

Steps:

  • 1. In a small bowl, mix together all the ingredients, except the olive oil, garlic and green onions.
  • 2. In a large skillet, heat the olive oil over medium-high heat. Add in the garlic, don't burn it, about 30 seconds, it will be bitter if you do.
  • 3. Add the shrimp, just cook till both sides are pink, about a minute and a half.
  • 4. Add all the sauce mixture and stir so the shrimp just cooks. Do not over cook the shrimp it will become rubbery.
  • 5. Remove from heat and place onto a serving platter and garnish with green onions.
