1 (16 ounce) package rigatoni pasta
1 tablespoon vegetable oil
1 onion, sliced
3 cloves garlic, crushed
1 small zucchini, sliced
1 small yellow squash, sliced
1 green bell pepper, sliced
1 (8 ounce) package sliced fresh mushrooms
1 (28 ounce) can crushed tomatoes
1 teaspoon dried oregano
1 teaspoon dried basil
½ teaspoon red pepper flakes
¼ teaspoon salt
¼ teaspoon ground black pepper
2 pounds shrimp, peeled and deveined

Steps:

  • Bring a large pot of lightly salted water to a boil. Cook rigatoni in the boiling water, stirring occasionally until cooked through but firm to the bite, about 13 minutes. Drain.
  • Heat vegetable oil in a skillet over medium heat; cook and stir onion and garlic until onion is tender, about 5 minutes. Add zucchini, yellow squash, bell peppers, and mushrooms; continue cooking and stirring until vegetables are tender, about 5 minutes more. Pour tomatoes into skillet and season with oregano, basil, red pepper flakes, salt, and black pepper; bring to a simmer.
  • Cook shrimp in vegetables sauce until they are bright pink on the outside and the meat is no longer transparent in the center, about 5 minutes. Serve shrimp and sauce over rigatoni.

½ (8 ounce) package spaghetti
3 tablespoons olive oil
¼ cup chopped onions
1 large clove garlic, minced
⅓ cup sliced fresh mushrooms
¼ cup chopped red bell pepper
1 pound uncooked medium shrimp, peeled and deveined
1 splash white wine
1 pinch dried oregano
½ cup heavy cream, or to taste
3 tablespoons butter
1 tablespoon all-purpose flour
1 pinch salt and ground black pepper to taste
1 tablespoon freshly grated Parmesan cheese, or to taste
1 tablespoon chopped fresh basil, or to taste

Steps:

  • Bring a large pot of lightly salted water to a boil. Cook spaghetti in the boiling water, stirring occasionally, until tender yet firm to the bite, about 12 minutes. Drain.
  • Meanwhile, heat olive oil in a skillet over medium heat. Add onions and cook until soft and translucent, about 5 minutes. Add garlic and cook until fragrant, about 30 seconds. Stir in mushrooms and bell pepper; cook until bell pepper has softened and mushrooms are lightly browned, 3 to 5 minutes. Add shrimp, white wine, and oregano. Cook until shrimp are almost cooked through and turning pink, 3 to 5 minutes.
  • Add cream and butter. Simmer, stirring constantly, for 8 minutes. Add cooked spaghetti, mix to combine, and turn off heat. If cream sauce is too thin, thicken with flour. Season with salt and pepper and sprinkle with Parmesan cheese and basil.

4 ounces uncooked angel hair pasta
8 jumbo shrimp, peeled and deveined
6 fresh asparagus spears, trimmed and cut into 2-inch pieces
1/4 cup olive oil
2 garlic cloves, minced
1/2 cup sliced fresh mushrooms
1/2 cup chicken broth
1 small plum tomato, peeled, seeded and diced
1/4 teaspoon salt
1/8 teaspoon crushed red pepper flakes
1 tablespoon each minced fresh basil, oregano, thyme and parsley
1/4 cup grated Parmesan cheese

Steps:

  • Cook pasta according to package directions. Meanwhile, in a large skillet, saute shrimp and asparagus in oil until shrimp turn pink, 3-4 minutes. Add garlic; cook 1 minute longer. Add the mushrooms, broth, tomato, salt and pepper flakes; simmer, uncovered, for 2 minutes. , Drain pasta. Add the pasta and seasonings to skillet; toss to coat. Sprinkle with cheese.

8 ounces whole wheat linguine
1 lb large shrimp (peeled and devained)
1/4 teaspoon salt
3 tablespoons extra virgin olive oil
4 garlic cloves (minced)
1 teaspoon crushed red pepper flakes
6 ounces sugar snap peas
1 cup carrot (shredded)
1/3 cup low sodium chicken broth
2 tablespoons butter
3 tablespoons fresh parsley (chopped)
1 lemon, juice of
1/8 teaspoon lemon zest (grated)
1/2 cup parmesan cheese (grated)

Steps:

  • Cook linguine according to package directions.
  • Meanwhile, sprinkle shrimp with 1/8 teaspoons of salt (reserve the rest) Set shrimp aside.
  • In large nonstick skillet, heat 2 Tbs. oil over medium-high heat. Add garlic and pepper flakes. Cook 1 minute.
  • Add shrimp and cook, turing once until no longer opaque (about 2 minutes per side).
  • Using tongs or a slotted spoon, remove shrimp from skillet and set aside, leaving the garlic and pepppers as much as you can.
  • In same skillet, heat remaining oil, peas and remaining salt. Cooking until just tender (about 4 minutes).
  • Add carrots and chicken broth. Cook 1 minute. Stir in butter. Cook till melted. Add parsley, lemon juice, pasta and shrimp.
  • Cook, tossing until heated through (about 3 minutes).
  • Sprinkle with zest then top with parmesan cheese.

We love it for its simplicity and balance of flavor (copious amounts of butter help, too!). But while it looks and tastes fancy, this dish is actually very easy to make. The white wine sauce gets a spicy finish from red pepper flakes, perfect for soaking up with good crusty bread or cooked pasta.

1 1/2 pounds jumbo shrimp, peeled, deveined and tails on (see Cook's Note)
Kosher salt and freshly ground black pepper
6 tablespoons unsalted butter
1 tablespoon grated garlic (about 3 cloves)
1 teaspoon crushed red pepper flakes
1/3 cup dry white wine
2 tablespoons freshly squeezed lemon juice from about 1 lemon
1 tablespoon chopped flat-leaf parsley leaves, plus more for garnish
Crusty bread or pasta, for serving

Steps:

  • Heat a large nonstick skillet over medium heat. Pat the shrimp dry with paper towels and sprinkle with salt and pepper.
  • Melt 2 tablespoons of the butter in the skillet. Add half the shrimp and cook until golden pink, about 2 minutes per side. Transfer the shrimp to a bowl. Melt another tablespoon of the butter in the skillet and cook the remaining shrimp.
  • Return the skillet to medium heat. Add 1 tablespoon of the butter and let it melt. Add the garlic and red pepper flakes and cook until fragrant, about 30 seconds.
  • Stir in the wine and lemon juice. Increase the heat to high and boil the liquid until it thickens slightly, about 1 minute. Remove the skillet from the heat and stir in the remaining 2 tablespoons butter and the parsley. Add the shrimp back to the skillet and toss to coat with the sauce. Transfer to a serving dish and top with more chopped parsley. Serve with crusty bread or pasta.

2 cup(s) veggies of your choice, asparagus, zuccinni , yellow squash, grape tomatoes. or use a combo of all.
1/2 teaspoon(s) lemon peel, grated
2 teaspoon(s) minced garlic
1 1/2 pound(s) shrimp, peeled and deveined
1/4 cup(s) dry white wine
2 tablespoon(s) lemon juice
1-2 tablespoon(s) prepared garlic aioli
3/4 teaspoon(s) salt
1/8 teaspoon(s) each of pepper, and cajun spices if using.
2 tablespoon(s) basil, fresh rough chopped for garnish

Steps:

  • Cook and drain spaghetti as directed on package. NOTE: reserve 1 cup of pasta cooking liquid to use ad needed to thicken the sauce.
  • Meanwhile, heat oil in large skillet and saute garlic and lemon peel about 30 seconds.
  • Add vegetables and shrimp or you may roast it in a 350 oven for 7 minutes; cook and stir over medium heat until shrimp turns pink (5 to 7 minutes). Add white wine and garlic aioli. stir to coat.

2 large carrots julliened & 2" lengths
1[8oz] zucchini julliened & 2"

1 red pepper julliened & 2" lenghts
1 1/2 lbs. CLEANED medium shrimp
2 Tbls.lemon juice
3/4 tsp salt
pepper to taste
2 Tbls. or more of torn fresh Basil leaves
2 Tbls. or more chopped fresh parsley
lemon olive oil to finish

Steps:

  • Cook spaghetti till al dente only! While spaghetti is cooking, heat olive oil in large saute pan or skillet till hot but not smoking. To pan add garlic & lemon peel for 30 seconds stirring constantly, add shrimp & vegetables & cook & stir over medium heat till shrimp turns pink on both sides.
