SHREDDED PORK ON CHEESY MASA BOATS



Shredded Pork on Cheesy Masa Boats image

Shredded pork is cooked in zesty dressing and orange juice, then topped with red onions and served over warm masa boats mixed with shredded cheese. Yum!

Yield Makes 6 servings, 2 masa boats each.

Number Of Ingredients 8

zest and 2/3 cup juice from 2 oranges, divided
1 oz. (4 tsp.) annatto paste
1/4 cup KRAFT Zesty Italian Dressing
1 cup thinly sliced red onion, divided
2 cups shredded cooked pork (about 1/2 lb.)
3/4 lb. prepared corn masa dough for tortillas
3/4 cup KRAFT Shredded Low-Moisture Part-Skim Mozzarella Cheese
1/4 cup chopped fresh cilantro

Steps:

  • Blend juice and annatto paste in blender until smooth. Heat dressing in medium skillet on medium-high heat. Add half the onions; cook and stir 3 min. Stir in meat; cook 5 min., stirring occasionally. Add juice mixture and zest; cook on medium-low heat 10 min. or until liquid is absorbed, stirring occasionally.
  • Meanwhile, heat griddle on medium heat. Shape masa into 12 balls; flatten slightly. Place 1 Tbsp. cheese in center of each ball; fold in sides of dough to completely cover cheese. Roll balls into cylinders. Place 1 cylinder between 2 pieces of plastic wrap; press gently with tortilla presser to form 4-inch oval "boat." Repeat with remaining balls. Cook masa boats on griddle 2 min. on each side or until puffed.
  • Top masa boats with meat mixture, remaining onions and cilantro.

From time to time, I cook a pork shoulder and pull the pork to be used with a few different meals. This is a recipe I came up with that may not be a traditional tamale but the ingredients meet the criteria and it is a filling comfort food. There is no reason why you couldn't substitute shredded chicken or ground beef for the pork.

1 ¼ pounds cooked pulled pork
1 (10 ounce) can red enchilada sauce
1 (4.5 ounce) can chopped green chile peppers
½ cup black beans, rinsed and drained
½ cup frozen corn
½ medium onion, diced
⅓ cup sliced black olives
1 (15 ounce) package corn bread mix
⅔ cup milk
1 egg
2 tablespoons butter, melted
3 ounces shredded Cheddar cheese

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C).
  • Combine pulled pork, enchilada sauce, green chile peppers, black beans, corn, onion, and olives in a large bowl. Spread mixture into a 9x13-inch casserole dish.
  • Combine corn bread mix, milk, egg, and butter in a separate bowl. Pour over pork mixture. Spread Cheddar cheese on top.
  • Bake in the preheated oven until cheese is melted and casserole is hot, about 35 minutes.

This is an excellent dish for backyard parties, Super Bowl (or any sports) parties and get-togethers. Serve with rolls or French or Italian bread. Goes great with corn on the cob.

3 tablespoons paprika
1 tablespoon garlic powder
1 tablespoon brown sugar
1 tablespoon dry mustard
3 tablespoons kosher salt
2 (7 pound) pork shoulder roasts
4 (20 ounce) bottles barbeque sauce

Steps:

  • Mix the paprika, garlic powder, brown sugar, dry mustard, and kosher salt together in a small bowl; spread evenly over the pork roasts. Refrigerate the seasoned roasts at least 3 hours.
  • Preheat oven to 300 degrees F (150 degrees C). Place pork roasts into a large roasting pan.
  • Bake the roasts in the preheated oven until pork is tender and shreds easily with 2 forks, 4 to 6 hours.
  • Shred the pork and place into a large pot over medium heat. Mix the meat with the barbeque sauce. Bring the mixture to a simmer and cook until the flavors have blended, about 30 minutes.

Picadillo
1 pound boneless country-style pork ribs, cut into 1-inch cubes
1 14.5- to 16-ounce can whole tomatoes in juice
2 canned chipotle chiles, chopped
2 tablespoons vegetable oil
2/3 cup chopped white onion
1 large garlic clove, chopped
1/4 cup raisins
2 teaspoons apple cider vinegar
1/2 teaspoon freshly ground black pepper
1/2 teaspoon ground cinnamon
Dough shells
2 1/2 cups freshly ground corn masa dough for tortillas (about 26 ounces), or make masa dough with 2 1/4 cups masa harina (corn tortilla mix; about 9 ounces) mixed with 1 1/2 cups warm water
2 tablespoons lard or solid vegetable shortening
1/4 cup all purpose flour
1 teaspoon baking powder
3/4 teaspoon salt
Warm water (optional)
Vegetable oil (for frying)
1/4 cup slivered almonds, toasted

Steps:

  • For picadillo:
  • Place pork in heavy medium saucepan. Add pinch of salt and enough cold water to cover by 1/2 inch. Bring to simmer over medium heat. Reduce heat to medium-low and simmer gently, uncovered, until meat is tender, about 1 hour 10 minutes. Cool meat in broth. Using slotted spoon, transfer meat to work surface; discard broth. Shred meat coarsely into large bowl.
  • Place tomatoes with juices and chiles into blender and puree. Heat oil in heavy large skillet over medium-high heat. Add onion and sauté 3 minutes. Add garlic and sauté 1 minute. Add pork and sauté until browned, about 10 minutes. Mix in raisins, vinegar, pepper, and cinnamon, then tomato puree. Simmer until picadillo is thick, stirring often, about 6 minutes. Season to taste with salt. (Can be made 1 day ahead. Cover and chill. Rewarm over low heat before using.)
  • For dough shells:
  • Combine fresh masa or masa harina mixture, lard, flour, baking powder, and salt in large bowl. Knead well, adding more warm water by tablespoonfuls as needed until dough is soft, smooth, and pliable but not sticky. Divide dough into 12 equal pieces; shape into balls. Place on sheet of foil. Cover with plastic wrap to prevent drying.
  • Flatten balls with moistened fingertips to 2 1/2x3/4-inch disks. Heat heavy large griddle or skillet over medium-high heat. Place 3 disks on griddle. Cook until outsides are light brown but insides are still soft and uncooked, about 3 minutes per side. Transfer disks to baking sheet. Repeat with remaining disks.
  • Using greased knife, cut each disk horizontally in half; turn so uncooked sides are up. Using fingertips, flatten uncooked center of each and pinch edge of soft dough between fingertips to form 1/4- to 3/8-inch-high rim.
  • Pour enough oil into large skillet to reach depth of 1/2 inch. Attach deep-fry thermometer and heat oil to 350°F to 360°F. Fry 4 dough shells at a time until lightly browned and crunchy outside but still tender inside, about 1 minute. Using slotted spoon, transfer shells to paper towels to drain. Spoon warm filling into each shell. Sprinkle with almonds and serve.
