SHREDDED RED-CHILE MEAT

Tortillas, which of course can be used in a variety of ways, are also potential tacos. This recipe for a kind of shredded chile-sauced meat - beef, pork, chicken or lamb - goes perfectly with homemade tortillas.

2 pounds boneless beef chuck, pork shoulder, lamb shoulder or chicken (thigh) meat, cut into 1-inch cubes
5 garlic cloves, peeled and lightly crushed
1 large onion, peeled and quartered
2 dried guajillo chiles, seeds and stems removed
2 dried ancho chiles, seeds and stems removed
2 bay leaves
1 tablespoon ground cumin
Salt and freshly ground black pepper
Cayenne

Steps:

  • In a large pot or Dutch oven, combine all the ingredients except the cayenne. Add water to cover, and bring to a boil, skimming off any foam that comes to the surface. Partly cover, and adjust the heat so that the mixture bubbles steadily; cook until the meat is very tender, 1 to 2 hours
  • Transfer the meat to a bowl, and let it cool, then shred it with your fingers. Discard the bay leaves, and transfer the garlic, onion and chiles to a blender along with a splash of the cooking liquid. Blend until smooth. Add the sauce to the meat, and toss. Taste and adjust the seasoning, adding a little cayenne if you want it spicier; you may want to overseason the meat slightly if you're using it as a filling. Use, or store in the fridge for up to a week, or in the freezer for up to a few months.

CRISPY CHILLI BEEF

Perfect crispy strips of beef in a tangy spicy sauce. This is my favourite dish from the Chinese takeaway, so it has a lot to live up to!

360 g ¾ lb thin cut sirloin steaks (- (approx 3 thin steaks) cut into thin strips *Note1)
1 small egg
4 tbsp cornflour ((cornstarch))
¼ tsp salt
¼ tsp black pepper
1/8 tsp white pepper
4 ½ tbsp sunflower oil (divided)
1 medium onion (peeled and sliced into thin strips)
1 red chilli ( - finely sliced- discard the seeds if you don't like it too hot)
1 tsp minced ginger
3 garlic cloves (- peeled and minced)
2 tbsp rice vinegar
3 tbsp dark soy sauce
2 tbsp tomato puree ((tomato paste))
6 tbsp caster sugar (or superfine sugar)
2 tbsp tomato ketchup
2 tbsp sweet chilli sauce (I use Thai-style)

Steps:

  • Place the steak strips in a bowl and add the egg. Mix together to thoroughly coat the steak in the egg.
  • Add the 4tbsp cornflour, ¼ tsp each of salt and pepper and 1/8 tsp of white pepper.
  • Toss together to coat the steak. It will be a sticky mixture.
  • Heat 3 tbsp of the oil in a large frying pan (skillet) or wok over a high heat until very hot.
  • You will probably need to work in two batches, so when the oil is hot, add in half the beef - a strip at a time - and spread it out.
  • Fry the steak until dark brown and crispy. Try not to move the meat around too much as this reduces the amount of crispiness you get. It generally takes about 5 or 6 minutes to crisp up the beef, with about 3 or 4 stirs during that time.
  • Using a slotted spoon or tongs, remove the beef from the pan and place in a bowl lined with kitchen roll to soak up excess fat.
  • Add a further tablespoon of oil and repeat - cooking the second batch of beef and then placing in the bowl with the first batch.
  • Once you've removed all the beef from the pan, add the remaining ½ tbsp of oil to the pan and turn the heat down to medium.
  • Add in the sliced onion and cook for 2 minutes until slightly softened.
  • Add in the finely chopped chilli, 1 tsp minced ginger and 3 minced cloves of garlic and cook whilst stirring for 30 seconds.
  • Add the 2 tbsp rice vinegar, 3tbsp soy sauce, 2 tbsp tomato puree, 6 tbsp sugar, 2 tbsp tomato ketchup and the 2 tbsp sweet chilli sauce to the pan.
  • Turn up the heat and let it bubble for a couple of minutes until the sauce starts to reduce a little.
  • Add the beef back in, give it a stir and heat through for 1-2 minutes - until the beef is hot.
  • Serve with rice or noodles.

Combine remaining brown sugar and the next 6 ingredients; coat beef with mixture., In a large skillet, heat oil over medium-high heat; brown beef, 1-2 minutes on each side. Transfer to slow cooker; pour enchilada sauce over beef. Cook, covered, on low until beef is tender, 7-9 hours. Remove beef; shred meat with 2 forks. Return to slow cooker; heat through. ¼ cup water
1 ½ cups beef broth
3 tablespoons red wine vinegar
2 tablespoons chili powder
1 teaspoon ground cumin
4 (8 inch) flour tortilla
3 tablespoons butter, melted
1 cup salsa
½ cup shredded Monterey Jack cheese
½ cup sour cream

Steps:

  • Place beef in a Dutch oven over medium heat. Pour in water. Cover, and cook for 30 minutes. Remove cover, and cook until liquid has evaporated, and beef is well browned, about 10 minutes. In a medium bowl, combine beef broth, red wine vinegar, chili powder and cumin. Pour over beef. Cover, and cook until meat is very tender, and pulls apart easily, about 2 hours. Allow to cool, then shred and mix with pan juices.
  • Preheat oven to 500 degrees F (260 degrees C).
  • Brush both sides of each tortilla with melted butter. Spoon shredded beef filling down center of each tortilla. Fold ends over filling, then fold sides to center to make a packet. Place chimichangas, seam side down, in a 9- by 13-inch baking pan.
  • Bake in preheated oven for 8 to 10 minutes, or until golden brown. Serve with shredded cheese, sour cream and salsa.

I use it often for parties and have guests create their own tacos. After it's ready, keep the meat warm in a crockpot. From the Woman's Day Cookbook. Cook time includes time for the meat to stand and become cool enough to shred.

5 lbs boneless beef chuck roast, about
2 bay leaves
3 cups beef broth
1/3 cup red wine vinegar
5 tablespoons chili powder
1 1/2 tablespoons minced garlic
2 teaspoons ground cumin
2 teaspoons dried oregano leaves, crushed
1 1/2 cups finely chopped onions
1 (16 ounce) can crushed tomatoes
2 (4 ounce) cans diced green chilies

Steps:

  • Trim visible fat from roast and tie it with string to hold the meat together.
  • In a large (at least 5 quart) pot or Dutch oven,, mix the beef, 1 cup of water and the bay leaves.
  • Bring to a boil, then reduce to medium low.
  • Cover and simmer for half an hour, turning the beef twice.
  • While the beef simmers, mix the broth, vinegar, chili powder, garlic, cumin and oregano.
  • Uncover the pot, increase the heat to high, and boil for 5 minutes.
  • The liquid in the pot will reduce to about two tablespoons of a thick, glazed sauce.
  • Turn the meat with a fork to coat.
  • Add the spice and broth mixture to the pot, and bring to a boil, then reduce heat to a simmer.
  • Cover and simmer for 1 1/2 hours, turning the meat twice.
  • Add the onions and tomatoes.
  • Cover and simmer 1 hour more, or until the meat is fork tender and shreds easily.
  • Remove the pot from the heat.
  • Take out the meat and put it on a big cutting board.
  • Cover it with foil and let it stand for 45 minutes so it gets cool enough to handle.
  • While the meat's cooling, skim the fat from the sauce and remove the bay leaves.
  • Bring the sauce to a gentle boil, and boil it for about 15 minutes-- or until it's reduced by almost half.
  • Take the pot off the heat.
  • Now, back to the beef.
  • Using your fingers or two forks, pull it into bite-sized shreds.
  • Stop sneaking bites!
  • Add the meat and green chilies to the sauce in the pot.
  • Stir until the meat is evenly moistened.

600ml beef stock
2 tsp ground cumin
2 tsp ground coriander
3 garlic cloves , finely chopped
300ml passata
100g chipotle chilli paste (or tomato purée if you don't want it at all spicy)
1.5 kg piece braising beef
2 x 400g cans black beans or kidney beans, drained but not rinsed
1 lime , juiced
small bunch coriander , chopped
8 large flour tortillas
soured cream or plain yogurt, lime wedges, diced avocado or guacamole, finely sliced red onion, sliced red chilli, sliced radishes, chopped tomato, crumbled feta or grated mild cheddar

Steps:

  • Heat oven to 170C /150C fan/gas 4. Tip the beef stock, spices, garlic, passata and chilli paste (or tomato purée, if using) into a large flameproof casserole dish and season. Place on a medium heat, bring to a simmer, then add the beef and coat in the sauce. Cover and braise in the oven for 5-6 hrs, or until the beef is really tender. Remove from the oven and leave to rest for around 30 mins.
  • Using two forks, shred the beef into the sauce. Until this point, the dish can be prepared up to three days ahead - the flavours will improve over time. To reheat, stir in the beans and place on a low heat, then squeeze in the lime juice and keep warm on a low heat or in a low oven. Stir through the coriander just before serving.
  • To make the taco bowls, heat oven to 190C/170C fan/ gas 5. Brush each tortilla with a little oil, then tuck into a small ovenproof bowl or pudding basin and hold in place with a ball of foil. Cook for 8-12 mins until crisp. This can be done in batches if needed. If cooking ahead, leave to cool and keep in a large airtight container overnight. To serve, half-fill the tacos with the red cabbage & pickled chilli slaw, top with the chilli and sprinkle with your choice of toppings.

Ditch the takeaway and whip up this Chinese flash-fried steak with a sweet gingery sauce and red peppers

350g thin-cut minute steak, very thinly sliced into strips
3 tbsp cornflour
2 tsp Chinese five-spice powder
100ml vegetable oil
1 red pepper, thinly sliced
1 red chilli, thinly sliced
4 spring onions, sliced, green and white parts separated
2 garlic cloves, crushed
thumb-sized piece ginger, cut into matchsticks
4 tbsp rice wine vinegar or white wine vinegar
1 tbsp soy sauce
2 tbsp sweet chilli sauce
2 tbsp tomato ketchup
cooked noodles, to serve (optional)
prawn crackers, to serve (optional)

Steps:

  • Put 350g thin-cut minute steak strips in a bowl and toss in 3 tbsp cornflour and 2 tsp Chinese five-spice powder.
  • Heat 100ml vegetable oil in a wok or large frying pan until hot, then add the beef and fry until golden and crisp.
  • Scoop out the beef and drain on kitchen paper. Pour away all but 1 tbsp oil.
  • Add 1 thinly sliced red pepper, ½ thinly sliced red chilli, sliced white ends of 4 spring onions, 2 crushed garlic cloves and thumb-sized piece ginger, cut into matchsticks, to the pan. Stir-fry for 3 mins to soften, but don't let the garlic and ginger burn.
  • Mix the 4 tbsp rice wine vinegar or white wine vinegar, 1 tbsp soy sauce, 2 tbsp sweet chilli sauce and 2 tbsp tomato ketchup in a jug with 2 tbsp water, then pour over the veg.
  • Bubble for 2 mins, then add the beef back to the pan and toss well to coat.
  • Serve the beef on noodles with prawn crackers, if you like, scattered with the remaining ½ sliced red chilli and sliced green parts of the spring onions.

These are just like the tamales my Abuelita used to make for special occasions. This recipe makes a lot, but if you're going to go to all the trouble of making tamales from scratch, you might as well have a party! You will need butchers' twine and a large pot with a steamer basket to make these. May be frozen up to 6 months in heavy-duty resealable plastic bags. To reheat, thaw in refrigerator and then steam or microwave until heated through.

4 pounds boneless chuck roast
4 cloves garlic
3 (8 ounce) packages dried corn husks
4 dried ancho chiles
2 tablespoons vegetable oil
2 tablespoons all-purpose flour
1 cup beef broth
1 teaspoon cumin seeds
1 teaspoon ground cumin
2 cloves garlic, minced
2 teaspoons chopped fresh oregano
1 teaspoon red pepper flakes
1 teaspoon white vinegar
salt to taste
3 cups lard
1 tablespoon salt
9 cups masa harina

Steps:

  • Place beef and garlic in a large pot. Cover with cold water and bring to a boil over high heat. As soon as water boils, reduce heat to a simmer and cover pot. Let simmer for 3 1/2 hours, until beef is tender and shreds easily. When beef is done, remove from pot, reserving 5 cups cooking liquid and discarding garlic. Allow meat to cool slightly, and shred finely with forks.
  • Meanwhile, place corn husks in a large container and cover with warm water. Allow to soak for 3 hours, until soft and pliable. May need to weight down with an inverted plate and a heavy can.
  • Toast ancho chiles in a cast iron skillet, making sure not to burn them. Allow to cool and then remove stems and seeds. Crumble and grind in a clean coffee grinder or with a mortar and pestle.
  • Heat oil in a large skillet. Mix in flour and allow to brown slightly. Pour in 1 cup beef broth and stir until smooth. Mix in ground chiles, cumin seeds, ground cumin, minced garlic, oregano, red pepper flakes, vinegar and salt. Stir shredded beef into skillet and cover. Let simmer 45 minutes.
  • Place lard and salt in a large mixing bowl. Whip with an electric mixer on high speed until fluffy. Add masa harina and beat at low speed until well mixed. Pour in reserved cooking liquid a little at a time until mixture is the consistency of soft cookie dough.
  • Drain water from corn husks. One at a time, flatten out each husk, with the narrow end facing you, and spread approximately 2 tablespoons masa mixture onto the top 2/3 of the husk. Spread about 1 tablespoon of meat mixture down the middle of the masa. Roll up the corn husk starting at one of the long sides. Fold the narrow end of the husk onto the rolled tamale and tie with a piece of butchers' twine.
  • Place tamales in a steamer basket. Steam over boiling water for approximately one hour, until masa is firm and holds its shape. Make sure steamer does not run out of water. Serve immediately, allowing each person to unwrap their own tamales. Allow any leftovers (still in husks) to cool, uncovered, in the refrigerator.
