Mexican Shredded Chicken Soup image

A fantastically flavorful and slightly spicy Mexican soup made with shredded chicken and black beans. I usually make this in the morning and let it simmer all day to let the flavors blend. Optional toppings: avocado, tortilla chips, green onion, sour cream, and shredded cheese.

1 tablespoon olive oil
1 cup chopped onion
3 cloves garlic, minced
1 (28 ounce) can diced tomatoes
3 teaspoons chili powder
1 teaspoon ground cumin
1 teaspoon dried oregano
1 (32 ounce) container chicken broth
2 cups water
2 (15 ounce) cans black beans, drained
1 (15 ounce) can hominy
½ pound shredded cooked chicken
¼ cup chopped fresh cilantro
1 medium jalapeno pepper, seeded and minced

Steps:

  • Heat oil in a skillet over medium heat; stir in onion and garlic. Cook and stir until the onion has softened and turned translucent, about 5 minutes.
  • Add tomatoes, chili powder, cumin, and oregano. Stir in chicken broth and water; bring to a boil. Reduce to a simmer and cook for 5 to 10 minutes.
  • Add black beans, hominy, chicken, cilantro, and jalapeno pepper. Simmer until heated through, at least 10 minutes.

Bill's Creamy Shredded Chicken Soup image

This is a full-flavored, rich, and creamy shredded chicken soup recipe that is not only good as a dish base, but just plain good on its own. No added salt, and only a small amount of low-sodium chicken broth. Garnish with parsley and Cheddar cheese.

3 tablespoons vegetable oil, or more to taste
¼ cup finely chopped onion
½ teaspoon finely chopped fresh garlic
2 tablespoons all-purpose flour
4 cups skim milk
2 cups shredded cooked chicken
¼ cup low-sodium chicken broth
2 tablespoons reduced-fat sour cream
1 ½ teaspoons salt-free seasoning blend (such as Mrs. Dash®)
½ teaspoon freshly ground black pepper
½ teaspoon garlic powder
½ teaspoon celery seed
2 cups cubed cooked chicken
1 teaspoon cornstarch, or as needed

Steps:

  • Heat oil in a 3- to 4-quart saucepan over medium heat. Add onion and cook until translucent, about 5 minutes. Add garlic and cook until fragrant, about 1 minute. Gradually stir in flour to form a paste. Slowly add milk, mixing continually. Simmer for 10 minutes.
  • Add shredded chicken, chicken broth, sour cream, salt-free seasoning blend, pepper, garlic powder, and celery seed; bring to a rolling boil. Reduce heat and simmer for 20 to 25 minutes.
  • Stir in cubed chicken and heat for 10 minutes. Add cornstarch and thicken to desired consistency. Adjust seasonings.

1 teaspoon olive oil
½ medium onion, chopped
2 cloves garlic, chopped
4 cups water
2 (4 ounce) skinless, boneless chicken breast halves
2 cubes chicken bouillon
1 tablespoon dried parsley
1 ½ teaspoons onion powder
½ teaspoon ground black pepper
½ teaspoon garlic powder
1 (15 ounce) can black beans, rinsed and drained
1 (14.5 ounce) can diced tomatoes
1 (8 ounce) jar salsa
½ cup frozen corn
2 teaspoons chili powder

Steps:

  • Heat oil in a large pot over medium heat; stir in onion and garlic. Cook and stir until the onion has softened and turned translucent, about 5 minutes. Add water, chicken, bouillon cubes, parsley, onion powder, pepper, and garlic powder; bring to a boil.
  • Reduce heat and simmer until chicken is no longer pink in the center and the juices run clear, about 1 hour. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).
  • Remove chicken and shred with 2 forks. Return to the pot, along with black beans, tomatoes, salsa, corn, and chili powder. Return to a simmer and cook for 30 minutes.

This recipe was given to me in 1981 by a famous Chinese Cook. A very light but tasty broth like soup.

4 ounces cooked chicken breasts, shredded
1 teaspoon tapioca starch
1 tablespoon light soy sauce
1 teaspoon Chinese wine
5 cups water
4 dried Chinese mushrooms, soaked and shredded
1/4 cup bamboo shoot, shredded
1 tablespoon chopped green onion
1/4 teaspoon shredded fresh gingerroot
1 tablespoon chicken soup base or 1 chicken bouillon
1 teaspoon salt
1 teaspoon granulated sugar
1 tablespoon dark soy sauce
4 drops sesame seed oil
1/8 teaspoon white pepper
1/4 teaspoon Accent seasoning or 1/4 teaspoon msg (optional)
2 tablespoons tapioca starch
1/3 cup water

Steps:

  • Cook chicken breasts on a grill until just done, about 3 to 4 minutes.
  • Shred chicken and place in a mixing bowl.
  • In a small bowl, mix together 1 teaspoon of tapioca starch, light soy sauce and Chinese cooking wine.
  • Pour mixture over shredded chicken, mix well and marinate for 15 minutes.
  • In a small bowl, soak Chinese mushrooms until soft.
  • Shred or cut mushrooms very thin.
  • In a large saucepan, add 5 cups of water; bring to boil.
  • Add marinated chicken and marinate, shredded bamboo shoots, chopped green onion, shredded ginger root, and cook for 5 minutes.
  • Add chicken soup base, salt, sugar, dark soy sauce, sesame seed oil, white pepper and Accent.
  • Cook for 3 minutes.
  • In a small bowl, mix together tapioca starch and 1/3 cup water until smooth.
  • While soup is still boiling, add tapioca starch mixture to soup, stirring constantly until soup thickens slightly.

3 (32 ounce) cartons low-sodium chicken broth
2 cups shredded cooked chicken
1 cup diced carrots
1 medium sweet potato, peeled and diced
1 (6 ounce) package uncooked long grain and wild rice mix, with seasoning packet
1 large bay leaf
½ cup grated sharp Cheddar cheese

Steps:

  • Heat oil in a large pot over medium-high heat. Cook and stir onion and garlic in the hot oil until tender, about 5 minutes.
  • Stir in broth, chicken, carrots, sweet potato, rice and seasoning packet, and bay leaf; bring to a boil. Reduce heat to low, cover, and simmer until rice is cooked and vegetables are tender, about 25 minutes.
  • Remove bay leaf. Ladle into bowls and serve with grated Cheddar sprinkled on top.
