Shredded Beef with peppers and onions image

This is just one of the many dishes I make using shredded beef that comes from making homemade beef stock.

Number Of Ingredients 11

4 c shredded beef
1 red bell, and green bell, sliced
1 c mushrooms, sliced, opt
1 tsp ea. of crushed black pepper and granulated garlic
BROWN GRAVY
3 c beef stock
1 c water
1/4 Tbsp cornstarch
1/2 tsp ea. black pepper and coarse sea salt
1 tsp worcestershire sauce
1/4 tsp kitchen bouquet

Steps:

  • 1. Prepare your favorite mashed potato recipe. (Can also use rice or pasta).
  • 2. Add a little olive oil (2 tablespoons) to a skillet and simmer peppers and onions on low heat till tender. If using fresh mushrooms, add about the last 5 minutes of cooking time. Add salt, pepper and granulated garlic. Heat together for about 5 min. Remove from pan.
  • 3. Heat 3 c. of beef broth. Mix together 1 c of cold water mixed with 1/4 c of cornstarch (make sure all lumps are removed), add to hot broth with 1 tsp. of worcestshire sauce, 1/4 tsp black pepper, and 1/2 tsp. coarse sea salt. Add 1/4 tsp. of Kitchen Bouquet for a darker, richer, color. Simmer till thickened.
  • 4. After gravy has thickened, return peppers and shredded beef back to gravy. Mix well. Serve over mashed potatoes, rice or pasta.

PEPPERONCINI AND SHREDDED BEEF

3 lbs boneless beef roast (chuck, cross rib, rump)
1 (10 ounce) jar pepperoncini peppers
2 ounces Lipton Onion Soup Mix
1 cup water
3 cups shredded mozzarella cheese
6 French rolls

Steps:

  • Place all ingredients in crockpot and cook on low for 7-10 hours.
  • Once roast is falling apart, remove roast and shred in a large bowl.
  • Skim out pepperoncinis and add to the shredded roast.
  • Reserve the au jus liquid.
  • Split rolls in half and place on a cookie sheet in oven to toast 3-5 minutes, remove from oven.
  • Place shredded roast and pepperoncini( about a cup) on one half of roll and 1/2 cup shredded cheese on other half.
  • Put back on oven to melt cheese.
  • Pour au jus liquid into individual cups for dipping.
  • Serve.

I don't remember where the exact recipe came from. I think maybe one of the little Betty Crocker books you see at the checkout stand. I did change a couple things to suit our family's tastes. Everyone likes the flavors here and it's fairly quick to make. The longest part is cutting the meat. If the meat is partially frozen - it makes the job easier. Yield is approximate.

1 lb boneless beef sirloin or 1 lb round steak
1 tablespoon cornstarch
2 teaspoons vegetable oil
1/2 teaspoon salt
1/4 teaspoon white pepper
2 medium bell peppers
3 green onions
2 teaspoons cornstarch
1 teaspoon water
2 teaspoons soy sauce
1/2 teaspoon sesame oil
3 tablespoons vegetable oil
1 teaspoon ground ginger

Steps:

  • Trim fat from beef steak.
  • Cut beef into very thin strips.
  • Toss beef, 1 TBSP cornstarch, 2 tsp oil, the salt and pepper in ziploc bag. Refrigerate at least 30 minutes.
  • Cut bell peppers into thin strips.
  • Cut green onions into 1 inch pieces.
  • Mix 2 tsp cornstarch, water, soy sauce and sesame oil. Set aside.
  • Heat skillet or wok until very hot.
  • Add 3 TBSP vegetable oil; rotate skillet to coat bottom.
  • Add beef and ginger. Stir-fry 1 minute or until meat is browned.
  • Add bell peppers; stir-fry 1 minute.
  • Stir in cornstarch mixture; cook and stir 15 seconds or until thickened.
  • Stir in green onions.
  • Serve over hot rice.

2/3 lb beef flank steak
1 1/2 teaspoons rice wine vinegar
1/2 teaspoon salt
1 tablespoon vegetable oil
1 tablespoon sesame oil
1/2 teaspoon baking soda
3 medium green peppers
1/2 cup vegetable oil
1 tablespoon minced fresh gingerroot
1/3 cup green onion, sliced
1/4 teaspoon sugar
1 teaspoon salt

Steps:

  • Using a sharp knife, slice beef across grain and at an angle into thin strips.
  • Combine marinade ingredients in a medium bowl.
  • Add beef shreds, mix well.
  • Let stand about 15 minutes.
  • Slice green peppers into thin strips.
  • Heat 5 T oil in a wok over high heat 1 minute.
  • Stir fry marinated beef for 10 seconds.
  • Remove beef, draining well over wok and reduce heat to medium.
  • Stir fry ginger root and freen onions 1 minute.
  • Add green pepper shreds, sugar and salt.
  • Stir fry for 2-3 minutes.
  • Add cooked beef.
  • Mix well and serve immediately.

3 lbs beef stew meat, cut into 1 inch cubes
3 medium green peppers, diced
2 large onions, diced
1 (6 ounce) can tomato paste
1/2 cup packed brown sugar
1/4 cup cider vinegar
3 tablespoons chili powder
2 teaspoons salt
2 teaspoons Worcestershire sauce
1 teaspoon ground mustard
14 sandwich buns, split

Steps:

  • In a slow cooker, combine the beef, green peppers and onions.
  • In a small bowl, combine tomato paste, brown sugar, vinegar, chili powder, salt, worcestershire sauce and mustard.
  • Stir into meat mixture.
  • Cover and cook on high for 7-8 hours or until meat is very tender.
  • Skim fat from cooking juices.
  • Shred beef using two forks.
  • With a slotted spoon place about 1/2 cup beef mixture on each bun and serve.

A good way to use up that remaining roast or beef bottom round from the night before. It's just a quick and delicious way to deal with those leftovers.

2 cups shredded cooked beef
1 tablespoon vegetable oil
1 -2 garlic clove
1 cup barbecue sauce (Sweet Baby Ray's)
8 ounces monterey jack pepper cheese
1 yellow onion
1 green bell pepper
1 red bell pepper
4 ciabatta

Steps:

  • Shred by hand all the leftover Beef and set aside.
  • Dice up garlic, onion and peppers and Set aside.
  • Heat up a skillet and place 1 tbsp oil until hot.
  • Add minced garlic and cook for 30 seconds.
  • Add the shredded Beef and heat through.
  • Turn down the heat and add BBQ sauce, to coat. (You can add a little or a lot to your desired amount). Allow to simmer on low.
  • In a separate pan saute the onions and peppers until soft and translucent.
  • Prepare the sandwiches. Open the Ciabatta Bread and toast with pepper jack cheese in the oven until cheese is melted. Place the shredded beef mixture on the other half and place some of the sauteed onions and peppers on top. Serve warm, with as much sauce and cheese as desired. Enjoy!
