- Cut roast in half; place in a 5-qt. slow cooker. Top with onion. Combine the next eight ingredients; pour over roast. - Cut roast in half and place in a 3- or 4-qt. slow cooker. In a small bowl, combine the ketchup, brown sugar, barbecue sauce, Worcestershire sauce, mustard, liquid smoke if desired and seasonings. Pour over beef., Cover and cook on low for 8-10 hours or until meat is tender. Remove meat; cool slightly. Skim fat from cooking liquid., Shred beef with two forks; return to the slow cooker. Cover and cook for 15 minutes or until heated through. Using a slotted spoon, place 1/2 cup on each bun. Serve with onions, pickles and jalapenos if desired. SHREDDED, SAUCY BBQ CHICKEN SAMMIES

- Bring liquids to a simmer in a small to medium skillet and slide in the chicken breast meat. Gently poach the chicken 10 minutes, turning once about after 5 minutes.
- While chicken poaches, heat a second medium skillet over medium low heat. To hot skillet, add extra-virgin olive oil and garlic and onion and gently saute until chicken is ready to come out of poaching liquids. Combine the next 5 ingredients in a medium bowl and reserve.
- When the chicken has cooked through, add 2 ladles of the cooking liquid to the bowl, combining with the sauces, spices, brown sugar and tomato paste. Once the liquids and seasonings are combined, remove chicken, slice it, and transfer to the medium bowl. Using 2 forks, shred the chicken and combine with the liquids. Add the shredded chicken to the onions and garlic and combine well. Simmer together 5 to 10 minutes, using extra cooking liquids to make your chicken as saucy as you like.
- Combine sour and sweet pickles in a small bowl. Split rolls and fill with scoops of shredded chicken. Top with pickle relish and serve.
SHREDDED BEEF SAMMIES WITH GRILLED ONIONS & PEPPERS
A good way to use up that remaining roast or beef bottom round from the night before. It's just a quick and delicious way to deal with those leftovers.

- Shred by hand all the leftover Beef and set aside.
- Dice up garlic, onion and peppers and Set aside.
- Heat up a skillet and place 1 tbsp oil until hot.
- Add minced garlic and cook for 30 seconds.
- Add the shredded Beef and heat through.
- Turn down the heat and add BBQ sauce, to coat. (You can add a little or a lot to your desired amount). Allow to simmer on low.
- In a separate pan saute the onions and peppers until soft and translucent.
- Prepare the sandwiches. Open the Ciabatta Bread and toast with pepper jack cheese in the oven until cheese is melted. Place the shredded beef mixture on the other half and place some of the sauteed onions and peppers on top. Serve warm, with as much sauce and cheese as desired. Enjoy!

- In a large bowl, combine ketchup, brown sugar, red wine vinegar, Dijon-style mustard, Worcestershire sauce, and liquid smoke. Stir in salt, pepper, and garlic powder.
