SLOW COOKER CACTUS CHILI

Steps:

• Combine ground beef and onion in a large skillet over medium heat; cook and stir until beef is browned, about 5 minutes.
• Transfer beef and onion to a slow cooker. Stir in diced tomatoes, black beans, corn, nopales, tomato paste, chili powder, sugar, chipotle pepper, garlic powder, cumin, salt, and pepper.
• Cook on Low until flavors combine, about 4 hours.

CACTUS CHILI

Steps:

• Brown the meat along with the onion and garlic. Drain off the fat. Combine all the ingredients in the slow cooker. Mix thoroughly. Cook on low for 7 to 8 hours. Serve with sour cream, chopped green onions, grated sharp Cheddar and crushed red pepper flakes alongside.

EASY WHITE CHILI

Steps:

• Heat the oil in a large pot over medium heat. Add the onions and garlic and saute for 10 minutes, or until onions are tender. Add the chicken, chicken broth, green chile peppers, cumin, oregano and cayenne pepper and bring to a boil.
• Reduce heat to low and add the beans. Simmer for 20 to 30 minutes, or until heated thoroughly. Pour into individual bowls and top with the cheese.
