Grilled steak with a cherry, vanilla, and wine sauce. Fresh cherries could be replaced with dried cherries, rehydrated in wine sauce.

2 (8 ounce) New York strip steaks
2 tablespoons Worcestershire sauce
salt and pepper to taste
¾ cup red wine
1 pint fresh cherries, pitted and halved
1 tablespoon white sugar
1 tablespoon vanilla extract
½ teaspoon cornstarch
¼ cup water

Steps:

  • Preheat an outdoor grill for high heat, and lightly oil the grate. Rub the New York steaks on both sides with the Worcestershire sauce, then season to taste with salt and pepper.
  • Cook the steaks on the preheated grill until they are beginning to firm, and are hot and slightly pink in the center, 6 to 7 minutes per side. An instant-read thermometer inserted into the center should read 140 degrees F (60 degrees C). Once the steaks are done, cover them with two layers of aluminum foil, and allow to rest in a warm area for 10 minutes.
  • While the steaks are cooking, prepare the cherry sauce by bringing the red wine to a boil in a saucepan over medium-high heat; boil for 5 minutes. Stir in the cherries, sugar, and vanilla extract. Return to a boil, then reduce heat to medium, and simmer until the cherries are tender, 5 to 7 minutes. Dissolve the cornstarch in the water, then stir into the simmering cherry sauce. Cook for a few minutes until the cherry sauce thickens. Pour the sauce over the steaks to serve.

3 tablespoons olive oil
1 Spanish onion, finely chopped
4 cloves garlic, finely chopped
1 tablespoon red pepper flakes
3 cups canned plum tomatoes, pureed
2 tablespoons tomato paste
1 cup dark brown sugar
2 tablespoons honey
1 tablespoon chopped fresh oregano leaves
2 tablespoons chopped fresh parsley leaves
2 tablespoons chopped fresh basil leaves
Salt and freshly ground black pepper
2 porterhouse steaks, about 1 1/2-inches thick
Cherry Pepper-Tomato in Vinaigrette, recipe follows
1/4 cup red wine vinegar
1 clove garlic, finely chopped
Salt and freshly ground pepper
1/2 cup olive oil
1/2 pound cherry peppers, stemmed, seeded and roasted or prepared (in jar), sliced
2 piquillo peppers, sliced
1/2 pound cherry tomatoes, sliced in 1/2
1/4 cup chopped flat-leaf parsley

Steps:

  • Heat oil in a large saucepan over medium-high heat. Add onions and cook until soft, about 4 to 5 minutes. Add garlic and red pepper flakes and cook for 1 minute. Add remaining ingredients, reduce heat to medium-low and cook until thickened, about 35 to 40 minutes.
  • Heat grill to high. Season steaks on both sides with salt and pepper. Grill, on 1 side, until crusty and slightly charred, about 4 to 5 minutes. Turn steaks over, close the hood and continue grilling for 6 to 8 minutes for medium-rare doneness. Baste with the sauce during the last few minutes. Remove from the grill and brush with more of the sauce. Let meat rest for 5 minutes, then slice into 1/4 inch thick slices and top with the Cherry Pepper-Tomato salad.
  • Whisk together vinegar, garlic and salt and pepper in a medium bowl. Slowly whisk in the olive oil. Add the peppers, tomatoes and parsley and stir to combine. Adjust seasoning and let sit 30 minutes at room temperature before serving.

2 Shell Steaks, bone- in, each 1-inch thick, about 2 pounds.
2 tablespoons olive oil
2 garlic cloves, slightly crushed
salt and pepper to taste
1 cup flour for dredging
1 1/2 tablespoons chopped parsley
1/2 cup chopped re and yellow cherry peppers
1 cup beer
1/2 cup crumbled Gorgonzola
1/3 cup chicken broth
1/4 cup cream

Steps:

  • With a smooth mallet, pound the steak until very thin ( about 1/4 - inch thick ). In a large skillet or saute pan, heat the oil over medium - high heat. Add the garlic cloves and saute for 1 minute, bring careful not to burn them Season the steaks with salt and pepper, then dredge them in flour, and shake off the excess. Add to the saute pans. Saute 4 minutes on each side. Drain off the excess oil. Add the parsley and peppers and stir with a wooden spoon. Add the beer and stir to deg-laze the pan. Add the Gorgonzola and stir into pan juices, slipping the steaks again. Simmer 2 to 3 minutes . Add the broth. Simmer for another minute and stir in the cream. Re-season with salt and pepper. Serve with the pan sauce drizzled over the top.

2 porterhouse steaks, about 16 ounces each
1/2 pound cherry peppers
2 tablespoons olive oil, plus 2 tablespoons
Salt and freshly ground pepper
1 red pepper, cored and cut into quarters
1 yellow pepper, cored and cut into quarters
1/4 cup chopped flat-leaf parsley
1/4 cup Basil Vinaigrette, recipe follows
1/2 cup fresh basil leaves
1/4 cup white wine vinegar
1 tablespoon honey
Salt and freshly ground pepper
1/2 cup olive oil

Steps:

  • Heat oil in a medium saucepan on side burners or grates of the grill. Add onion and garlic and cook until soft. Add red pepper flakes and cook for 1 minute. Add remaining ingredients, season with salt and pepper and cook until sauce has thickened, about 25 to 30 minutes.
  • Season steaks on both sides with salt and pepper. Grill until golden brown, about 4 to 5 minutes. Turn over and continue grilling for 4 to 5 minutes for medium-rare doneness. Baste with the sauce during the last few minutes. Remove from the grill and brush with more of the sauce. Let meat rest for 5 minutes then slice into 1/4-inch thick slices.
  • Preheat a grill. Preheat the oven to 400 degrees F. Toss the cherry peppers with 2 tablespoons of the olive oil in a bowl. Season with salt and pepper. Spread the peppers on a sheet pan and roast for 15 to 20 minutes, or until the skin is blistered. Set aside to cool slightly. Remove the stems and seeds from the cherry peppers and roughly chop.
  • Drizzle the red and yellow peppers with 2 tablespoons of the olive oil and season with salt and pepper. Place on the grill and cook until the skin is starting to blacken and blister. Remove from the grill and set aside to cool for 15 minutes. Roughly chop the peppers.
  • In a bowl, combine the cherry peppers, red and yellow tomatoes, parsley, and Basil Vinaigrette. Season, to taste, with salt and pepper. Serve.
  • Combine all ingredients and blend until smooth. Adjust seasoning with salt and pepper, to taste.

2 boneless 1-pound shell steaks
Salt and freshly ground black pepper
1 tablespoon fresh chopped savory, plus sprigs for garnish, or 1 teaspoon dried
1/2 tablespoon unsalted butter
1/2 tablespoon olive oil
3 large cloves garlic
1/2 pound shiitake mushrooms, stems removed
1/2 cup dry red wine
1 cup Homemade Beef Stock

Steps:

  • Rub both sides of the steaks with salt, pepper, and savory. Heat butter and oil in a large, heavy skillet over medium-high heat; add garlic cloves and steaks. Lower heat to medium, and cook steaks 4 to 6 minutes on each side for medium rare. Transfer steaks to a cutting board. Add mushrooms to the pan, raise heat to high, and saute for 2 minutes on each side. Transfer mushrooms to a small bowl.
  • Discard garlic and fat from the pan. Add red wine and stock to the pan. Reduce over high heat, scraping bottom with a wooden spoon, until 1/2 cup of sauce remains. Combine with mushrooms.
  • Cut beef crosswise into 1/4-inch-thick slices, and serve with mushroom sauce on the side.

1/4 cup dried cherries
1 cup port wine or 1 cup other sweet red wine, divided
1/4 cup black cherry juice
1 lb beef tenderloin, trimmed
butter-flavored cooking spray
1/4 teaspoon salt
1/4 teaspoon black pepper
1 tablespoon olive oil
2 tablespoons shallots, minced
1 large garlic clove, minced
1/2 cup low sodium beef broth
1/2 teaspoon dried thyme

Steps:

  • Set oven to broil.
  • Combine cherries, 1/4 cup port, and juice in a small bowl. Let stand for 30 minutes for the cherries to absorb most of the liquid.
  • Coat beef with cooking spray; sprinkle with salt and pepper. Broil 6 inches from heat for 15 minutes. Reduce heat to 375 and bake for 30 minutes or until meat thermometer reads 145 degrees. Let stand 10 minutes before slicing.
  • Heat oil in pan over medium-high heat. Add shallot and garlic; saute 1 1/2 minutes. Stir in cherry mixture, 3/4 cup port, broth, and thyme. Bring to a boil; cook 10 minutes or until reduced to 1/2 cup. Pour over steaks. Serve immediately.
  • Serving size is 1 steak with 2 tbsp sauce.

1 12-ounce bottle of dark beer
1/2 cup (packed) dark brown sugar
5 tablespoons fresh lime juice
3 tablespoons minced red onion
6 garlic cloves, chopped
2 tablespoons Worcestershire sauce
2 tablespoons whole grain mustard
2 tablespoons olive oil
1 tablespoon minced peeled fresh ginger
1/2 teaspoon hot pepper sauce
1/2 cup white wine
1 shallot, finely chopped
2 tablespoons coarsely crushed four-peppercorn mix*
1 3/4 cups chicken stock or canned low-salt chicken broth
1 3/4 cups beef stock or canned beef broth

Steps:

  • Place steaks in single layer in glass baking dish. Whisk beer, sugar, lime juice, onion, garlic, Worcestershire sauce, mustard, oil, ginger and hot pepper sauce in large bowl to blend. Pour marinade over steaks in baking dish. Cover tightly with plastic wrap and refrigerate overnight.
  • Bring white wine, chopped shallot and crushed peppercorns to boil in heavy medium saucepan; simmer until mixture is reduced by half, about 5 minutes. Add chicken stock and beef stock and boil until reduced to 2 cups, about 25 minutes. Add whipping cream and cook until sauce coats spoon, about 6 minutes. (Peppercorn sauce can be made up to 2 hours ahead. Set aside at room temperature.)
  • Prepare barbecue (medium-high heat). Remove steaks from marinade and grill to desired doneness, about 4 minutes per side for medium-rare. Transfer steaks to plates. Meanwhile, bring peppercorn sauce to simmer. Drizzle sauce over steaks.
