Shad and Roe With Tomatoes and Shallots image

2 boneless shad fillets, cut into 4 pieces crosswise
2 pairs shad roe, in 4 pieces
Salt and freshly ground pepper to taste
1/4 cup milk
1/2 cup flour for dredging
3 tablespoons corn or vegetable oil
3 tablespoons olive oil
2 tablespoons butter
6 ripe plum tomatoes (about 1 pound) cored and skinned, cut into small cubes
1 medium-size zucchini cored and cut into 1/4-inch cubes
2 tablespoons finely chopped shallots
2 teaspoons finely chopped garlic
4 tablespoons finely chopped parsley

Steps:

  • Place the fillets and the roe in a flat dish. Sprinkle with salt and pepper. Add the milk, coating the fillets and the roe.
  • Dredge the fish and the roe in the flour and remove the excess.
  • Heat the corn oil in a nonstick skillet large enough to hold the fillets skin side up and the roe in one layer. Cook the fillets and the roe over medium-high heat until crisp and brown, about four minutes, basting occasionally. Turn and cook for 2 minutes. Transfer to a warm platter and keep warm. If the pan is not large enough, cook in two segments.
  • Discard the cooking oil and wipe out the skillet. Add the olive oil and the butter. Add the zucchini and tomatoes, salt and pepper to taste. Cook over high heat about 2 minutes, shaking and tossing the skillet so that the zucchini and tomatoes cook evenly. Add the shallots and garlic. Cook about a minute more, shaking the skillet. Pour this mixture over the fish, sprinkle with parsley and serve immediately.

4 to 6 tablespoons butter
Flour to coat
1 pair shad roe ( 6 to 8 ounces)
1 teaspoon minced ginger
2 tablespoons lemon juice
Salt and freshly ground black pepper
2 tablespoons chopped parsley or chives
Lemon or lime wedges

Steps:

  • Melt butter in a skillet. While foaming is subsiding, lightly dredge roe in flour and shake off excess. Add roe and cook until lightly browned, about 4 minutes. Turn over, and brown on the other side. Remove the roe to a plate. If necessary add more butter to the skillet. Add ginger and saute for a moment. Add lemon juice and remove from heat; season with salt and pepper, add parsley or chives and spoon over shad. Serve with lemon or lime wedges.

In this quick, elegant dinner, cherry tomatoes are roasted with garlic, shallots, sherry vinegar and a drizzle of honey, turning them into a sweet and savory condiment for simple roasted fish. This versatile, year-round recipe is delicious with juicy end-of-summer tomatoes or even with a pint from the grocery store. Thick white fish such as cod or halibut work best here. 1 pint cherry tomatoes, halved
1/2 cup thinly sliced shallots (about 1 large)
2 teaspoons minced garlic (about 2 large cloves)
2 tablespoons olive oil, plus more for brushing
1 tablespoon sherry or red wine vinegar
1 teaspoon honey
1 teaspoon kosher salt, plus more to taste
1/2 teaspoon black pepper, plus more to taste
4 (6-ounce) skin-on mild white fish fillets, such as cod or halibut
1 teaspoon freshly grated lemon zest (from about 1/2 lemon)
Chopped fresh basil, for serving
Chopped fresh mint, for serving

Steps:

  • Heat the oven to 400 degrees. Place the tomatoes, shallots and garlic in a 9-by-13-inch nonreactive baking dish. In a small bowl, whisk together the olive oil, vinegar, honey, salt and pepper. Pour over the tomatoes and toss to combine. Roast until the tomatoes have collapsed and the shallots are translucent, about 15 minutes.
  • While the tomatoes roast, pat the fish dry with paper towels, brush all over with olive oil, and season generously with salt and pepper.
  • Toss the tomatoes, move them to the sides of the dish and place the fish fillets, evenly spaced, in the center. Roast until the fish is cooked through and flakes easily with a fork, 10 to 12 minutes.
  • Sprinkle the entire dish with the lemon zest, basil and mint. Serve the fish with the tomatoes, spooning any remaining juices on top.

BREADED FILLETS OF SOLE WITH TOMATOES



Breaded Fillets of Sole With Tomatoes image

4 small skinless, boneless fillets of sole or flounder
Salt to taste if desired
Freshly ground pepper to taste
4 fresh red, ripe tomatoes
1 egg, well beaten
1/4 cup melted butter
1 1/2 cups fine fresh bread crumbs
2 tablespoons corn, peanut or vegetable oil
2 tablespoons butter at room temperature
2 tablespoons finely chopped shallots
2 tablespoons tarragon vinegar
2 tablespoons finely chopped parsley

Steps:

  • Sprinkle the fillets on both sides with salt and pepper.
  • Peel the tomatoes and cut them in half crosswise. Squeeze gently to remove the seeds. Cut each tomato half into thin, half-inch slices. Set aside.
  • Beat together the egg and melted butter. Pour the mixture into a flat dish.
  • Put the bread crumbs in a flat dish.
  • Dip the fillets, one at a time, into the egg mixture to coat well.
  • As the fillets are coated with egg, dip them in the bread crumbs to coat well. Tap the the fillets with the side of a kitchen knife to help the crumbs adhere.
  • Heat the oil in a skillet, preferably Teflon-coated, until it is very hot and almost smoking. Add two fish fillets and cook 1 1/2 minutes on one side, then turn and cook the same amount on the other. Transfer the fillets to a warm serving dish.
  • Cook the second pair of fillets and transfer them to the dish.
  • Heat the two tablespoons butter in a skillet. Add the shallots, tomatoes, salt and pepper. Cook, stirring and shaking the skillet, about two minutes. Add the vinegar and toss.
  • Spoon equal portions of the tomato sauce over each fillet. Sprinkle with chopped parsley and serve.

2 boneless shad fillets with skin, about 1 1/2 pounds
2 pairs shad roe
Salt and freshly ground pepper to taste
2 tablespoons olive oil
4 tablespoons butter
3 tablespoons finely chopped shallots
2 tablespoons lemon juice
2 tablespoons finely chopped parsley

Steps:

  • Cut the shad fillets in half crosswise. Season the fillets and roe with salt and pepper.
  • Heat 1 tablespoon oil in each of two nonstick skillets and add the fillets skin side down in one pan. In the other pan add the roe and cook both over medium heat for 3 minutes, shaking the pans. Then turn the fillets and roe and cook for 3 minutes more. (It is a good idea to cover the pan with the roe while cooking to prevent splattering.)
  • Remove the fish with a slotted spatula to a warm serving plate or platter. Separate each pair of roe lengthwise. Place a half on top of each piece of shad.
  • In one of the skillets, add the butter and shallots. Cook and stir until wilted.
  • Add the lemon juice and the parsley. Cook briefly while stirring, and then pour the mixture over the fish and serve.

Dreaming of summer tomatoes - this recipe has me expanding my grape, fig & cherry tomato plans to include blacks & greens among the reds, pinks, whites, yellows & oranges. I love growing those lil buggers - they are so resilient & fruitful! Uncovered in The Washington Post whose food editors adapted it from chef Cathal Armstrong of Restaurant Eve in Old Town Alexandria. The recipe initially called for 6 grinds of black pepper... seriously, LOL! Allow for an hour to chill - recipe called for up to 4 hours but that may alter fresh garden cherry tomatoes in an ungood way. Won't matter for store bought.

1/4 cup basil leaves, chopped
2 shallots, shaved (about 3/4 cup)

1 tablespoon balsamic vinegar
1 teaspoon sea salt
black pepper, to taste
1 teaspoon sugar (optional)

Steps:

  • Combine the ingredients in a medium bowl and mix well. Cover and refrigerate at least 1 hour and up to 4 hours to allow the flavors to meld. Before serving, give the salad another good toss and adjust seasonings to taste.
