DIY SESAME STICKS RECIPE
Requiring no fancy equipment, this recipe couldn't be easier-just toss the ingredients into a bowl and stir up the dough. In this way, the cook also controls the type and amount of fats and seasonings that end up in the finished product, so you can really have some fun with it.

Steps:
- In a small bowl, combine water and oil. Stir wet ingredients into dry ingredients. Combine thoroughly, kneading any remaining bits into the dough by hand.
- Divide dough in half and wrap each in plastic, flattening into inch-thick squares. Refrigerate for 30 minutes to allow dough to firm up before rolling. Once dough has chilled, heat oven to 350°F (180°C).
- Bake for 10 minutes, then flip or roll the pieces around on the sheet so that the bottoms don't brown. Continue baking 5 to 8 minutes more, until sticks are crisp but not browning. Remove from oven and cool completely. Store in an airtight container.

Steps:
- Boil or bake yams until soft but not mushy.
- Let cool or refrigerate overnight.
- Peel and cut yams into pieces about 2 x 1/2 x 1/2.
- Roll yam sticks in sesame seeds, pressing to make seeds stick.
- Sauté in oil for one minute on each side, drain and cool.
- Serve cool or broil briefly to crisp sticks and serve hot.

- Cream the butter. Add the flour, and salt. Mix until butter is completely blended into the flour mixture.
- Blend in the egg, parmesan cheese and sesame oil. Mix until it looks like cookie dough.
- Press out on parchment paper in a 10 X 15 inch sheet pan until 1/4 inch thick and press in the sesame seeds. (Try to have a rectangle and equal thickness.).
- Use a pizza cutter, and cut into 1/2 X 1/2 inch pieces and spread out on the parchment paper so they are not touching.
- Bake at 400 degrees for 15-20 minute until golden.
SESAME CRUNCH STICKS

- In the bowl of a food processor, pulse flour, baking powder, and salt until combined. Add butter; pulse until mixture resembles coarse meal. Transfer to a medium bowl; stir in buttermilk and 1 cup sesame seeds until mixture forms a dough. Divide into quarters; wrap in plastic. Chill 20 minutes.
- Preheat oven to 350 degrees. In a small bowl, whisk together egg, sugar, and soy sauce. Transfer one piece of dough to a lightly floured work surface; roll out into a rectangle about 1/8 inch thick. Use a sharp knife or pizza wheel to cut into strips, about 3/8 inch wide and 10 inches long. Brush strips with egg mixture; sprinkle with remaining 1/4 cup sesame seeds.
- Arrange strips on a parchment-lined baking sheet. Bake until just golden, 15 to 20 minutes. Transfer to a wire rack to cool. Repeat with remaining dough.
FRIED AND CARAMELIZED SESAME-COATED YAMS
Got this one a while ago from my local newspaper but haven't tried it yet. They sound like they'd go well with an Asian-inspired dish, steak, chicken, or pork chops. *Times are just an approximation.*

- Wash the yams, pare, and cut them into bite-sized chunks.
- Heat a wok or a large, deep pan; add 4 cups of the oil and heat to 250*F.
- Deep fry the yam chunks until tender, 1-2 minutes.
- Heat another wok or pan and add the 1 Tbsp.
- oil and the sugar; cook over low heat until the sugar is melted and caramelized.
- Add the fried yams; mix well.
- Sprinkle with sesame seeds before removing to a plate.
- When serving, dip the caramelized yams in a bowl of cold water, one by one, while hot.

Steps:
- Cream the butter.
- Add flour, cayenne, salt and oregano. Mix until butter is completely blended into the flour mixture. May do in food processor.
- Blend in the egg and work dough with hands until it looks like cookie dough. Add the Parmesan cheese and blend in well.
- Divide into quarters. Divide each quarter into halves and roll out to make a long, finger- thick strand on a surface sprinkled with sesame seeds. They should be about 8 inch long.
- Divide each strand into six pieces making a dozen pieces from each quarter of dough. Place on ungreased cookie sheet.
- Bake at 400 deg. for 12-15 minute or until pale golden.
- Great hot or at room temperature
- Makes about 48.
