GRILLED ASIAN SESAME BEEF SKEWERS
Grilled beef tenderloin skewers marinated in an Asian sesame marinade. Sesame oil, soy sauce, ginger, garlic and green onions.

Steps:
- Trim the beef tenderloin of any fat and membrane. Cut into 1 inch cubes.
- Make the marinade by mixing the oils, soy sauce, sugar, garlic, ginger and chili flakes together.
- Place beef cubes in a bowl, pour the marinade over them and toss to ensure all the beef is coated in the marinade. Cover the bowl with plastic wrap and place in the fridge for at least one hour to marinate.
- Soak skewers for at least 15 minutes before adding the meat.
- When ready to grill, place the meat on the skewers.
- Grill on medium high for about 6 minutes, flipping halfway through. This will cook the beef to medium rare. Adjust the grill time for suit your desired doneness.
- Place on a serving platter. Sprinkle with sesame seeds and green onions.

- In a bowl, toss beef with 3 tablespoons dressing and soy sauce; let stand 10 minutes. Meanwhile, in a large bowl, combine pineapple, apples, chili sauce, lime juice and pepper; toss to combine., Thread beef onto four metal or soaked wooden skewers; discard remaining marinade. Grill kabobs, covered, over medium heat or broil 4 in. from heat until desired doneness, 7-9 minutes, turning occasionally; brush generously with remaining dressing during the last 3 minutes. - Cut beef into 1/4-in.-thick strips. In a large bowl, whisk the first 7 ingredients until blended. Pour 1 cup marinade into a shallow dish. Add beef; turn to coat. Refrigerate, covered, 2-8 hours. Cover and refrigerate remaining marinade., Drain beef, discarding marinade in dish. Thread beef onto 12 metal or soaked wooden skewers. Grill kabobs, covered, over medium-high heat or broil 4 in. from heat until meat reaches desired doneness (for medium-rare, a thermometer should read 135°; medium, 140°; medium-well, 145°), 4-5 minutes, turning occasionally and basting frequently using 1/2 cup of reserved marinade. , To make glaze, bring remaining marinade (about 3/4 cup) to a boil; whisk in 1/2 teaspoon cornstarch. Cook, whisking constantly until thickened, 1-2 minutes. Brush kabobs with glaze just before serving. If desired, top with sesame seeds and sliced green onions.

Steps:
- Soak bamboo skewers in water for 30 minutes.
- In a medium bowl, whisk together the soy sauce, garlic, oil, gingerroot, sugar, vinegar, sesame seeds, and pepper.
- Add steak and marinate for 30 minutes, chilled.
- Pre-cook the mushrooms by heating skillet at medium-high.
- Add olive oil, mushrooms, and rosemary.
- Cook for about 5 minutes.
- After marination, thread the screwers by alternating the steak cubes, red peppers, and partially cooked mushrooms.
- Grill the kebabs on medium-high heat for 6 minutes.
- Flip, baste with left over marinade, and cook for another 6 minutes.

- In a small bowl whisk together the soy sauce, the garlic, the oil, the gingerroot, the sugar, the vinegar, the sesame seeds, and the pepper. Thread the steak cubes loosely onto 4 of the skewers and thread the remaining skewer crosswise through the middle of each scallion so that the scallions stand parallel to one another. - In a small bowl combine all ingredients for marinade. Add steak cubes, cover, and refrigerate for at least 1 hour. Remove and set aside.
- Heat grill over medium heat. Using large metal skewers (or wood soaked skewers), add steak, onion, green pepper, red pepper, zucchini, squash, and tomato, continuing with the same pattern until you have 4 cubes of steak on your skewer (the vegetables can be arranged however you want). Repeat for all skewers.
- Spray grill with nonstick spray or brush with oil. Brush marinade over steak skewers, then place onto grill. Close grill, and cook over medium heat for about 5 minutes. Turn skewers, brush with marinade, cook an addition 4-5 minutes. Check for doneness. Continue grilling a few more minutes if you like your meat well done.
