Categories     Food & Cooking     Ingredients     Seafood Recipes

Number Of Ingredients 10

1 medium carrot (2 ounces), peeled and coarsely chopped
2 tablespoons minced fresh peeled ginger (about a 2-inch piece)
2 scallions, thinly sliced (white and green parts separated)
1 tablespoon rice vinegar
1 to 2 teaspoons toasted sesame oil
1 teaspoon tamari or soy sauce
4 tablespoons canola oil, divided
Coarse salt
1/2 cup sesame seeds, preferably mixed black and white
4 tuna steaks (each 6 to 8 ounces)

Steps:

  • In a blender, combine carrot, ginger, scallion whites, vinegar, sesame oil, tamari, 3 tablespoons canola oil, and 1 tablespoon water. Blend until smooth, scraping down sides of blender jar as necessary (add up to 1 tablespoon more water, if necessary, to adjust consistency). Season with salt.
  • Place sesame seeds on a rimmed plate. Season tuna steaks with salt, then press both sides of the steaks into seeds to coat.
  • Heat remaining tablespoon canola oil in a large skillet over medium-high heat. Cook fish in skillet 1 to 2 minutes per side for medium-rare (if steaks are particularly large, cook them in 2 batches).
  • Serve fish topped with sauce and sprinkled with reserved scallion greens.

Categories     Food & Cooking     Appetizers

Number Of Ingredients 14

2 tablespoons mirin
2 teaspoons white miso
2 teaspoons grated fresh ginger
1/3 cup carrot juice
2 tablespoons fresh orange juice
2 teaspoons low-sodium soy sauce
1 tablespoon plus 2 teaspoons distilled white vinegar
1/8 teaspoon red-pepper flakes
1/4 teaspoon sesame oil
1 scallion, green part only, thinly sliced
3 tablespoons unhulled white sesame seeds
1 tablespoon unhulled black sesame seeds
1 pound sushi-grade yellowfin tuna, cut into 4-ounce rectangular pieces
1 tablespoon safflower oil

Steps:

  • Make the dipping sauce: Combine mirin, miso, ginger, carrot juice, orange juice, soy sauce, vinegar, red-pepper flakes, and sesame oil in a small bowl, whisking until miso dissolves. Sprinkle with sliced scallion.
  • Make the tuna: Combine sesame seeds in a shallow dish. Press tuna pieces into seeds, turning to coat each side. Heat oil in a medium saute pan over medium-high heat. Add tuna, and cook each side until white seeds are golden, about 20 seconds per side. Transfer tuna to a paper-towel-lined plate for 1 minute, then cut each piece into 1/4-inch-thick slices. SESAME CRUSTED TUNA WITH JAPANESE DIPPING SAUCE

Sesame Crusted Tuna With Japanese Dipping Sauce image

Tuna steaks with a sesame seed crust served with a Japanese dipping sauce. Very easy, quick and healthy meal to prepare.

Provided by The Flying Chef

Categories     Tuna

Time 15m

Yield 4 serving(s)

Number Of Ingredients 10

olive oil
4 tuna steaks
sesame seeds (I haven't listed quantity as it will vary for size of steaks, but enough to cover one side of tuna)
18 g paste miso
3 tablespoons mirin
3 tablespoons sake
2 tablespoons sugar
2 tablespoons rice vinegar
2 teaspoons Japanese soy sauce
1/4 teaspoon wasabi

Steps:

  • The above ingredients can be found in a lot of regular grocery stores. But you will find them in just about any Asian grocery store. There are imitation mirins out there, which are without alcohol they are fine but tend to be sweeter I would use less if buying these.
  • Cover one side of tuna completely with sesame seeds and place steaks back in fridge.
  • Combine all the other ingredients in a saucepan heat until blended and sugar has dissolved. Leave on low heat to keep warm.
  • Heat some olive oil in a fry pan, place Tuna sesame seed side down cook for 4 minutes turn over and cook on the other side for a further 4 minutes. Tuna should be pink in the middle so vary cooking time for how thick the cut is. You can cook it all the way through if preferred, but the tuna will be a lot drier and tough.
  • Serve tuna on plate with dipping sauce in separate small serving bowls.
  • I served mine with spinach topped with a roasted sesame seed dressing.

PAN-SEARED TUNA STEAKS WITH GINGERY DIPPING SAUCE

Pan-Seared Tuna Steaks with Gingery Dipping Sauce image

This recipe was inspired by a grilled tuna steak that I ordered at a sleepy roadside restaurant in Vietnam. Working tableside on a small charcoal brazier, the young waiter cooked a half-inch-thick tuna steak with care and patience. Back in my home kitchen, I decided to adapt the recipe to the stove top. I find that pan searing allows greater control than grilling over the doneness of the lean, meaty steaks, yielding juicier results. There are no tricks here. The tuna steaks are coated with the same seasonings used for Grilled Shrimp and Squid (page 111), and the gingery dipping sauce offers a good contrast to the richness of the fish. Serve with Chicken Dumpling and Chrysanthemum Leaf Soup (page 61), boiled gailan (Chinese broccoli) or regular broccoli (which are both good with the dipping sauce), and rice.

Yield serves 4 with 2 or 3 other dishes

Number Of Ingredients 6

3 tuna steaks, each 1/2 pound and about 1 inch thick
1/2 teaspoon sugar
1 1/2 tablespoons fish sauce
1 tablespoon fresh lime juice
2 tablespoons canola or other neutral oil
2/3 cup Ginger-Lime Dipping Sauce (page 309)

Steps:

  • Pat the tuna steaks dry with paper towels. To make the marinade, in a bowl large enough to accommodate the tuna steaks, whisk together the sugar, fish sauce, lime juice, and oil. Add the steaks and turn them to coat well. There's no need to let the steaks marinate.
  • Heat a 12-inch nonstick skillet over medium-high heat until hot. To test if it is ready, flick a drop of water into it. It should immediately dance and then evaporate. Add the tuna steaks and let them cook, undisturbed, for 2 minutes. The tuna should brown nicely on the underside, perhaps even with some dark caramelized spots. Using tongs, carefully turn the steaks over. Without disturbing them, let them cook for about another 1 1/2 minutes for rare or 3 minutes for medium-rare.
  • To check for doneness, nick the steaks with the tip of a paring knife. A rare steak should be opaque at the edges and translucent red and cool in the middle. A medium-rare steak should be opaque at the edges and reddish pink in the middle. For a medium steak, cook for medium-rare but let the steak rest for 5 minutes under a foil tent before cutting. The steak will continue to cook as it rests.
  • Transfer the steaks to a cutting board. Cut each steak into 1/4-inch-thick slices. Arrange the slices on a platter and serve immediately with the dipping sauce.
