I know, I know....not another meatloaf recipe. I thought the same thing until I made this one. OMG, it was so delicious and well worth the extra work. This raises meatloaf to a whole new level. Serve with roasted garlic mashed potatoes. Mmmmmm. Comfort food at its finest!

3/4 cup onion, minced
3/4 cup scallion, minced
1/2 cup celery, minced
1/2 cup carrot, minced
1/4 cup green bell pepper, minced
1/4 cup red bell pepper, minced
2 teaspoons minced garlic
3 tablespoons unsalted butter
1 teaspoon salt
1/4 teaspoon cayenne pepper
1/2 teaspoon white pepper
1/2 teaspoon ground cumin
1/2 teaspoon nutmeg
1/2 cup half-and-half
1/2 cup ketchup
3 eggs, beaten
3/4 cup dry breadcrumbs
1 3/4 lbs lean ground beef
3/4 lb sweet Italian sausage, casings removed

Steps:

  • In a large frying pan, saute all the vegetables in butter until soft and dry.
  • Put mixture in a large mixing bowl. Add all the dry ingredients, half and half, ketchup, eggs and breadcrumbs.
  • Mix in beef and sausage, mixing well.
  • With wet hands form into a long narrow loaf. Place in 9x13 inch baking dish.
  • Bake at 350 degrees for 1 hour or until no longer pink.

2 cups corn flakes
1 1/2 lbs ground beef
1/2 lb ground pork
1/4 cup ketchup

Steps:

  • Mix; egg, milk worcestershire sauce, salt, pepper & celery seed together, add corn flakes, mix well.
  • Add ground beef and pork, mix well.
  • Pack mixture into a 9x5x3 loaf pan, cover with ketchup and bake at 350 for 1 hours.

2 tablespoons corn oil
2 cups onions (finely chopped)
1 tablespoon garlic (finely chopped or crushed fresh)
1/2 green pepper (chopped into 1/4-inch pieces)
7 slices bread
1 1/2 lbs ground beef
1/2 lb pork (ground)
1/2 lb veal (chopped)
2 eggs (beaten)
1/3 cup parsley (fresh, chopped fine)
1/2 teaspoon rosemary (fresh or dried crushed)
1/2 teaspoon thyme (fresh or dried)
1 tablespoon ketchup
1 1/2 teaspoons salt
1/8 teaspoon pepper (fresh ground black)

Steps:

  • Preheat oven to 350 degrees. Heat corn oil in a large skillet, and saute onions until light golden brown. Add garlic at the last minute, and brown quickly. Remove to a bowl with a slotted spoon, and saute green peppers in remaining oil. Add to bowl, and refrigerate.
  • Cut crusts off bread, cube and soften with water in a strainer. Squeeze out excess liquid.
  • In a large bowl, thoroughly blend meats and bread, working them together with your hands lightly. Add onion-garlic- green pepper mixture and all the other ingredients, Blend thoroughly.
  • Place mixture in a loaf pan and score a crisscross design along the top with a knife. Bake 50 minutes, pour off accumulated fat, add your favorite tomato sauce, and continue baking for 20 minutes more.

This is my grandma's meat loaf recipe that she has been making for years! It doesn't taste like the regular bland meatloaf. It is very affordable to make and this one has a bit of a sweet taste thanks to the sauce you put on top! It is very simple and it is made with things that people typically always have in their pantry/ fridge. I hope you all enjoy it as much as I do, leave feedback and let me know! Tip: I always make more of the sauce because its so yummy! SERVE WITH: Mashed potatoes, green beans, and a pie.

1 1/2 lbs ground beef
2 eggs
3/4 cup whole milk
1/2 cup crushed cracker (Club or Saltine)
1/4 cup yellow onion (finely chopped)
2 tablespoons fresh parsley or 2 teaspoons dried parsley
1 teaspoon salt (optional)
1/2 teaspoon ground sage
1/4 cup ketchup
2 tablespoons brown sugar
1 teaspoon dry mustard

Steps:

  • Mix meat, crackers, milk, eggs, onion, parsley, sage, and salt in a large bowl with HANDS.
  • Put the mixture in an ungreased 8x10 loaf pan and shape it so that there is a small amount of space between the meatloaf and the pan on all sides.
  • Bake at 375 degrees for 75 minutes or until cooked( usually just takes 75 minutes.) Check on it every now and then though.
  • Take meatloaf out and spoon the fat off the top.
  • Mix the ketchup, dry mustard, brown sugar in a small bowl and then put it on top of the meatloaf and stick it back in the oven at 375 degrees for 5 more minutes.

2 tablespoons brown sugar
1/4 teaspoon Worcestershire sauce

Steps:

  • Preheat oven to 350°. In a large bowl, beat egg. Add the milk, cracker crumbs, onion, salt, sage and pepper. Crumble beef over mixture and mix well. 2 large eggs, lightly beaten
1 cup pizza sauce, divided
1 cup seasoned bread crumbs
1 medium onion, chopped
1 medium green pepper, chopped
1 teaspoon dried oregano
1 garlic clove, minced
1/2 teaspoon salt
1/4 teaspoon pepper
2 pounds lean ground beef (90% lean)
1 pound bulk Italian sausage
1/2 pound sliced deli ham
2 cups shredded part-skim mozzarella cheese, divided
1 jar (6 ounces) sliced mushrooms, drained

Steps:

  • Preheat oven to 375°. In a large bowl, combine the eggs, 3/4 cup pizza sauce, bread crumbs, onion, green pepper, oregano, garlic, salt and pepper. Crumble beef and sausage over mixture and mix well., On a piece of parchment, pat beef mixture into a 12x10-in. rectangle. Layer the ham, 1-1/2 cups cheese and mushrooms over beef mixture to within 1 in. of edges. Roll up jelly-roll style, starting with a short side and peeling parchment away as you roll. Seal seam and ends. Place seam side down in a greased 13x9-in. baking dish; brush with remaining pizza sauce., Bake, uncovered, 1 hour. Sprinkle with remaining cheese. Bake until no pink remains and a thermometer reads 160°, 15-20 minutes longer. Using 2 large spatulas, carefully transfer meat loaf to a serving platter. Freeze option: Securely wrap and freeze cooled baked meat loaf in foil. To use, partially thaw in refrigerator overnight. Unwrap meat loaf; reheat on a greased shallow baking pan in a preheated 350° oven until heated through and a thermometer inserted in center reads 165°.

1 small head green cabbage (about the same as one bag shredded)
2 medium carrots peeled
1 small green bell pepper
3/4 cup white vinegar
2 Tbsp olive oil
1/2 cup white sugar
1 Tbsp salt
1/2 tsp freshly ground pepper

Steps:

  • Shred cabbage and carrot and cut the pepper into thin slices Whisk together dressing ingredients and toss well. Refrigerate. This salad needs about eight hours in the fridge and should remain crisp and fresh tasting for up to two weeks. Great for the summer. Don't freeze.

2 tablespoons brown sugar
1 teaspoon ground mustard
1/2 teaspoon Worcestershire sauce

Steps:

  • Cut two 25x3-in. strips of heavy-duty foil; crisscross so they resemble an X. Place strips on bottom and up sides of a 5-qt. slow cooker. Coat strips with cooking spray., Combine the first 6 ingredients. Crumble beef over mixture and mix lightly but thoroughly. Shape into a round loaf; place in center of strips in slow cooker. Cook, covered, on low 5-6 hours or until a thermometer reads at least 160°. , In a small bowl, whisk ketchup, brown sugar, mustard and Worcestershire sauce. Spoon over meat loaf. Cook until heated through, about 15 minutes longer. Using foil strips as handles, remove meat loaf to a platter. Let stand 10-15 minutes before slicing.

Though the above is the official Second Avenue Deli version, some people prefer to use only chicken livers. They make a lighter, creamier chopped liver. This recipe has been adapted from "The Second Avenue Deli Cookbook" by Sharon Lebewohl and Rena Bulkin. © 1999. Reprinted by permission.

1 1/2 pounds beef or veal liver
1 pound chicken liver
4 tablespoons corn oil
3 tablespoons schmaltz
4 cups coarsely chopped onions
4 hard-boiled eggs, peeled
2 teaspoons coarse salt
1/4 teaspoon freshly ground pepper

Steps:

  • Heat broiler. Rinse livers thoroughly, and cut away membranes and extra fat. Cut beef liver into 1-inch pieces; chicken livers can remain whole. Place livers in a large baking pan, and drizzle with 2 tablespoons oil. Broil 8 to 10 minutes (keep an eye on it to make sure it doesn't burn). Turn, and broil until fully cooked and lightly browned on both sides, about 5 minutes more. Transfer to shallow bowl. Cover with plastic wrap, and chill in refrigerator, about 30 minutes.
  • In a large skillet, heat 2 tablespoons oil and 2 tablespoons schmaltz, over medium heat. Add onions, and cook, stirring occasionally, until deep-golden brown, 20 to 30 minutes. Transfer to a shallow bowl. Cover with plastic wrap, and chill in refrigerator, about 30 minutes.
  • In a food processor, combine half the liver, half the onions, 2 hard-boiled eggs, 1 1/2 teaspoons schmaltz, 1 teaspoon salt, and 1/8 teaspoon pepper. Process until smooth. Repeat. Chill before serving.

1/4 cup mayonnaise
2 tablespoons prepared horseradish, drained
1 tablespoon Dijon mustard
1 loaf unsliced round bread
2 tablespoons butter or 2 tablespoons margarine, softened
1/3 lb thinly sliced deli ham
1/3 lb sliced monterey jack cheese or 1/3 lb muenster cheese
1/3 lb thinly sliced deli turkey
1/3 lb thinly sliced cheddar cheese or 1/3 lb colby cheese
1/3 lb thinly sliced deli roast beef
1 medium tomatoes, sliced
1 large dill pickle, sliced lengthwise
1 small red onion, thinly sliced
lettuce leaf

Steps:

  • Cut bread in half; carefully hollow out bottom and top of loaf, leaving 3/4" shell (discard removed bread or save for another use).
  • In a small bowl, combine the mayo, horseradish, and mustard.
  • Spread butter on cut sides of bread.
  • In the shell layer ham, 1/3 of the mayo mixture, Monterey Jack cheese, turkey, 1/3 mayo mixture, cheddar cheese, roast beef, remaining mayo mixture, tomato, pickle, onion and lettuce. Replace top.
  • Wrap tightly in plastic wrap; cover and refrigerate for at least 1 hour.
