SESAME SEARED TUNA
Easy, great tasting tuna coated with sesame seeds, and quickly seared. This tuna is served rare, so be sure to use a good quality fresh tuna.

- In a small bowl, stir together the soy sauce, mirin, honey and sesame oil. Divide into two equal parts. Stir the rice vinegar into one part and set aside as a dipping sauce.
- Spread the sesame seeds out on a plate. Coat the tuna steaks with the remaining soy sauce mixture, then press into the sesame seeds to coat.
- Heat olive oil in a cast iron skillet over high heat until very hot. Place steaks in the pan, and sear for about 30 seconds on each side. Serve with the dipping sauce and wasabi paste.

SESAME-CRUSTED AHI WITH PONZU VINAIGRETTE

Steps:
- Combine the sesame seeds in a shallow bowl. Lightly rub the tuna in the olive oil, then sprinkle liberally with salt and pepper. Press the tuna into the sesame seeds, applying firm pressure so the seeds stick. Cover completely and chill in the refrigerator, uncovered, for 5 minutes, to allow the seeds to stick.
- For the vinaigrette: In a medium bowl, whisk together the grated ginger, ponzu, soy, vinegar, sesame oil and Fresno. Pour into a serving bowl and set aside.
- In a large nonstick pan, heat 1/2 inch canola oil to 320 degrees F.
- Add the shallots to the oil in small batches and fry until golden brown, about 2 minutes. Remove to a paper towel-lined plate and drain. Season with salt.
- Add 1/4 cup olive oil to another large, nonstick pan and turn the heat on high until hot. Add the sesame-crusted tuna and sear all over for 30 seconds on each side. Remove from the pan and slice 1/2-inch thick.
- Shingle the tuna on a platter, then sprinkle over the fried shallots and sliced scallions. Serve with the vinaigrette alongside.
SEARED SESAME TUNA WITH WASABI PONZU SAUCE
Steps:
- Rinse tuna with cold water; pat dry with paper towels. Set aside. In a small bowl, mix together ponzu sauce and wasabi until wasabi is incorporated and there are no lumps; set aside. Spread sesame seeds on a plate or pie pan. Press both sides of the tuna steaks into sesame seeds to coat. In a large skillet, heat canola oil over medium-high heat. Add the tuna to hot oil; cook for 3 to 5 minutes per side, depending on desired doneness of tuna. (Be careful not to overcook the tuna as it will dry out quickly). Serve wasabi mixture with fish.
SEARED TUNA WITH WASABI-BUTTER SAUCE
I've had the seared tuna in nice restaurants, but this is better than all of them. One tablespoon of wasabi sounds like a lot of heat, but somehow this cooking method mellows it to almost nothing, just leaves the flavor. Really really great.

- Combine the white wine vinegar, white wine and shallots in a small saucepan over medium heat. Simmer until the liquid is reduced to about 2 tablespoons. Strain out shallot and discard, return liquid to the pan.
- Stir the wasabi and soy sauce into the reduction in the pan. Over low heat, gradually whisk in butter one cube at a time allowing the mixture to emulsify. Be careful not to let the mixture boil. When all of the butter has been incorporated, stir in cilantro, and remove from heat. Pour into a small bowl, and set aside.
- Heat a large skillet over medium-high heat. Brush tuna steaks with olive oil, and season with salt and pepper. Place in the hot skillet, and sear for 3 to 5 minutes on each side. Be careful not to overcook, this fish should be served still a little pink in the center. Serve with sauce.

- Slice tuna into 1" pieces and place in a large ziploc bag. In a small bowl mix together: 2 Tbsp soy sauce, honey, 1 Tbsp sesame oil, and mirin. Add mixture to tuna and marinate for 30 minutes.
- Make wasabi sauce: mix wasabi powder with 2 Tbsp water in a tiny bowl. Add a little soy sauce (think Sushi!), and use it as a dipping sauce for the fish.
- Fill a shallow dish with 1/2 cup sesame seeds and keep the rest handy to replenish the dish as needed.
- Remove fish from Ziploc, shake off excess liquid and dip each side of each piece of fish into the sesame seeds. Don't swirl the piece of fish around in the seeds or the seeds will get wet and not stick to the fish. Set sesame seeded fish on a plate.
